Roasted Monkfish With Morels, Dandelion And Artichoke Sauce image

1 head garlic, unpeeled, plus
1 large clove, peeled and chopped
1 1/4 cups plus 5 tablespoons olive oil
2 sprigs fresh tarragon
1 sprig fresh thyme
1 cup white wine
1/3 cup Champagne vinegar
3 cups chicken broth, homemade or low-sodium canned
3 lemons, halved, plus
2 tablespoons fresh lemon juice
8 black peppercorns, tied in cheesecloth
12 baby artichokes, tough outer leaves discarded
Kosher salt and freshly ground pepper to taste
6 8-ounce pieces of monkfish, bone intact, halved crosswise
1/4 cup superfine flour, like Wondra
Kosher salt and freshly ground pepper to taste
2 tablespoons olive oil
2 tablespoons unsalted butter
1/2 pound fresh morels (or 2 ounces dried, rehydrated in hot water and drained), stemmed, and halved if large
1/2 pound dandelion greens

Steps:

  • To make the sauces, cut the head of garlic in half crosswise. Heat 2 tablespoons of olive oil in a large saucepan over low heat. Add the garlic head, tarragon and thyme and sweat for 5 minutes. Raise the heat and stir in the wine and vinegar. Stir in the broth and 3/4 cup of oil. Squeeze the juice from 1 halved lemon into the saucepan, then add rind, along with the peppercorns. Simmer slowly for 20 minutes. Set aside.
  • Meanwhile, squeeze the juice from the remaining 2 halved lemons into a wide pot and add the rinds. Stem the artichokes. Place the artichokes in the pot and cover with cold water. Bring to a boil. Place damp paper towels over the artichokes to keep them immersed. Lower the heat and simmer until very tender when pierced with a knife, about 35 minutes. Drain and place in a bowl. Strain the reserved garlic-herb mixture over the artichokes, stir to coat them well and set aside for 1 hour.
  • Remove artichokes from the liquid and simmer it in a saucepan until reduced to 2 cups. Let cool. Place in a blender and, with the machine running, slowly drizzle in 1/2 cup of oil. Season the vinaigrette with salt and pepper and set aside.
  • Heat 1 tablespoon of olive oil in a small skillet over low heat. Add the chopped clove of garlic and sweat just until softened. Pull off and discard all but the innermost leaves of the artichokes and place the artichoke hearts in a food processor with the garlic, 2 tablespoons of lemon juice and 2 tablespoons of olive oil. Puree until smooth. Season with salt and pepper to taste. Place in a medium saucepan and whisk in half of the vinaigrette. Set aside.
  • To make the monkfish, preheat the oven to 375 degrees. Sprinkle the fish very lightly on both sides with flour and season with salt and pepper. Heat the olive oil in a large ovenproof skillet over medium-high heat. Place the fish in the skillet top side down and sear on both sides until golden brown (in 2 batches if necessary). Place in the oven and roast until fish is cooked through, about 5 minutes.
  • Meanwhile, warm the artichoke sauce over very low heat. (The sauce will separate if too hot.) Remove the fish from the skillet and keep warm. Deglaze the skillet over medium heat with the remaining vinaigrette. Strain the vinaigrette into another skillet and place over medium heat. Add the butter and the morels and cook for 2 minutes. Add the dandelion greens, stir just until wilted, remove from heat and season with salt and pepper.
  • To serve, spoon the vegetables with their sauce onto the center of 6 plates. Place 1 piece of monkfish on either side of the vegetables. Spoon the artichoke sauce around the vegetables and serve immediately.

2 (1-pound) monkfish tails, trimmed
Olive oil
Salt and freshly ground black pepper
12 fingerling potatoes, sliced in half, vertically
Olive oil
Salt and pepper
1/2 pound merguez sausage
2 tablespoons olive oil
1 small onion, finely sliced
4 cloves garlic, finely sliced
1 cup white wine
4 cups clam broth
12 New Zealand cockels
2 plum tomatoes, pureed
2 scallions, finely sliced
2 tablespoons cold unsalted butter
Spinach, sauteed in butter and seasoned with salt and pepper, for serving
Fresh parsley, for garnish

Steps:

  • For the monkfish: Preheat oven to 400 degrees F. Heat 2 tablespoons of olive oil in a large saute pan over medium-high heat. Season the monkfish with salt and pepper to taste. Sear on both sides until lightly golden brown. Place the fish in a small roasting pan and roast in the oven for 12 to 15 minutes.
  • For the potatoes: Preheat oven to 400 degrees. Toss potatoes in olive oil in season with salt and pepper to taste. Roast for 10 to 15 minutes, until just cooked through and lightly golden brown. .
  • For the sausage: Preheat grill or grill pan. Grill the sausage until golden brown and cooked through. Let rest and cut into 1/2-inch slices.
  • For the clam broth: Heat oil in a medium saucepan over medium heat. Add the onions and cook until soft. Add the garlic and cook for 2 minutes. Increase the heat to high, add wine and cook until reduced. Add broth and bring to a boil. Add clams, cover the pot and cook until the clams open, remove the clams with a slotted spoon to a bowl. Cook the broth until reduced by half. Add the tomatoes and cook for 2 minutes. Whisk in the butter, add the scallions and season with salt and pepper to taste.
  • Assemble: Cut the roasted monkfish into 4 pieces. Place a small amount of spinach in each bowl. Place a piece of monkfish on top of spinach and place 3 potatoes, 3 pieces of merguez and 3 clams around the edge. Ladle broth over and garnish with fresh parsley.

1 monkfish fillet, briefly seared in saute pan in olive oil
16 oz grilled artichoke hearts, roughly quartered
5-6 fresh plum tomatoes, quartered
1 lb fresh green cerignola olives
good quality extra virgin olive oil
sea salt (to taste)
freshly ground black pepper (to taste)
herbes de provence (to taste)

Steps:

  • Heat a large saute pan over medium high heat and add enough olive oil to coat bottom. Heat until shimmery but not smoking. Sear monkfish tenderloin on each side about 3-4 minutes. Place artichoke hearts (rinse if they're jarred in vinegar), tomatoes and olives on the bottom of a shallow roasting dish. Place monkfish fillet(s) on top and drizzle with 2-3 tablespoons olive oil, salt, pepper and herbes de provence. Place in a 350 degree oven for 15-20 minutes or until fish fillet is firm to the touch.

4 tails baby monkfish
8 slices bacon
1 salsify
1 celery root
2 parsnips
Sherry vinegar to taste
1 bunch Italian parsley chopped
1 tablespoon olive oil
Salt and pepper to taste

Steps:

  • Clean the skin of the monkfish and remove the central bone. Tie up the tails with the slice of bacon that you have slightly pounded. Clean all the vegetables and cut them in large chunks. In a saute pan over medium heat, sear the monkfish to give a little color to the bacon, reserve. In the same pan saute the vegetables in the residual fat from the bacon, for 6 to 8 minutes or until they start to caramelize add a little bit of sherry vinegar and reduce it by half. Place the monkfish tails on top of the vegetables and cover, let the tails cook in their own steam. Add a little bit of fresh chopped parsley on top and serve as is

Monkfish or Other Fillets with Artichokes image

I had this dish in Genoa, which is near Albenga, a part of Liguria best known for its artichokes. All the work is in preparing the artichokes, and the results are fantastic. In true Ligurian fashion, you might begin this meal with Pasta with White Clam Sauce (page 99) or Pansotti (page 550).

Number Of Ingredients 10

4 large artichokes
1 tablespoon vinegar, any kind
2 tablespoons extra virgin olive oil
1 1/2 to 2 pounds fillets of monkfish, red snapper, striped bass, or other firm white fish (2 or 4 fillets)
2 tablespoons flour, plus more as needed
Salt and black pepper to taste
2 garlic cloves, sliced
3 tablespoons fresh lemon juice
1/2 cup dry white wine
3 fresh rosemary sprigs or 2 teaspoons dried

Steps:

  • Trim the artichokes: Cut off their pointy tops to within 1 or 1 1/2 inches of the base; remove all but about 1/2 inch of the stem. Cut all around the artichoke, removing all of the hard parts. Open up the center and dig out the choke with a blunt-edged spoon. Trim any remaining hard parts. What's left is the artichoke bottom; cut it into 1/4-inch slices and put in water to cover; add the vinegar (this keeps the slices from becoming discolored).
  • Heat the oil in a large nonstick skillet over medium heat. Lightly dredge the fish fillets in the flour, then put them in the skillet. Brown quickly-no more than 2 minutes on each side-seasoning with salt and pepper. Transfer to a plate and keep warm.
  • Add the garlic and the drained artichokes and cook, stirring occasionally, until softened, about 5 minutes. Add the lemon juice, wine, and rosemary and cook for another 5 minutes. Return the fish to the skillet and cook without turning until it is cooked through, about 5 minutes more, perhaps a little longer with monkfish (most fillets are done when the point of a thin-bladed knife inserted into the thickest part meets little resistance; monkfish will still be resilient, but far less so than when it was raw). Taste and adjust the seasoning, then serve with the pan juices.
  • Omit the flour. Preheat the oven to 350°F. Spread half the oil in a ceramic casserole or baking dish and place the fish in it. Toss the garlic and artichokes with the lemon juice and remaining oil and spoon around the fish. Top with the rosemary and wine and bake, uncovered, until the fish is cooked through and the vegetables soft, 20 to 30 minutes.

1 1/2 pounds monkfish, cut into 4 pieces
1/4 cup dry white wine or dry vermouth
2 cups Chunky Cipolline Tomato Compote
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees.
  • Heat the oil in a skillet over high heat until hot but not smoking. Add the monkfish, shaking the pan as you add the fish to prevent sticking. Sear the fish on one side until golden brown, about 2 to 3 minutes. Transfer to the oven and roast until opaque and firm to the touch, about 8 minutes.
  • Transfer the fish to a warm plate and set aside. Place the skillet over medium heat and add the wine or vermouth and 1/4 cup water, scraping the browned bits from the pan. Add the Chunky Cipolline Tomato Compote to the skillet and cook until heated through.
  • Season to taste with salt and pepper. Spoon the compote among 4 dinner plates, arrange a piece of the monkfish over the compote, and serve.

I was recently introduced to monkfish (sold as "monkfish tail" in fish markets) and it has become a new favorite of mine. It's often called "poor man's lobster" because its firm flesh and delicate, slightly sweet flavor are similar to lobster. Served with a balsamic, garlic, and sun-dried tomato topping, this recipe comes together in a snap.

⅓ cup sun-dried tomatoes with Italian herbs, drained and chopped
3 tablespoons olive oil, divided
2 tablespoons balsamic vinegar
1 tablespoon sun-dried tomato oil
2 cloves garlic, minced
½ teaspoon white sugar
2 (12 ounce) monkfish tail fillets
1 pinch salt and ground black pepper to taste
1 tablespoon butter
2 tablespoons minced fresh parsley

Steps:

  • Combine sun-dried tomatoes, 2 tablespoons olive oil, balsamic vinegar, tomato oil, garlic, and sugar in a small bowl. Toss to coat and set aside.
  • Use a sharp knife to cut the purple translucent membrane away from each fillet. Cut each fillet crosswise into 3 to 4 pieces. Season with salt and pepper.
  • Heat 1 tablespoon olive oil and butter in a large skillet over medium-high heat. Sear monkfish until golden brown, about 3 minutes. Flip and continue cooking until opaque throughout, 2 to 3 minutes more. Reduce heat to low, remove fish to a plate, and cover with aluminum foil to keep warm.
  • Pour sun-dried tomato mixture into the skillet and quickly stir around the pan until just warmed, about 20 seconds. Spoon topping over fish and garnish with parsley.

Can't believe it, but there's no other recipe like this on Recipezaar (unless I somehow missed it). These babies are so, so good. I roasted canned artichoke hearts in connection with another recipe I invented, and was so pleased with the way they came out even without the topping, so I'm posting a plain(er) version. If you want the topped version, go to recipe no. 144997. I found that roasting them enhanced the taste and texture - made them more tender on the inside:D One of these "throw it in the oven and ignore while you are fixing other parts of dinner" recipes!

Salt and freshly ground pepper to taste
1/2 cup olive oil
1 carrot, cut in 1/4-inch cubes
1 onion, coarsely chopped
5 cloves garlic, unpeeled
1 cup dry white wine
1/2 cup fish broth (see recipe)

Steps:

  • Preheat oven to 425 degrees.
  • Season fish with salt and pepper.
  • Heat 2 tablespoons of the olive oil in a large nonstick skillet. Over high heat, cook one side of the fish until golden brown, about 1 minute. Turn, and brown the second side. Add carrot, onion, garlic, wine and fish broth, and simmer 2 to 3 minutes.
  • Transfer the contents of the skillet to an oven-proof baking dish, and cover tightly with aluminum foil. Roast for 5 minutes. Remove the fish to a serving platter and keep warm.
  • Meanwhile, in a saucepan, boil the cooking liquid and vegetables over high heat until reduced by half. Stir in the remaining olive oil to bind the sauce.
  • Spoon the sauce and vegetables over the fish, and serve with mashed potatoes.
