MOM'S SKILLET BBQ PORK CHOPS
I am trying to recreate a dish that is similar to the one Mom made when we were little kids. I believe this is pretty close, so I am posting for my own use.

Steps:
- Blot the pork chops with paper towels, then dredge with the flour and some paprika.
- Heat oil in electric skillet (300F) and brown chops on both sides, approximately 3 min per side, remove to platter.
- Brown onions, smash garlic and cook one minute, then add chops back to skillet.
- Mix remaining ingredients into a sauce and pour over chops.
- Cover and turn skillet down to 250F and simmer for 20-25 minutes.
- If sauce is thin you can thicken it with cornstarch.
- Serve over rice.

- Brown chops in oil. Remove & keep warm.
- Add onion and pepper to skillet. Cook 5 minutes. Add barbecue sauce.
- Return chops to skillet. Spoon sauce over chops and simmer 3-5 minutes, turning chops once.

BARBECUE SKILLET PORK CHOPS
I found this recipe in our local newspaper, and tweaked it just a bit to fit my tastes. It is a fantastic, easy, no-sweat dish to make in the summer because it doesn't require heating the oven up. We ate it over cooked egg noodles, with a side of cooked broccoli, and a salad. The sauce is just divine!! The leftovers are also good cold for a quick lunch. Yummy!!:)

Steps:
- In large skillet, brown chops in oil over medium heat.
- Drain off excess oil.
- Sprinkle celery, onion, brown sugar, lemon juice, and seasonings evenly over chops.
- Pour tomato sauce over all.
- Cover and simmer over low heat 1 hour, or until chops are tender, occasionally turning chops in pan.
- Serve with cooked egg noodles or mashed potatoes.

- Spray 12-inch nonstick skillet with cooking spray; heat over medium heat. Sprinkle both sides of pork with salt and pepper. Cook pork in skillet about 5 minutes, turning once, until brown.
- Stir remaining ingredients into skillet. Heat to boiling; reduce heat. Cover and simmer 10 to 15 minutes, stirring occasionally, until pork is slightly pink when cut near bone.
