MOOSE STEAK
Our family especially enjoys this tender moose main dish in the fall and winter, when an oven meal really satisfies. The seasonings cover the game flavor wonderfully, and the tomatoes keep the meat nice and moist. -Chris Mountain, Innisfail, Alberta

- Preheat oven to 350°. Cut steak into serving-size pieces. Combine the cornstarch, mustard, salt and pepper; rub half over steak. Pound with a meat mallet to tenderize. Rub with remaining cornstarch mixture; pound on both sides with the mallet. , In a large skillet, brown steak in oil. Transfer to a greased 2-1/2-qt. baking dish. Top with tomatoes, onion and carrot. Bake, covered, until meat is tender, 1-1/4 to 1-1/2 hours. Serve with noodles if desired.

MY MOM'S SWISS STEAK
This is so easy and all done in one pot! It is delicious and everyone including kids will love it! This recipe is tried and true, impossible to fail! It can also be doubled or tripled without problems, but lower the heat on the second and third batch when browning, as not to burn.

- Heat oil in a large Dutch oven over medium-high heat. Place steaks into the pot one at a time, quickly browning on each side. Remove steaks, and set aside. Add the onion to the pot, and cook over medium-low heat until wilted, about 3 minutes. Return the steaks to the pot, and add the tomatoes, mushrooms, celery and green pepper. Season with oregano and add the bay leaf.
- Cover the pot, and cook over medium-low heat for about 1 1/2 hours, or until meat is fork tender. If you wish to thicken the gravy, remove the meat to a plate. Stir together the cornstarch and water; stir into the pan juices. Let simmer for about 2 minutes to thicken. Return the beef to the pot.

BEER MARINATED DEER/ELK/MOOSE STEAK
This is my favorite marinade after a good hunting season. The two days in the fridge really makes all the difference when dealing with fussy people who don't like the wild taste of a good hunt.

Steps:
- Whisk together beer, soy sauce, mustard, Worcestershire sauce, pepper, salt, and hot sauce in a bowl and pour into a resealable plastic bag. Add venison steaks, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 2 days.
- Preheat an outdoor grill for high heat, and lightly oil the grate. Remove steaks from marinade and shake off excess. Discard remaining marinade.
- Cook steaks on the preheated grill until they are beginning to firm and are hot and slightly pink in the center, about 7 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Allow steaks to rest for 5 minutes before serving.

MOOSE SWISS STEAK
Steps:
- Cut meat in serving-size pieces. Sprinkle on meat tenderizer. Dust meat with flour and rub it in. Brown on both sides in hot shortening. Place in baking disk and add water, salt and pepper. Bake in 325 degree oven 2 hours. Add remaining ingredients, and more water if necessary. Bake 1 hour more, or until meat and celery are tender. Removed meat from pan. stir pan juices, scraping sides and bottom. Use this as a gravy to be served with meat or on mashed potatoes. SLOW COOKED SWISS MOOSE RECIPE

- Mix flour, marjoram, sage, salt, pepper; spread half of the mixture on one side of steak; pound into steak. Repeat with other side. Brown pounded meat in a tablespoon of vegetable oil in a large electric skillet. When brown, remove steak from pan. Add onions, peppers, celery, and stir fry. Add tomatoes and mushrooms and simmer on low heat for 5 minutes. Cut steak into 4 to 6 equal sized pieces. Pour liquid into slow cooker. Add steak. Cook on low for 3 hours or until tender. Serve with rice, mashed potatoes, or noodles. This recipe yields 4 to 6 servings.
