CRISPY FRIED FISH
Bring back the Friday night fish fry tradition with this updated recipe. Using Progresso panko crispy bread crumbs help the crust stay extra-crisp, while the fish remains moist.

- In shallow dish, mix flour and seasoned salt. In medium bowl, beat eggs and beer with whisk. Place bread crumbs in large resealable food-storage plastic bag.
- In electric skillet or deep fryer, heat about 2 inches oil to 350°F. Coat both sides of fish fillets with flour mixture, then dip in beer mixture, letting excess drip back into bowl. Place 1 or 2 pieces of fish at a time in plastic bag with bread crumbs; seal bag and shake to coat completely.
- Fry fish in batches in hot oil about 4 minutes, turning once, until golden brown. Drain on paper towels. Serve hot.

RITZ FITZ (OVEN-FRIED FISH FILLETS)
Steps:
- Preheat oven to 350 degrees F.
- Melt the butter in a 9 by 13-inch pan in the oven. While it melts, combine everything else except the fish in a pie pan. Dip the fish around in the melted butter, dip each piece in the crumb mixture, and return it to the baking pan. Bake the fillets for 20 to 25 minutes, or until the fish flakes with a fork. Serve with lemon wedges, and good luck to you.
MOCK GEFILTE FISH
Both my father and my aunt served this during those months, when fresh carp is not available. There are many versions of " Gefilte Fish", "Fish Balls", "Falsher Fish" or what my dad called "Polish Carp". Theirs was sweeter than most others I sampled, but it must closely resemble the taste they remembered from their home in Sosnowitz, Poland. Unfortunately I could not ask them for their recipe, so I adapted the one I found in Harriet Roth's "Deliciously Healthy Jewish Cooking".

Steps:
- Bring water and stock ingredients to a boil and simmer for half an hour.
- Meanwhile, grate onion and carrots, and mix with the chicken, eggs, and reserved stock. Add the matzo meal or bread crumbs and season with salt, pepper, and sugar. Form into medium-sized balls.
- Bring stock to a boil, reduce heat to a simmer and add meat balls and parsley. Cover partially. Simmer for 2 hours.
- Place meat balls in a casserole dish. Reduce the stock to about half, strain, and pour over the meat balls. Top with cooked carrot slices.
- Cool thoroughly in the refrigerator.
- Serve with horseradish sauce.

- Place eggs and cracker crumbs in separate shallow bowls. Dip fillets into eggs, then coat with crumbs. Let stand for 5 minutes. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry fillets, a few at a time, for 2 minutes on each side or until fish is golden brown and flakes easily with a fork. Drain on paper towels. , In a small bowl, combine the tartar sauce ingredients. Serve with fish.

MOCK FRIED FISH

Steps:
- Boil or steam the potatoes until they are tender, then put them to one side.
- Preheat the oven to 425°F
- Fry the onions in a little of the oil until they have turned a dark, golden brown colour.
- Top and tail the eggplant, slice it in half lengthwise, sprinkle the flesh with oil and place them on a greased baking sheet, flesh sides down. Prick the skin in a few places with a fork.
- Bake the eggplant until the skin starts to shrivel and the flesh is soft (about 20-30 minutes). Scoop out the flesh when it has cooked. Turn the oven down to 350°F
- Mash the potatoes, add the cooked onion, the eggplant flesh, garlic, parsley, season to taste with sea salt, freshly ground black pepper and paprika, then mix in sufficient matzo meal to make a firm [but not hard] consistency.
- Wet your hands and shape tablespoonfuls of the mixture into patties. Put the patties on oiled baking sheets and sprinkle each one with a little oil. Bake them in the oven for 30 minutes until they are golden brown.
- Serve them hot or cold with salads and horseradish.
