Steps:
- In a large saucepan, combine asparagus, chopped onion, and 1/2 cup chicken broth. Cover, and bring to a boil over high heat. Reduce heat, and simmer uncovered until asparagus is tender, about 12 minutes. Process the mixture in a blender to puree the vegetables. Set aside.
- In the same saucepan, melt the butter over medium-low heat. Stir in the flour, salt, and pepper. Cook, stirring constantly for 2 minutes. Whisk in the remaining chicken broth, and increase the heat to medium. Cook, stirring constantly until the mixture boils. Stir in the asparagus puree and the milk.
- Put the sour cream in a small bowl, and stir in a ladleful of the hot soup. Add the sour cream mixture and the lemon juice to the soup. Stir while heating the soup to serving temperature, but don't allow it to boil. Serve immediately.

CREAM OF ASPARAGUS SOUP I
One of my favorite soups. I make it as soon as fresh asparagus is available.

Steps:
- Melt butter or margarine in a heavy cooking pot. Add onions and chopped celery; saute until tender, about 4 minutes. Stir in flour, mixing well. Cook for about 1 minute, stirring constantly. Do not burn, or let it go lumpy. Add water, chicken broth, and chicken soup base; stir until smooth. Bring to a boil. Add diced potatoes and chopped asparagus. Reduce heat, and simmer for about 20 minutes.
- Puree soup in a food processor or blender in batches. Return to pot.
- Stir in half and half cream, soy sauce, and black and white pepper. Bring soup just to boil. Adjust seasonings to taste. Serve hot.

ASPARAGUS SOUP
This creamy soup is a terrific way to showcase one of the most lovable vegetables of spring in a slurpable way.

- Trim off the bottom inch of the asparagus stalks, or any amount that seems woody, and discard. Place about half of the asparagus in a line and trim off the top 1-inch of the tips. Set those aside. Cut the rest of the asparagus spears into 2-inch pieces.
- Melt the butter in a large soup pot or Dutch oven over medium heat. Add the onion and celery, season with salt and pepper, and sauté for about 5 minutes until the onions are soft and lightly golden. Add the thyme, potatoes, and broth. Turn the heat to high, bring the soup to a simmer, add the asparagus, then lower the heat and partially cover the pot (place the lid on the pot so that there is about a 1-inch gap for steam to escape, but so the soup is mostly covered so the liquid doesn't evaporate too quickly). Simmer the soup until the vegetables are very tender, about 25 minutes.
- Meanwhile, place the reserved asparagus tips into a small saucepan with ½ cup water. Cover the pot, bring the water to a boil over high heat, simmer for 1 minute, then drain the asparagus tips in a strainer or colander, and run them under very cold water to stop the cooking. Drain and set aside.
- Puree the soup with an immersion blender in the pot, or in batches in a food processor or blender. If the soup doesn't seem silky smooth enough, you can pass it through a mesh strainer, pressing the soup through discarding any solids that are strained out. Return the soup to the pot, if necessary, add the cream, and heat over medium heat. Taste and adjust seasonings as you like.
- When the soup is hot throughout (don't let it come to a boil!), serve in bowls garnished with Parmesan and the blanched asparagus tips. Top with a bit of additional freshly ground pepper, if desired.

- Cut the tips off of 12 asparagus (1 1/2") and set aside.
- Discard cut bottom ends of asparagus. Cut asparagus stalks into 1" pieces.
- Cook onion and asparagus in oil in large fry pan over medium heat, stirring often till softened (I cover the pan).
- Pour this into large sauce pan.
- Add broth and simmer on low medium about 15-20 minutes.
- While soup simmers, cook reserved asparagus tips in boiling salted water until just tender (3-4 minutes).
- and drain.
- Puree soup in a blender (or hand blender) until smooth.
- Ladle into bowls and season with salt and pepper.
- Garnish with asparagus tips.

ROASTED ASPARAGUS SOUP

Steps:
- Preheat oven to 450*F.
- Trim root ends from green onions.
- Cut white parts into 1-inch lengths.
- Cut green tops into 1-inch lengths and reserve.
- Place the white parts, asparagus, and onion wedges in an even layer in a shallow large roasting pan.
- Drizzle vegetables with olive oil.
- Roast, uncovered, for 15 to 20 minutes or until vegetables are charred and tender.
- Place half of the roasted vegetables in a food processor or blender.
- Add half a can of broth.
- Cover; process or blend until smooth.
- Transfer to a large saucepan.
- Repeat with remaining asparagus, onion wedges, and half a can broth.
- Stir in remaining can of broth, salt, and pepper.
- Heat through.
- Stir in half-and-half and snipped fresh dill.
- To serve, ladle soup into bowls.
- Top with reserved green sections of onoion and dill sprigs.
- Makes 6 servings.

CREAMY ASPARAGUS SOUP
In the Winter I love a good soup and this is certainly one. You can even use broccoli instead if you don't like asparagus. If I make it with broccoli my finicky son will eat it so you know it must be good.

- In a Dutch oven or a soup kettle, saute the potato, onion, carrot and celery in butter until veggies are tender. Sitr in the flour, salt and pepper until blended, gradually add broth, bring to a boil; cook and stir for 2 minutes. Add the asparagus; reduce heat and simmer for 25 to 30 minutes or until vegetables are tender. Cool to lukewarm, sir in cream and sour cream until smooth. Bring to a boil. Garnish with bacon crumbs.

To be truthful, asparagus is my least favorite vegetable. But I make an exception with this recipe my mom and I came up with together. The ham and cheese really lend a tasty difference. Now that our parents are retired, my brothers and I have taken over the family farm. We milk 200 Holsteins.
