This Montmorency Sour Cherry Crumble is bursting with juicy tart cherries! Cobbler and crisp are two of my go-to summer desserts. This recipe is gluten free, dairy free, refined sugar free and just down right delicious!

3 cups fresh Montmorency cherries, pitted (see notes above if using frozen)
1/3 cup raw honey
1 teaspoon pure vanilla extract
4 Tablespoons arrowroot powder
1 cup gluten free old-fashioned rolled oats
1/4 cup unsalted vegan or dairy butter, cold from fridge *not room temperature (for dairy free butter I recommend Miyoko's Vegan Cultured Unsalted Butter)
1 Tablespoon arrowroot powder
1 teaspoon ground cinnamon
pinch of sea salt

Steps:

  • Preheat oven to 350 degrees F.
  • Using a large mixing bowl, combine pitted cherries with honey, vanilla extract and arrowroot powder and stir until combined.
  • Pour the cherry mixture into a 8×8 inch baking dish.
  • Cut cold butter into small 1/2 inch cubes and combine all topping ingredients into a small bowl.
  • Using your fingers work the cold butter into the mixture of oats using a finger snapping motion.
  • Once the butter is worked through the topping (some small remaining butter chunks are fine) top the cherries evenly with the mixture.
  • Bake for 30-35 minutes until the cherries are bubbling and the crumble topping is golden brown.
  • Allow the crumble to sufficiently cool before digging in and enjoy!

4 cups pitted fresh tart cherries or 2 cans (14-1/2 ounces) pitted tart cherries, drained
2 tablespoons sugar
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup cold butter, cubed

Steps:

  • Preheat oven to 375°. Place cherries in an ungreased 9-in. pie plate. Sprinkle with sugar. In a small bowl, combine the flour, brown sugar, cinnamon and salt. Cut in butter until mixture resembles coarse crumbs. Sprinkle over cherries. , Bake, uncovered, until top is bubbly, 30-40 minutes. Serve warm.

4 cups pitted sour cherries, with their juice
4 tablespoons sugar
1/2 cup all-purpose flour
1/4 cup whole-wheat flour
1/3 cup light brown sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
6 tablespoons cold unsalted butter, cut in pieces
1/4 cup chopped walnuts
1/4 cup rolled oats

Steps:

  • Preheat oven to 375 degrees. Combine the cherries and the sugar and let stand for 10 minutes. Place in a sieve and let drain very well. Place in a 9-inch pie plate and set aside.
  • In a medium-size bowl, combine the all-purpose and whole-wheat flours, sugar, salt and cinnamon. Rub in the butter until the mixture resembles coarse meal. Add the walnuts and oats and toss lightly to combine. Cover the cherries with the topping and bake until the topping is crisp and the juices are bubbling, about 40 minutes. Place on a rack to cool slightly before servings.

4 cups sour cherries, picked over, rinsed, and drained well
2 tablespoons cornstarch
2/3 cup plus 2 tablespoons sugar
2 tablespoons fresh lemon juice
1/4 teaspoon almond extract
1 cup all-purpose flour
1 teaspoon double-acting baking powder
1/2 teaspoon salt
3/4 stick (6 tablespoons) cold unsalted butter, cut into bits
peach and brown sugar ice cream (recipe follows) or vanilla ice cream as an accompaniment if desired
For Peach and Brown Sugar Ice Cream:
2 pounds very ripe peaches (about 4),pitted and chopped
2 tablespoons granulated sugar
3/4 firmly packed light brown sugar
3 large egg yolks
1 large whole egg
1-1/2 cups half-and-half
1/4 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg
2 tablespoons peach schnapps or peach-flavored liqueur

Steps:

  • Working over a bowl pit the cherries, discarding the pits and reserving the cherries and any juices in the bowl, and into the cherries stir the cornstarch, 2/3 cups of the sugar, the lemon juice, and almond extract. In a small bowl stir together the flour, the baking powder, the salt, the remaining 2 tablespoons sugar, and the butter, blend the mixture until it resembles coarse meal, and stir in 1/4 cup boiling water, stirring until the batter is just combined. In an 8-inch cast-iron skillet or flameproof baking dish bring the cherry mixture to a boil, drop the batter by heaping tablespoons onto it, and bake the cobbler in the middle of a preheated 350°F. oven for 45 to 50 minutes, or until the top is golden. Serve the cobbler with the ice cream.
  • Make Peach and Brown Sugar Ice Cream:
  • In a saucepan combine the peaches, the granulated sugar, and 1/4 cup water and simmer the mixture, stirring occasionally, for 15 to 20 minutes, or until the peaches are soft. Purée the mixture in a food processor or blender, force the purée through a fine sieve into a bowl, and let it cool. In the pan, cleaned, cook the brown sugar with 1/4 cup water over moderately low heat, stirring, until it is dissolved. In a large bowl with an electric mixer beat the yolks and the whole egg until they are frothy, beat in the brown sugar syrup, and beat the mixture until it is thick and pale. Stir in the half-and-half, scalded, pour the mixture into the pan and cook it over moderately low heat, stirring with a wooden spoon, to 175°F. on a candy thermometer. Strain the custard through the fine sieve into another large bowl, let it cool, and stir in the peach purée, the cinnamon, the nutmeg, and the peach schnapps. Freeze the mixture in an ice-cream freezer according to the manufacturer's instructions. Makes about 1 quart.

Almond Crumble
1 cup almond flour
1/2 cup cold butter, diced (1/4 inch)
1/2 cup plus 2 tablespoons bread flour
1/3 cup granulated sugar
2 tablespoons light brown sugar
1 teaspoon salt
Cherry Filling
4 cups pitted sour cherries
1/2 cup sugar
3 tablespoons flour
2 teaspoons lemon juice
2 teaspoons vanilla extract
1/2 teaspoon salt
Zest of 1/2 lemon
3 tablespoons butter
Whipped Ricotta
1/2 pound ricotta
1/2 teaspoon lemon juice
1/2 teaspoon vanilla extract
1/4 teaspoon salt

Steps:

  • Almond Crumble
  • Blend all of the ingredients together in a stand mixer fitted with the paddle attachment until the mixture becomes crumbly. Refrigerate until ready to use.
  • Cherry Filling
  • Preheat the oven to 325°F. In a large bowl, mix together all of the ingredients except the butter using a rubber spatula. Transfer the cherry mixture to a 10 by 7-inch baking dish. Dot the top of the mixture with the butter. Cover with the almond crumble and bake until golden brown and bubbly, 45 minutes to 1 hour.
  • Whipped Ricotta
  • In the bowl of a stand mixer fitted with the whisk attachment, whip the ricotta with the lemon juice, vanilla, and salt until light and smooth. Serve alongside the warm crumble.

1 lb sour cherry, pitted (to pit the cherries, squeeze them between your fingers)
1/4 cup granulated sugar
3/4 cup all-purpose flour
1/4 cup butter
1/2 cup packed demerara sugar
1 pinch ground ginger
1 pinch ground cinnamon

Steps:

  • Pre-heat oven to 350*F.
  • Toss cherries with granulated sugar and place in an ovenproof dish.
  • Combine flour, ginger, cinnamon and Demerara sugar.
  • Using your fingertips (or the food-processor) rub butter into flour mixture until the mixture resembles coarse breadcrumbs.
  • Sprinkle mixture over fruit.
  • Bake at 350*F for 35-40 minutes or until golden.
  • Serve hot or cold with cream or custard.
