Make the most of summer's best with this Mojito Watermelon Salad! This sweet watermelon salad with the right amount of mint and lime is a refreshing and easy summer side dish.

Ingredients

1 medium seedless watermelon - about 8 cups chopped watermelon
2 tablespoons honey or sugar
1/4 cup fresh lime juice
zest from 1 lime
1/3 cup mint leaves plus extra for garnish

Steps:

Cut your watermelon into bite-sized cubes. If using part of the rind as a bowl, be careful when scooping the flesh from the bowl side.
Cut the 1/3 cup of fresh mint leaves into small strips. Set aside.
In a small bowl, whisk together the sweetener, lime juice, and lime zest.
Pour the dressing over your watermelon. Add the mint leaves. Stir.
Enjoy!

Ingredients

1 cup cubed seeded watermelon
1 cup seedless grapes
1 cup cubed cantaloupe
1 cup hulled and quartered strawberries
1 cup peeled and quartered kiwi
1 cup fresh blueberries
3 sprigs fresh mint
2 teaspoons white sugar
3 tablespoons fresh lime juice

Steps:

Mix the watermelon, grapes, cantaloupe, strawberries, and kiwi in a bowl with a tight-fitting lid; top with the blueberries.
Stir the mint, sugar, and lime juice together in a bowl, crushing the mint with the back of a spoon while mixing to extract flavors; pour over the fruit mixture. Seal the bowl with lid and refrigerate at least 1 hour.
Just before serving, gently flip the sealed bowl several times to coat the fruit with the dressing.
