Mom's Uncooked Cookies is my mom's classic, easy recipe for delicious, no-bake cookies using, cocoa powder, oatmeal and coconut.

2 cups Granulated Sugar
1/2 cup Margarine (or butter)
1/2 cup Evaporated Milk
1/2 cup Baking Cocoa Powder
1 teaspoon Vanilla
3 cups Rolled Oats
1/2 cup Shredded Coconut
1/2 cup Nuts (optional)

Steps:

  • Melt butter in pan over medium-low to medium heat.
  • Add the evaporated milk, cocoa powder, and sugar to the melted butter. Stir and cook until the mixture comes to a complete boil.
  • Cook for one minute.
  • Remove the pan from the heat and add the vanilla, rolled oats, nuts if using, and coconut. Stir until completely mixed.
  • Scoop mixture onto a cookie sheet that has been lined with wax paper.
  • Let the cookies set until firmed up.

2 cups all-purpose flour
1 cup chopped walnuts
⅔ cup butter
⅔ cup brown sugar
2 (8 ounce) packages cream cheese, softened
½ cup white sugar
2 eggs
¼ cup milk
1 teaspoon vanilla extract
2 tablespoons lemon juice

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix flour, walnuts, butter, and brown sugar together in a bowl. Line a 9x13-inch baking pan with half the crust mixture.
  • Bake in the preheated oven until browned, about 15 minutes. Remove crust and leave oven on.
  • Mix cream cheese and white sugar together in another bowl using an electric mixer until blended. Add eggs, milk, and vanilla extract; mix until blended. Pour on top of the baked crust. Sprinkle with remaining crust mixture.
  • Bake in the hot oven until set, about 25 minutes.

1 cup roasted Spanish peanuts
5 cups crisp rice cereal
1 cup white sugar
1 cup light corn syrup
1 cup peanut butter

Steps:

  • Grease a 9x13 inch baking pan. Pour cereal and peanuts into the pan and spread around evenly.
  • In a heavy sauce pan, bring sugar and corn syrup to a rolling boil, over medium heat. Remove from heat and stir in the peanut butter. Pour the sugar mixture evenly over the cereal and peanuts. Let cool and cut into squares.

1 cup peanut butter (creamy or chunky)
1 cup sugar
1 large egg
1 teaspoon baking soda

Steps:

  • Preheat oven to 350°F. and grease baking sheets. In a bowl with an electric mixer beat together peanut butter and sugar until combined well. In a small bowl lightly beat egg and beat into peanut butter mixture with baking soda until combined well.
  • Roll level teaspoons of dough into balls and arrange about 1 inch apart on baking sheets. With tines of a fork flatten balls to about 1 1/2 inches in diameter, making a crosshatch pattern. Bake cookies in batches in middle of oven until puffed and pale golden, about 10 minutes.
  • Cool cookies on baking sheets 2 minutes and transfer with a metal spatula to racks to cool completely. Cookies may be kept in an airtight container at room temperature 5 days.

1 large egg, room temperature
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour

FROSTING:
3 tablespoons butter, softened
3-1/2 cups confectioners' sugar
1/4 cup whole milk
1 teaspoon vanilla extract
1/2 cup finely chopped walnuts, optional

Steps:

  • Preheat oven to 375°. Cream butter and sugar until light and fluffy. Beat in egg and vanilla. In a separate bowl, whisk flour, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. , Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake until edges are lightly browned, 10-12 minutes. Remove to wire racks to cool. , For frosting, combine butter, confectioners' sugar, milk and vanilla; beat until smooth. Steps:

  • Preheat oven to 375 degrees F.
  • In a large bowl, cream together butter and sugar until fluffy.

  • Beat in flour, salt and baking soda until well combined.

This was always a childhood birthday favorite! My mother made it for all of us and would dress it up with candles and fancy writing in icing. Much simpler to cut and serve than a cake, easily portable, and most of all TASTY!

Number Of Ingredients 12

2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup butter
1/2 cup margarine
3/4 cup white sugar
3/4 cup packed brown sugar
1 1/2 teaspoons vanilla
2 eggs
1 (12 ounce) bag chocolate chips
1 cup nuts (optional)
1 (16 ounce) can fudge frosting

Steps:

  • Preheat oven to 360 degrees F.
  • Mix dry ingredients together.
  • In a large glass bowl soften a stick of butter and one stick of margarine.
  • Add 3/4 cup white sugar, 3/4 cup packed brown sugar and 1 1/2 teaspoons of vanilla. Mix well.
  • Add two eggs. Stir well.
  • Gradually add the flour mixture. Stir until well blended.
  • Add one 12 ounce package of chocolate chips. (One cup of nuts is optional).
  • Put in a jelly roll pan (10x15 or 11x17) and flatten to the edges. This cookie is thin, not thick like a cake.
  • Bake 20 minutes and check to make sure the edges aren't too crispy.
  • Melt fudge frosting in microwave or on stove and drizzle on top. Cut and serve when cool.
