MOREL MUSHROOM QUICHE WITH CARAMELIZED RED ONIONS



Morel Mushroom Quiche with Caramelized Red Onions image

1½ cups (210 grams) all-purpose flour
½ teaspoon salt
1/2 cup (100 grams) melted butter
8 tablespoons cold water
9 oz (250 grams) fresh morel mushrooms (brushed clean and sliced)
5 sprigs thyme
1 clove garlic (finely chopped)
1/4 + 1/8 cups (50 + 25 grams) butter
3 red onions (halved and sliced)
1.5 tablespoons apple cider vinegar
1 tablespoon sugar
4 large eggs
1¼ cups (3 dl) sour cream
⅜ cup (1 dl) full cream milk
1.5 teaspoon salt
Freshly ground pepper

Steps:

  • In a large bowl, mix all-purpose flour and salt.
  • Melt butter and pour it into the bowl together with water.
  • Mix all ingredients and knead the dough well. Let it rest in the fridge for 15-30 minutes.
  • Meanwhile, preheat the oven to 390 degrees Fahrenheit (200 degrees Celsius).
  • Roll out the quiche crust to fit the approximate measurements of your quiche pan. Place the crust on top of the quiche pan and with your hands, lightly press it into place.
  • Dock the chilled quiche crust all over with a fork to prevent the pastry from puffing up.
  • Prebake the quiche crust for 10-12 minutes. Remove from the oven and leave to cool.
  • Reduce the oven temperature to 350 degrees Fahrenheit (175 degrees Celsius).
  • In a frying pan over medium heat melt 1/4 cup (50 grams) of butter.
  • Add the morel mushrooms, garlic, and sprigs of thyme. Sauté over low heat for 10 minutes.
  • Remove the sprigs of thyme and season with salt and pepper and set aside.
  • On another frying pan over medium heat, melt 1/8 cup (25 grams) of butter. Add red onions, apple cider vinegar, and sugar and let it cook for 10 minutes, stirring occasionally.
  • Spread the caramelized red onions and the morels over the base of the quiche crust.
  • Break 4 large eggs into a large mixing bowl, add sour cream, full cream milk, salt, and pepper, and whisk well.
  • Carefully pour the egg and sour cream mixture over the caramelized red onions and morels.
  • Bake the quiche at 350 degrees Fahrenheit (175 degrees Celsius) for about 40 minutes.
  • Serve with a fresh salad.

1 (9 inch) deep dish frozen pie crust
1 (3 ounce) can bacon bits
½ cup chopped onion
5 ounces shredded Swiss cheese
3 ounces grated Parmesan cheese
4 eggs, lightly beaten
1 cup half-and-half cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place unthawed pie crust on a baking sheet. In a medium bowl, mix the bacon, onions, and both cheeses. Pour this mixture into the crust.
  • Mix the eggs and half and half in a bowl. Pour the egg mixture over the cheese mixture.
  • Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake for an additional 35 minutes, until top of quiche begins to turn brown.

1 sheet refrigerated pie crust
1/4 cup sliced green onions
1 tablespoon butter
6 large eggs
1-1/2 cups heavy whipping cream
1/4 cup unsweetened apple juice
1 pound sliced bacon, cooked and crumbled
1/8 teaspoon salt
1/8 teaspoon pepper
2 cups shredded Swiss cheese

Steps:

  • Preheat oven to 350°. Line a 9-in. pie plate with crust; trim and flute edges. Set aside. In a small skillet, saute green onions in butter until tender. , In a large bowl, whisk eggs, cream and juice. Stir in bacon, salt, pepper and green onions. Pour into crust; sprinkle with cheese., Bake until a knife inserted in the center comes out clean, 40-45 minutes. Let stand 10 minutes before cutting. Freeze option: Securely wrap individual portions of cooled quiche in parchment and foil; freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Unwrap quiche; reheat in oven until heated through and a thermometer inserted in center reads 165°.

This is so yummy. Has just the right amount of spice for us. Pretty easy to make too. I made it easier by cooking the bacon in the microwave. This is my version of Kimke's Bacon Green Chili Quiche. After the last couple of reviews I have stated the size of pie crust to use.

1 prepared 9 inch pie shell
10 slices bacon, cooked and crumbled
1 (10 ounce) can diced tomatoes with green chilies (Rotel, drained)
1 -2 green onion, chopped
1 cup cheddar cheese, graded (I used 4 Cheese Mexican blend)
1 cup milk or 1 cup half-and-half
6 eggs
kosher salt
white pepper

Steps:

  • Preheat oven to 400 degrees.
  • Bake pie crust for about 10 minutes or until lightly browned.
  • Sprinkle crumbled bacon, onions, Rotel and cheese over crust.
  • Whisk together the eggs and milk in a separate bowl.
  • Salt and pepper to taste.
  • Pour egg mixture into crust.
  • Bake until knife inserted into center comes out clean, about 45 minutes.

  • In a blender, combine the eggs, milk and butter. Add biscuit mix and pepper; cover and process for 15 seconds. Pour into a greased 9-in. pie plate.
