CRANBERRY WALNUT BREAD
A moist and chewy bread with the great taste of cranberries and walnuts. Watch the consistency; I usually need to add more flour so that it doesn't 'climb the walls'. Enjoy!

Steps:
- Place all of the ingredients (except the cranberries and the walnuts) in the pan of the bread machine in the order recommended by the manufacturer. Select Light Crust and Sweet Cycle and press Start.
- If your machine has a Fruit setting, add the cranberries and walnuts at the signal, or around 5 minutes before the kneading cycle has finished.

CRANBERRY-NUT BREAD
This recipe delivers a Christmas classic from a recipe my Mom would make every year. The bread freezes well.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Sift flour, white sugar, brown sugar, baking powder, baking soda, and salt together in a large mixing bowl. Mash butter into the flour mixture with a pastry cutter until the mixture resembles coarse cornmeal.
- Stir orange juice, egg, vanilla extract, and orange zest together in a small bowl; add to flour mixture and stir just until the dry ingredients are moistened and batter-like. Fold cranberries and walnuts through the batter; spoon into the prepared loaf pan, spreading so the corners and sides are slightly higher than the center.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

MOM'S CRANBERRY WALNUT BREAD
This is great served with breakfast or brunch or just as a hearty snack. I like to serve with softened cream cheese as a spread. Prep time does not include overnight soaking for cranberries.

Steps:
- Mix cranberries and 1 cup sugar and let stand overnight.
- Mix together flour, 1 cup sugar, baking powder, baking soda and salt. Sift together.
- In a bowl, mix together eggs, orange juice, hot water, melted butter, orange rind and chopped walnuts. Add to dry ingredients.
- Stir in cranberries and pour mixture into two greased and floured bread pans.
- Bake for 1 hours at 325 degrees.
MOM'S CRANBERRY BREAD
I always double the recipe to use the whole bag of cranberries. This is so moist and good. I think I may need to make some!

- In a large mixing bowl, mix together flour, yeast, salt, cranberries, and walnuts. Add in water and mix well with a wooden spoon.
- After the proofing time has past, turn the dough out onto parchment paper that has been sprinkled with flour and quickly shape into a circle. It will be sticky, so you may want to flour your hands as well. And try to not overwork the dough--just a rustic circle is all you are going for. Let the dough rest, while the oven preheats.
