MIXED FRUIT IN LIGHT HONEY SYRUP



Mixed Fruit in Light Honey Syrup image

Mildly flavored fruits combine well with honey for a luscious winter treat.

Provided by Renee Pottle

Time 40m

Yield 6 pints

Number Of Ingredients 3

12 cups mixed fruit (I used peaches, pears, and green grapes)
1½ cups honey
6 cups water

Steps:

  • Peel peaches and pears and cut into large pieces.
  • Soak in a lemon juice/water combination if desired to reduce color change (optional).
  • In a large pot, combine honey and water. Bring to a boil, stirring until well combined.
  • Reduce heat to a simmer.
  • Drain fruit and add to syrup mixture. Continue simmering until fruit is heated through.
  • Spoon fruit into clean pint jars.
  • Fill each jar with the hot syrup leaving ½ inch head space.
  • Remove the bubbles (I use the handle of a rubber spatula, but there is an actual tool for this process. Just don't use anything metal).
  • Wipe the tops of the jars with a damp paper towel, and cover with two-piece caps. Process in a water bath for 20 minutes.
  • Makes 6 pints with some syrup left over (use it for another batch or to make sorbet or to sweeten iced tea).

This is a great syrup for pouring over gingerbread, but it is wonderful on almost anything. For best flavor, poke holes in the cake with a fork before pouring syrup.

1 ½ cups honey
½ cup water
¼ cup fresh lemon juice
½ teaspoon grated lemon zest

Steps:

  • In a small saucepan, combine the honey, water, lemon juice and lemon zest. Cook over medium heat stirring occasionally until boiling. Continue to boil until the mixture is reduced by a fourth. Pour warm syrup over cake and allow to sit for a few minutes before serving.

1 3-pound cantaloupe, halved, seeded
1 12-ounce basket strawberries, hulled, halved
4 kiwis, peeled, cut into 1/2-inch pieces
1 1/2 cups seedless grapes

Steps:

  • Whisk lime juice, honey and mint in large bowl to blend. Using melon baller, scoop out cantaloupe. Add all fruit to syrup in bowl; toss to combine. Let stand 15 minutes to allow flavors to blend. (Can be made 3 hours ahead. Cover and chill.) Spoon fruit into goblets.
