NO FRY FRIED ICE CREAM
Enjoy my Mexican Fried Ice Cream recipe featuring all of the flavor and none of the mess!

Steps:
- Line a small tray with parchment paper.
- Pre-scoop and form ice cream into approx 2 1/2″ balls
- Place in the freezer to firm up while making the corn flake mixture.
- Pulse corn flakes in food processor to crush into fine crumbs.
- Melt butter in a medium skillet over medium heat, then stir in crushed corn flakes and cinnamon and cook stirring constantly for 5 minutes or until golden brown.
- Remove from heat and stir in the sugar.
- Transfer the corn flake crumbs into a shallow dish and allow to cool.
- Once cooled place ice cream ball into mixture and roll to evenly coat.
- Press corn flake mixture around outer surface if a thicker coating is desired.
- Garnish with chocolate sauce, whipped cream and cherries.

- Remove cover from yogurt; stir well with spoon. Recover, and place in freezer, stirring every 15 minutes until consistency of soft serve, 30 to 45 minutes. Meanwhile, reserve 1/4 cup cereal; set aside. Coarsely crush remaining cereal; place in small bowl.
- Stir reserved 1/4 cup cereal into frozen yogurt, forming a ball. With spoon, remove yogurt ball, and place in bowl with coarsely crushed cereal. Roll ball around in crumbs, or spoon crumbs over ball until completely covered with crumbs.
- Place on serving plate. Drizzle with caramel topping. Serve immediately.

Steps:
- Using a medium-sized scoop, form ice cream into balls. Place on Gefen Easy Baking Parchment-lined baking sheet and place in freezer. Allow to freeze for at least an hour, and up to a day in advance.
- Meanwhile, prepare crumbs: Place cornflakes and Rice Krispies in the food processor with the knife attachment and pulse to form fine crumbs, leaving a few small pieces.
- Heat coconut oil in a large frying pan. Stir in crushed cereal. Add pecans, cinnamon, and nutmeg, if using. Heat together for 5 minutes over low heat, stirring frequently, until golden brown. Remove from heat.
- Add sugar and mix together well. Pour out onto a sheet of parchment paper to cool.
- Once the crumbs are cooled, roll the ice cream balls evenly in the crumb mixture to coat, pressing the crumbs gently to get them to stick. Roll just a few at a time, returning the rest to the freezer to prevent them from melting.
- Return coated balls to the freezer until serving. Garnish with chocolate or caramel syrup and whipped cream, or honey and candied pecans.
FRIED ICE CREAM

Steps:
- Scoop ice cream into 8 - 1/2 cup sized balls. Place on baking sheet and freeze until firm, about 1 hour.
- In a shallow dish, combine cornflakes and cinnamon. In another dish, beat egg whites until foamy. Roll ice cream balls in egg whites, then in cornflakes, covering ice cream completely. Repeat if necessary. Freeze again until firm, 3 hours.
- In deep fryer or large, heavy saucepan, heat oil to 375 degrees F (190 degrees C).
- Using a basket or slotted spoon, fry ice cream balls 1 or 2 at a time, for 10 to 15 seconds, until golden. Drain quickly on paper towels and serve immediately.

THE ORIGINAL CHI-CHI'S MEXICAN FRIED ICE CREAM
This is the original Chi-Chi's Mexican Fried Ice Cream. You can serve this on the fried flour tortilla sprinkled with a cinnamon sugar mix as it was done in the later years or in a sherbet glass as it was in the early 80's. At one point we even offered these in chocolate and strawberry as well. Prep time is for the ice cream ball to harden.

Steps:
- Form 4 oz. of French vanilla into a ball.
- Roll the ball of ice cream in the cinnamon sugar mixture until completely coated.
- Roll in corn flake crumbs till coated.
- Place in the freezer to harden.
- Place the hardened ice cream ball in a fry basket and deep fry for 2 seconds at 350 degrees fahrenheit.
- FOR THE SHERBET GLASS(the early years):.
- Put a dollop of whip cream in the bottom of the glass.
- Place the fried ice cream ball on top of the dollop.
- Drizzle a small amount of honey over the top of the ice cream ball.
- Place 8 whip cream rosettes around the ice cream ball and one on top.
- Top with a maraschino cherry.
- Enjoy!
- FOR THE TORTILLA (the later years):.
- Deep fry a tortilla flat until crispy.
- Sprinkle with the remaining cinnamon sugar mixture.
- Follow the instructions for the sherbet glass.
- Enjoy!

- Preheat oven to 350°. Using a 1/2-cup ice cream scoop, place 8 scoops of ice cream on a baking sheet. Freeze until firm, about 1 hour. Meanwhile, combine brown sugar, butter and cinnamon. - Scoop 6 (1/2-cup) balls of ice cream onto cookie sheet. Freeze 15 minutes.

DEEP-FRIED ICE CREAM RECIPE BY TASTY

- Line a baking sheet with wax paper.
- Use a 1-tablespoon scoop to portion 12 ice cream balls onto the prepared baking sheet. Freeze for at least 4 hours, or overnight.
- Cut the biscuits in half, then roll out each half on a lightly floured surface into a thin round.
- Working quickly, add a frozen ice cream ball to the center of each dough round. Wrap the dough around the ice cream to seal tightly. Set on the baking sheet. Repeat with the remaining dough and ice cream.
- Freeze the biscuit balls for 1-2 hours, until firm.
- Heat the canola oil in a large pot over medium-high heat until it reaches 325°F (160°C).
- Working 4 at a time, add the biscuit balls to the hot oil and cook until golden brown and crunchy, 2-3 minutes. Transfer to a paper towel-lined baking sheet to drain.
- Transfer the fried balls to the freezer for another hour, until firm.
- To serve, arrange the fried ice cream balls on a plate and top with chocolate syrup, whipped cream, and sprinkles.

NOT FRIED, FRIED ICE CREAM
Can't remember where I found this recipe, but it's great for Mexican night, or Cinco De Mayo!! (New Note: If you use the new Special K cereal with cinnamon and pecans, this is REAL delicious! Add the sugar and not as much cinnamon, no butter, and you don't have to bake it! Very crunchy and SO DELICIOUS!!! I used about 1 1/4 C Special K.)

- Make 8 vanilla ice cream balls and freeze on wax-lined cookie sheet for about an hour.
- Mix remaining ingredients and spread on a cookie sheet to bake at 350°F until crisp and golden.
