Categories     Dessert

Time 1h35m

Number Of Ingredients 17

1 1/2 cups Land O Lakes unsalted butter (room temperature)
2 3/4 cups granulated sugar
5 large eggs (room temperature)
3 cups sifted cake flour
1 tsp salt
1 cup sour cream
1/4 cup crushed pineapple
tbsp pure vanilla extract
2 tbsp unsalted butter (melted)
1/3 cup light brown sugar (packed)
6 whole pineapple rings
6 maraschino cherries
1/2 cup rum
1/2 cup granulated sugar
2 tbsp salted butter (melted)
2 tbsp pineapple juice
1 tsp pure vanilla extract

Steps:

  • Start by preheating oven to 350 degrees and spraying a 12 cup bundt pan with nonstick spray or grease pan (make sure you really prepare your pan well to insure no sticking for this cake).
  • In the bowl of a stand mixer fitted with the whisk attachment, beat the butter for 2 minutes on high speed.
  • Slowly add the granulated sugar. Mix together for an additional 5 minutes, until very pale yellow and fluffy.
  • Add the eggs 1 at a time, combining well after each addition and scraping down the sides and bottom of the bowl as needed.
  • Turn your mixer down to its lowest speed and slowly add the flour in 2 batches. Add the salt. Be careful not to overbeat. Add the sour cream, crushed pineapple and vanilla extract. Scrape down the sides and bottom of the bowl and mix the batter until just combined. Be careful not to overmix.
  • To assemble cake, pour melted butter in the bottom of the sprayed pan then sprinkle the butter with brown sugar.
  • Line the bottom of the pan with the pineapple rings and add 1 cherry to the center of each pineapple ring.
  • Evenly pour cake batter over pineapples and bake for 70-80 minutes or until toothpick inserted into center of cake comes out mostly clean but still moist.
  • Allow cake to rest for 10 minutes then quickly invert cake onto serving plate.
  • In a small pot set over medium heat, combine all the ingredients and cook over medium-high heat.
  • Reduce mixture by about a third and thickened, about 5 minutes. Remove from heat and let cool for 10 minutes.
  • Finally poke sides and top of cake and pour syrup over cake and allow to seep in then cool.

MOM'S PINEAPPLE RUM DREAM CAKE

Mom's Pineapple Rum Dream Cake image

My Mom used to make this for me when I was a child, as it was my favorite cake. As I grew and became more kitchen savvy, she taught me how to make this cake. It still remains my favorite today and has become a favorite for those who I have made it for.

Provided by Brandess

Categories     Dessert

Time 1h

Yield 1 Cake, 16 serving(s)

Number Of Ingredients 11

1 (18 ounce) box betty crocker French vanilla cake mix
1 1/4 cups water
1/3 cup vegetable oil
3 eggs
1/3 cup water
1/3 cup sugar
1/4 cup dark rum
4 ounces apricot preserves
4 ounces vanilla instant pudding mix
1 (13 1/2 ounce) can crushed pineapple, undrained
1 (8 ounce) container Cool Whip

Steps:

  • Utilizing the water, vegetable oil and eggs, prepare cake in 2 eight, or 2 nine inch, cake pans according to package directions. Completely cool on wire racks.
  • Prepare the rum syrup by placing the water and sugar in a small saucepan and bring to a boil, stirring occasionally to dissolve the sugar. Cool and stir in the rum.
  • In a bowl, stir dry pudding mix into crushed pineapple and its juice. Gently fold Cool Whip into the pineapple mixture with a rubber spatula.
  • Use a long serrated knife to cut the cake layer into two horizontal layers and moisten both sides with up to one half of the rum syrup. Spread the layers with a thin layer of the apricot preserves.
  • Reassemble the two cut layers and place them on a cake plate. Top with 1 cup of the frosting.
  • Repeat the rum syrup and apricot preserve process with the second cut cake layer and place it on top of the frosted bottom layer. Frost sides of cake lightly then top cake with remaining frosting mixture.
  • If desired, garnish cake with pineapple slices or chunks and maraschino cherries taking care to drain them and dry them off on paper towels before adding them to the cake.
  • Chill until serving time and store leftovers in refrigerator.

MOM'S RUM CAKE

Mom's Rum Cake image

I got this from my mom. When she makes it, we all fight over it. It's delicious and easy to make.

Provided by Laura

Categories     Desserts     Specialty Dessert Recipes     Liqueur Dessert Recipes     Rum

Yield 14

Number Of Ingredients 11

1 (18.25 ounce) package yellow cake mix
1 (3.5 ounce) package instant vanilla pudding mix
4 eggs
½ cup water
½ cup vegetable oil
½ cup rum
½ cup chopped pecans
3 tablespoons butter
¼ cup water
1 cup white sugar
½ cup rum

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour one 10 inch tube pan.
  • Combine cake mix and pudding mix.
  • In another bowl beat eggs, water, oil and rum until frothy. Add cake mix/pudding mixture and beat until well mixed. Spread pecans evenly over the bottom of the prepared pan and pour batter over pecans.
  • Bake cake at 325 degrees F (165 degrees C) for 60 minutes or until a toothpick comes out dry when inserted in the center. Allow to cool in pan for 5 minutes and remove from pan. Place in serving dish immediately, right side up. (Pecans should be on the bottom)
  • To Make Glaze: During the last 15 to 20 minutes of baking time, combine butter or margarine, water and sugar in a sauce pan and bring to boil over high heat. Reduce heat to medium and boil rapidly until it's very thick and syrupy stirring very frequently. The syrup must be reduced quite a bit and very thick otherwise it will make the cake mushy. Remove from heat and add rum. While cake is still hot, poke holes all over top of cake with a toothpick and spoon glaze over top of cake. Allow cake to sit at room temperature for one day then refrigerate.

PINEAPPLE & RUM CAKE

Pineapple & rum cake image

Bake this cake as a centrepiece dessert when entertaining. It's sure to go down a storm with its stunning pineapple design and sunny Caribbean flavours

Provided by Lulu Grimes

Categories     Dessert, Treat

Time 1h15m

Number Of Ingredients 15

200g fresh pineapple chunks
75g dark chocolate , chopped
160g unsalted butter , at room temperature, plus extra for the tin
120g golden caster sugar
½ tsp five spice
30ml milk
2 tbsp dark rum
3 large eggs
160g self-raising flour
75g unsalted butter , at room temperature
125g icing sugar
½ lime , juiced
300g golden caster sugar
25g liquid glucose
4 large egg whites

Steps:

  • Heat oven to 180C/160C fan/gas 4. Tip the pineapple onto a non-stick baking tray and roast for 20 mins - this concentrates the flavour. Leave the pineapple to cool before roughly chopping into smaller chunks.
  • Melt the chocolate in a microwave or in a saucepan set over simmering water, then tip onto a piece of baking parchment and spread it out in a thick layer. Leave to set.
  • Butter a 20 x 30cm baking tin and line with baking parchment. Beat the butter and sugar together until light and creamy. Add the five spice, milk and rum, and mix together. Beat in the eggs, one at a time, adding the flour in three batches between the eggs, and fold in the pineapple. Scrape the cake mixture into the baking tin and bake for 20 mins, or until just cooked through and lightly browned. Leave in the tin for 10 mins, then lift out onto a wire rack to cool completely.
  • Cut the cake in half widthways. Beat the butter for the icing until soft, then stir in the icing sugar, followed by the lime juice. You should end up with a soft, spreadable buttercream. Add a little more icing sugar if it's too soft.
  • For the meringue, put the sugar, 65ml water and the glucose in a heavy pan on a medium heat and stir to dissolve the sugar. Bring to the boil, and use a sugar thermometer to keep an eye on the temperature. Put the egg whites in a stand mixer and whisk over a medium speed. When the temperature of the syrup reaches 118C, steadily pour it in a thin stream into the stiff egg whites, and continue whisking until completely cold. Scoop the meringue into a piping bag fitted with a plain round nozzle. Can be made up to three days in advance and kept in the fridge.
  • Put one half of the cake on a flat ovenproof serving plate or baking sheet. Spread a little of the icing over the cake and sandwich the other half on top. Now, imagine you are looking down onto a pineapple that is lying down and cut each corner off the cake to make it look like a barrel - a bread knife works best here. Trim off the sharp top edges to round the top, then coat the cake with a thin layer of the remaining icing
  • Pipe dots of meringue all over the cake so it looks like a pineapple. Brown the meringue with a blowtorch or put it in an oven, turned up as high as it will go, and keep an eye on it until it starts to brown. Cool completely. Cut the cooled chocolate into shards about 5-10cm long, and push them into one end of the cake so they look like pineapple leaves.

MOM'S FAMOUS RUM CAKE

Mom's Famous Rum Cake image

This classic rum cake recipe, built around a yellow cake mix, is a favorite of mushers and snowmobilers passing through the village of Tanana, Alaska, in the wintertime. It's hard to mess up, comes together quickly, fills out a (prepared) Bundt pan reliably and can be made on a whim with ingredients from the pantry. It travels well; keeps, covered, for several days; and pairs nicely with coffee and cold weather.

Provided by Julia O'Malley

Categories     cakes, dessert

Time 1h

Yield 8 servings

Number Of Ingredients 12

Butter or vegetable oil, for greasing the pan
1 cup/120 grams chopped walnuts or pecans
1 (roughly 16-ounce/450-gram) package yellow cake mix
1 (3.4-ounce/100-gram) package vanilla instant pudding mix
4 large eggs
1/2 cup/120 milliliters cold water
1/2 cup/120 milliliters vegetable oil
1/2 cup/120 milliliters rum (dark or light), preferably Bacardi
1/2 cup (1 stick/115 grams) unsalted butter
1 cup/200 grams sugar
1/2 cup/120 milliliters rum (dark or light)
1/4 cup/60 milliliters water

Steps:

  • Heat oven to 350 degrees. Grease a 9-inch Bundt cake pan, scatter the nuts evenly into the bottom of the pan, and set aside.
  • In a large bowl, whisk together the cake mix, pudding mix, eggs, water, oil and rum. Pour the batter into the prepared pan and bake for 40 to 45 minutes, or until a skewer inserted into the thickest part of the cake comes out with just a few crumbs attached.
  • While the cake bakes, make the glaze: In a small saucepan, combine the butter, sugar, rum and water. Bring to a boil over medium heat, stirring until the sugar dissolves. Reduce heat to a simmer and cook for 5 minutes, then remove from heat.
  • When the cake is done, remove from the oven and let cool 5 minutes, then invert onto a serving plate. Using a skewer or a fork, poke holes all over the top and sides of the cake, then brush the entire cake with the glaze, repeating until all the glaze is gone. Serve warm or at room temperature. Cake keeps (and improves, some say), wrapped and refrigerated, up to 3 days.

PINEAPPLE CAKE

Pineapple Cake image

This cake has special meaning to me. I was so glad I found my mom's handwritten copy tucked away in one of her old cookbooks. This is the cake my mom baked for special occasions. In my mom's own writing "excellent cake-made for M's engagement party". Well, the marriage didn't last, but I sure am glad the cake recipe did! NOTE: I typed out the recipe like my mom wrote it. Prep time is estimated, and cooking time-baking time..

Time 55m

Yield 1 cake, 8-10 serving(s)

Number Of Ingredients 16

6 eggs
1/2 teaspoon salt
1/2 teaspoon cream of tartar
1 cup sugar, divided
3 tablespoons water
1 tablespoon lemon juice
1 teaspoon vanilla
1 cup cake flour, sifted
2 (3 1/2 ounce) packages vanilla pudding (the kind you cook on the stove)
1/4 cup water
2 (14 ounce) cans crushed pineapple (estimated can size)
1/3 cup light rum
1 pint whipping cream
1/4 cup icing sugar
1 teaspoon vanilla
1/8 teaspoon yellow food coloring

Steps:

  • CAKE:.
  • Preheat oven to 350*. In a large bowl separate eggs. Beat whites until foamy; add salt and cream of tartar and continue beating until stiff.
  • Slowly beat in 1/2 cup sugar, one tablespoon at a time, until you get a stiff meringue. Set aside.
  • In another bowl, using the same beaters (no need to rinse), beat the egg yolks well.
  • Slowly beat in the remaining 1/2 cup of sugar until thick and yellow.
  • Add the 3 tablespoons of water, lemon juice and vanilla. Beat until very light.
  • Fold in the flour.
  • Pour the egg yolk mixture over the beaten egg whites, folding together until no streaks of yolk remain.
  • Pour into 2 "ungreased" 9" cake pans. Bake @ 350* for 15-18 minutes, until cake springs back when touched lightly in the middle & it's browned on top.
  • Remove from oven & invert pans, resting the rim on custard cups. Cool completely. Meanwhile, make -.
  • FILLING:.
  • Mix 1/4 cup water and pudding mix, stirring until smooth. Add the "undrained" pineapple. Cook over medium heat, stirring constantly until the mixture boils and turns clear. Remove from heat, let cool, then add the rum.
  • GOLDEN WHIPPED CREAM:.
  • Combine ingredients & beat until stiff.
  • To ASSEMBLE THE CAKE:.
  • Split each layer to make 4 layers. Spread each with the golden whipped cream. Put one layer on your cake plate.
  • Spread 1/4 of the pineapple filling over the cream. Cover with the second layer. Repeat until cake is assembled.
  • Use the remaining cream to go around the sides of the cake & pipe a "ruffle" around the top of the cake. Decorate as desired.
