MOM'S APPLE CRISP
Mom found this recipe in a bridal book years ago, and it soon became a family favorite. With tender juicy apples and a hint of cinnamon, it is yummy served plain or with a dollop of whipped cream or ice cream.

Steps:
- In a large bowl, combine the apples, 1/4 cup sugar and 1 teaspoon cinnamon. Transfer to a greased 8-in. square baking dish. , In a small bowl, combine the flour, baking powder, salt and remaining sugar; cut in butter until crumbly. Sprinkle over apples, pressing down to smooth top. , Slowly pour water over the top; sprinkle with remaining cinnamon. Bake, uncovered, at 400° for 40-45 minutes or until apples are tender. Serve warm.

I adapted this from a 50-year-old peach crisp recipe. Although it works well with peaches, it works even better with fresh, crisp cooking apples.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease an 8-inch square baking dish.
- Arrange apple slices evenly in prepared baking dish. Sift flour, sugar, cinnamon, and salt in a bowl. Cut in butter using a pastry blender or 2 knives until mixture resembles coarse cornmeal; sprinkle over apples.
- Bake in preheated oven until topping is golden, 40 to 45 minutes. Cool slightly before serving.

My favorite dessert that my mom makes. I always double the topping because that is my favorite part.

- Toss first five ingredients together and put in lightly greased 9x13 pan.
- Cut together the rest of the ingredients and crumble on top of apple mixture to cover it all.
- In a 1 cup measurer put 1 Tbsp lemon juice, a 1 tsp vanilla extract and fill the rest of the way full with apple juice or water.
- Sprinkle over the top of crisp.
- Bake until top is a golden brown.
- About 45 minutes at 350 degrees.
- Serve warm with whipped topping or ice cream.

To make the topping, combine the 1/2 cup flour, the oats, brown sugar, ginger, cinnamon, and salt in a medium bowl. With a pastry blender or 2 knives used scissor-fashion, cut in the butter until the mixture resembles coarse crumbs. Add the water and firmly press mixture to form clumps. To make the filling, mix the granulated sugar, the 2 tablespoons flour, the nutmeg, and cloves in a large bowl. Add the apples and vanilla; mix well. Transfer to the baking dish. Sprinkle the topping over the filling. Bake until the filling is bubbling and the topping is golden, 55 - 60 minutes. Serve warm or at room temperature.
