2 teaspoons paprika
1 Teaspoon dried oregano
1 teaspoon tumeric
1/2 Teaspoon garlic powder
1 1/2 teaspoons kosher salt, divided
1 lemon, juiced
12 lamb chops, about 4 pounds
1 teaspoon olive oil plus 1 tablespoon
1 zucchini, diced
1 small onion, peeled and diced
1 teaspoon coriander
1 teaspoon cinnamon
3/4 cup Water
2/3 cup whole wheat couscous
1/4 cup pine nuts
1/4 cup Golden raisins

Steps:

  • Preparation In a small bowl combine paprika, oregano, tumeric, garlic powder, 1/2 teaspoon salt and lemon juice and stir well. Pat lamb chops dry with a paper towel and place in a large resealable bag. Pour marinade into bag, seal and work around with your hands to cover lamb. Refrigerate for at least one hour or overnight. In a saucepan, heat 1 teaspoon olive oil. Add zucchini and onions and sauté 5 to 8 minutes or until onions are translucent. Stir in coriander and cinnamon and sauté 1 minute more. Add water and bring to a boil. Stir in couscous, pine nuts, raisins and remaining 1 teaspoon salt. Remove from heat and cover. Let sit 5 minutes and fluff with a fork before serving. To cook lamb chops, remove from refrigerator about 30 minutes before cooking. Heat a large skillet over medium-high heat and add 1 tablespoon olive oil. Add lamb and cook about 4 minutes per side for medium doneness.

2 oranges
20-24 black olives
1/2 cup finely chopped parsley
1/4-1/2 cup dried apricots
1 tsp honey
1 tsp ground cardamom
1 tsp ground cinnamon
1 tsp ground cumin
1 tsp ground coriander
1 tsp salt
2 tsps paprika
1/2 tsp ground allspice
1/2 tsp black pepper
1/4 tsp cayenne pepper
1/2 tsp caster sugar

Steps:

  • In a sealable bag put the lamb cutlets, ras-el-hanout, thyme, garlic and half the oil.
  • Seal the bag and massage well.
  • Set aside to marinade while preparing the salad.

¼ cup chopped fresh mint
2 tablespoons olive oil
2 tablespoons chopped fresh parsley
1 ½ teaspoons ground ginger
½ teaspoon ground allspice
½ teaspoon ground cinnamon
½ teaspoon ground black pepper
½ teaspoon ground paprika
½ teaspoon ground coriander
½ teaspoon salt
1 pinch cayenne pepper, or to taste
1 pinch ground cloves, or to taste
1 (8 bone) rack Lamb, domestic, rib, separable lean and fat, trimmed to 1/8" fat, choice, raw

Steps:

  • Combine mint, olive oil, parsley, ginger, allspice, cinnamon, pepper, paprika, coriander, salt, cayenne, and cloves in a small bowl until paste-like.
  • Place rack into a large glass or ceramic dish; rub herb paste all over the meat. Cover with plastic wrap and marinate in the refrigerator for 30 to 60 minutes.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Remove rack from the refrigerator and place in a heavy, oven-proof skillet with the meat side facing up.
  • Roast in the preheated oven until an instant-read thermometer inserted into the center reads 125 degrees F (51 degrees C) for rare or 130 degrees F (54 degrees C) for medium-rare, 20 to 25 minutes.
  • Remove from the oven and cover loosely with aluminum foil. Let stand for 5 to 10 minutes.
  • To serve, carve by cutting down between the ribs.

1 cup vegetable stock
1 pinch saffron thread
2 ounces dried apricots, roughly chopped
2 ounces dates, pitted and roughly chopped
2 ounces raisins
1 pinch chili powder, preferably Kashmiri chilli powder
2 tablespoons lemon oil or 2 tablespoons olive oil
1 lemon, juice of
14 ounces chickpeas, drained and rinsed
handful fresh mint leaves, roughly chopped
handful fresh coriander leaves, roughly chopped
2 1/2 ounces sliced almonds
salt and pepper

Steps:

  • Preheat oven to 400F/200C/400°F Put the couscous in an ovenproof dish. Mix the stock, saffron, apricots, dates and raisins in a saucepan and bring to the boil. Pour the hot stock and fruit over the couscous. Add just enough boiling water to cover the grains, but do not flood them. Set aside for 15 minutes.
  • Fluff up the couscous with a fork and season it with salt, pepper and chili powder to taste. Drizzle the lemon or olive oil and lemon juice over and add the chickpeas. Mix the ingredients well, then cover the dish.
  • Bake the couscous for 15 minutes. Fluff up the grains, stir in the mint and coriander and return the couscous to the oven for a further 5 minutes. Meanwhile, dry fry the almonds in a heavy based frying pan over a moderate heat, turning or stirring frequently for 5 minutes until they are golden. Scatter almonds over the couscous and serve immediately.

Lamb chops with fruity couscous & mint image

This Moroccan-style spiced lamb dish is simple enough to do on a weeknight, but also makes a great dish to serve to friends

Number Of Ingredients 10

4 lamb chops or leg steaks, trimmed
2 tsp smoked paprika
1 red onion , finely chopped
3 tbsp red wine vinegar
3 tbsp olive oil
200g couscous
5 tbsp pine nuts , toasted
8 dates , stoned and finely chopped
zest and juice 2 lemons
20g pack each mint and flat-leaf parsley , roughly chopped

Steps:

  • Place the lamb in a bowl. Sprinkle over the paprika, half the onion, 1 tbsp vinegar and ½ tbsp oil. Season, then set aside.
  • To make the couscous, boil the kettle and tip the couscous into a heatproof bowl. Stir in the pine nuts, dates, lemon zest and half the juice. Pour over 140ml just-boiled water, push the coucous to the sides of the bowl, cover, then leave to stand for 10 mins.
  • Heat grill to high. Lift the lamb out of its marinade, grill for 2-3 mins on each side, then rest, wrapped in foil, for 10 mins. Stir half the chopped herbs and some seasoning into the couscous, then add the remaining lemon juice to taste. Mix together the remaining herbs, red onion, vinegar, oil and seasoning to make a herby vinaigrette. Serve the lamb and couscous with the vinaigrette.

2 teaspoons minced garlic
2 teaspoons grated orange peel
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 1/2 teaspoons olive oil
6 3/4-inch-thick lamb rib chops

Steps:

  • Preheat oven to 500°F. Grind bread in processor to fine crumbs. Add garlic, orange peel, cumin and cayenne pepper. Drizzle in olive oil and blend until crumbs are evenly moistened. Transfer crumb mixture to plate. Sprinkle lamb chops with salt. Dip both sides of lamb chops into crumb mixture, pressing all crumbs into lamb. Arrange lamb chops on small baking sheet.
  • Bake lamb chops until crumb coating is golden and lamb is cooked to desired doneness, about 12 minutes for medium-rare. Serve immediately.

  • Preheat a char-grill or BBQ on a high heat.
