- In a large bowl, dissolve yeast in warm water. Add the sugar, salt and 3 cups flour. Beat on medium speed for 3 minutes. Stir in remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a floured surface; divide in half. Shape each portion into a loaf. Place each loaf seam side down on a greased baking sheet. Cover and let rise until doubled, about 30 minutes. , Meanwhile, preheat oven to 400°. With a sharp knife, make 4 shallow slashes across top of each loaf. Bake 20-25 minutes or until golden brown. Remove from pans to wire racks to cool.

- Preheat oven to 375°. In a saucepan, bring the potatoes, carrot, celery and water to a boil. Reduce heat; cover and cook until tender, about 15 minutes. Drain. , In a large skillet, saute ham, green pepper and onion in 3 tablespoons butter until tender. Add the potato mixture. Transfer to a greased 1-1/2-qt. baking dish. , In a large saucepan, melt the remaining butter; stir in flour until smooth. Gradually whisk in the milk, salt and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add cheese and stir until melted. , Pour over ham mixture. Sprinkle with bread crumbs. - Soften yeast in warm water; let stand 10 minutes.
- Mix cottage cheese, sugar, butter, 1 teaspoon salt, and baking soda together in a large mixing bowl. Add dill seed, dried onion, egg, and yeast mixture. Mix well. Gradually add flour, about 1/4 cup at a time, stirring well after each addition. If dough seems too sticky, add another tablespoon or 2 of flour.
- Cover bowl with a clean cotton kitchen towel and place in a warm place until double in size, about 1 hour.
- Preheat oven to 350 degrees F (175 degrees C). Generously butter a 1 1/2- to 2-quart baking dish.
- Gently stir dough to release bubbles. Transfer to prepared baking dish. Bake in preheated oven until golden brown, about 35 minutes. Remove from oven; brush top with butter and sprinkle on a pinch of salt. Let bread cool 5 minutes before transferring from the baking dish to a cooling rack.

An easy, no knead recipe. Been with me for years but I can't tell you where it came from. Preparation time includes time for the bread to rise twice.

- Dissolve yeast in warm water in large mixing bowl.
- Add milk, butter, eggs, salt and 1 cup flour.
- Beat on low 30 seconds then on medium 2 minutes.
- Scrape batter from sides of bowl.
- Stir in remaining flour until smooth.
- Cover; let rise in warm place until double (30 minutes). Stir down by beating about 25 strokes.
- Spread evenly in greased 2-quart casserole.
- Cover; let rise until double, about 40 minutes.
- Heat oven to 375 degrees.
- Place loaf on low rack so that top of casserole is in center of oven.
- Bake until loaf is brown and sounds hallow when tapped, 40-45 minutes.
- Immediately remove from casserole.
- Brush top with margarine.
- Cool on wire rack.
MOM'S CASSEROLE BREAD
A yeasty, single rise, white bread baked in a casserole bowl. This was my mother's go-to recipe to accompany a hearty soup, stew, or chili. Good for a pot-luck dinner. I've been known to pair it with a strong cheese and nice wine.. for a romantic picnic.

- Using a large bowl, dissolve yeast in warm water.
- Stir in sugar, salt, softened butter or margarine, and 3 cups of the flour. Blend until smooth.
- Using a wooden spoon, beat in remaining cup of flour.
- Cover bowl with wax paper, or plastic wrap. loosely. Not tight. Let bowl sit in warm, dry place , out of a draft, to rise for about 45 minutes. It will more than double in bulk.
- Again using a wooden spoon, beat down the mixture for about a half minute. Place in a greased glass or ceramic bowl for baking.
- Bake at 375°F for 50 - 55 minutes.
- Remove from oven and cool on rack for a few minutes. Pop out of bowl, and let cool a bit more. Serve warm in wedges with butter. or your favorite soup, stew, or chili. Or maybe with a hunk of great cheese and a bottle of wine!

MOM'S THANKSGIVING BREAD PUDDING
This is my mother's bread pudding recipe. Every year, I make it about 10 times between Thanksgiving and Christmas-everybody loves it! It is delicious warm, but also quite good cold with milk poured over it.

- Preheat the oven to 350 degrees F (175 degrees C). Butter a 2-quart casserole or baking dish.
- Spread bread slices with butter, then use a sharp knife to cut each slice into 4 squares.
- Arrange 1/2 of the bread squares in the bottom of the prepared casserole. Sprinkle with raisins and 1/2 of the cinnamon. Cover with remaining bread and cinnamon.
- Heat milk in a medium saucepan over medium heat just until a film forms over the top, 3 to 4 minutes. Remove from the heat and add sugar; stir until dissolved.
- Pour some of the hot milk into the beaten eggs, whisking quickly to avoid scrambling the eggs. Pour the mixture back into the saucepan and whisk until smooth and thoroughly combined. Stir in vanilla and pour mixture over the bread.
- Set the casserole in a pan and fill with 1 inch hot water. Bake in the preheated oven until a knife inserted in the center comes out clean, 40 to 50 minutes. Serve warm.

- In a large bowl combine fluors, oats, sugar, orange peel, baking powder and baking soda until well blended.
- Add milk and egg white.
- Stir just until ingredients are moistened.
- Stir in sunflower nuts.
- Sprinkle a non-stick sprayed 1 1/2 quart casserole lightly with wheat germ.
- Pour batter into casserole.
- Bake at 350 degrees for 50 to 60 minutes.
- If necessary, cover loaf with foil during the last 15 minutes of baking to prevent over-browning.
- Cool in casserole for 15 minutes; turn out on wire rack.
- Brush top of loaf with honey and sprinkle with additional sunflower nuts if desired.

MOM'S SPELT BREAD
My mother's wheat allergy means that in our house everything was baked with spelt. This is the bread recipe I grew up on, and I've never seen a spelt bread to equal it. This bread is delicious warm but will slice much more neatly when cooled fully.

- Mix both 3 1/2 cups whole grain spelt flour, 3 cups white spelt flour, water, oil, sugar, yeas, and salt together in a bowl with a spoon until mostly combined. Switch to kneading by hand, adding more white spelt flour if necessary, but not too much. Keep kneading until dough is the texture of your earlobe.
- Place dough on a parchment paper-lined baking sheet in the shape of a loaf and allow to rise until doubled in size, about 1 hour.
- Preheat the oven to 375 degrees F (185 degrees C).
- Bake in the preheated oven until top is a deep golden brown and the bread sounds hollow when tapped, about 20 minutes.

- Break up sausage into bite-size pieces & cook in pan.
- While sausage is cooking, mix eggs & milk in bowl.

- Top off with soup.
