These creamy Middle Eastern-style potatoes are flavored with turmeric and use olive oil rather than butter. They are great alone, and for fillings in puff pastries. Amounts of salt, pepper, and other spices may be adjusted to taste.

10 large baking potatoes, peeled and cubed
3 tablespoons olive oil, or as needed
1 onion, diced
1 tablespoon ground turmeric
1 tablespoon salt, or to taste
2 teaspoons ground black pepper
½ teaspoon ground cumin

Steps:

  • Place the potatoes into a large pot, and fill with enough water to cover. Bring to a boil over medium-high heat, and cook until tender and can be pierced with a fork, about 20 minutes.
  • Meanwhile, place 1 tablespoon olive oil in a skillet, and heat over medium-high heat. Stir in the onion and cook until translucent and lightly browned, about 6 minutes.
  • Drain water from the potatoes, and mash. Stir in the onion, and continue mashing. Mix in the turmeric, salt, pepper, and cumin. Add the remaining 2 tablespoons olive oil, or amount desired to make the potatoes more or less creamy.

6 cloves garlic
salt to taste
2 teaspoons paprika
½ teaspoon ground cumin
¼ teaspoon ground cayenne pepper
¾ cup chopped fresh cilantro
¾ cup chopped parsley
1 lemon, juiced
3 tablespoons red wine vinegar
3 tablespoons olive oil
1 ½ pounds red potatoes, sliced 1/2 inch thick
1 large red bell pepper, cut into 1 inch pieces
1 yellow bell pepper, cut into 1 1/2 inch squares
1 large green bell pepper, cut into 1 1/2 inch pieces
4 stalks celery, cut into 2 inch pieces
1 pound tomatoes, each cut into 8 wedges
2 tablespoons olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine garlic, 1/2 teaspoon salt, paprika, cumin, and cayenne in a food processor bowl. Process until mixture forms a paste. Add herbs, and pulse a few times to blend. Add lemon juice, vinegar, and 2 to 3 tablespoons olive oil; blend. Season to taste with salt.
  • In a large bowl, combine potatoes, peppers, and celery. Season with salt, and toss with herb sauce. Transfer to a large shallow baking dish. Scatter tomatoes among the potato mixture. Drizzle 1 to 2 tablespoons oil over top, and cover with foil.
  • Bake for 35 minutes. Remove foil. Continue baking until vegetables are tender, 20 to 30 minutes. Serve warm.

Harissa, a spicy sauce popular in northern Africa, gives these potatoes a bit of a punch. I found Harissa with the ethnic items at Whole Foods, but you can also get it at African specialty markets or make your own with Recipe #10251.

1 1/2 teaspoons harissa
1 tablespoon olive oil
1/2 teaspoon coarse sea salt
1 -2 tablespoon sesame seeds
1/2-1 teaspoon fresh lemon juice

Steps:

  • Preheat oven to 375°F.
  • Peel potatoes and cut into large chunks. In small bowl, combine harissa, olive oil, salt, and sesame seeds.
  • Toss potatoes with with harissa mixture until evenly coated.
  • Spray baking sheet with non-stick cooking spray (or line with non-stick foil).
  • Arrange potatoes in single layer on baking sheet.
  • Bake 20-25 minutes, turn, and bake 15-20 minutes until potatoes tender and lightly browned.
  • Squeeze fresh lemon juice over potatoes and sprinkle with flaked sea salt.

1 tablespoon cumin seeds
1/2 lb Italian frying peppers, cut into 2- by 1/4-inch strips
1 large onion, halved lengthwise, then cut lengthwise into 1/4-inch-thick slices
3/4 lb boiling potatoes, peeled and thinly sliced crosswise
1/2 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons extra-virgin olive oil
4 Portuguese, challah, or kaiser rolls (about 4 inches in diameter)
Accompaniments: extra-virgin olive oil; harissa (spicy North African condiment) or cayenne (optional)

Steps:

  • Cover eggs with cold water by 1 1/2 inches in a 1 1/2- to 2-quart saucepan and bring to a rolling boil, partially covered. Reduce heat to low and cook eggs, covered, 30 seconds. Remove from heat and let eggs stand in hot water, covered, 15 minutes. Rinse eggs under cold water 5 minutes to stop cooking. Peel eggs and quarter lengthwise.
  • Meanwhile, toast cumin seeds in a dry 12-inch heavy skillet over moderate heat, stirring, until fragrant and a few shades darker, about 4 minutes. Transfer to a bowl to cool, then grind to a powder in grinder. Transfer to a small serving bowl.
  • Cook peppers, onion, potatoes, salt, and pepper in oil in same skillet over moderate heat, covered, stirring occasionally, until vegetables are browned and very tender, 15 to 20 minutes. Season with salt and pepper.
  • Cut off an end of each roll and pull out some of bread from center to form a wide deep pocket in each roll. Put 2 egg quarters in bottom of each pocket and fill with vegetable mixture. Top filling in each sandwich with 2 of remaining egg quarters and sprinkle with some of cumin.
  • Serve sandwiches with remaining cumin and oil and harissa for seasoning.

1 1/2 teaspoons ground cumin
1 teaspoon salt
1/4 teaspoon ground turmeric

1 1/2 pounds Yukon gold potatoes (about 4 potatoes)
2 tablespoons canola oil
1 small red onion, diced
2 cloves garlic, minced
3/4 cup golden raisins
Juice of 2 lemons
1/3 cup chopped fresh dill
Lemon zest, for garnish
Fresh mint, for garnish

Steps:

  • In a small bowl, combine the coriander, cumin, salt, turmeric, cinnamon, and paprika; set aside.
  • Place potatoes in a medium saucepan, cover with water, and bring to a simmer over high heat. Simmer until potatoes are tender, about 20 minutes. Drain, and run under cold water to stop the cooking process. Cut potatoes into 1/2-inch pieces.
  • Place the wok over high heat. Add 1 tablespoon canola oil; swirl to coat wok, and heat until just starting to smoke. Add the potatoes and reserved spices, and saute, stirring frequently, until potatoes just begin to brown, about 15 minutes. Add the remaining tablespoon of canola oil, red onion, and garlic, and continue to saute, stirring frequently until potatoes are golden, about 8 minutes more. Add the raisins, and stir to combine. Remove from heat; stir in the lemon juice and dill. Serve garnished with lemon zest and mint.

I decided to to make this with some potatoes I needed to cook, as well as some harissa I had and a huge bag of sesame seeds that begged using. It's quite enjoyable with just a little spiciness. Goes great plain, with more harissa, ketchup, or a little yogurt dip.

2 lbs potatoes, scrubbed (I used russets)
1 tablespoon harissa
2 tablespoons olive oil
1 1/2 teaspoons coarse sea salt (I used the coarse type)
1 tablespoon sesame seeds
1/4-1/2 lemon

Steps:

  • Preheat oven to 375F.
  • Peel the potatoes if you like, but as long as they are well scrubbed, they give a nice earthy taste if you leave them on.
  • Cut the potatoes into chunks about 1-inch large across.
  • Place the chunks into a bowl and add harissa and toss until potatoes are evenly coated.
  • Add olive oil and toss again.
  • Sprinkle potatoes with salt and sesame seeds and toss one more time.
  • Spread foil on a large baking sheet and oil lightly (foil helps with clean-up later).
  • Place seasoned potato chunks on baking sheet in a single layer.
  • Bake potatoes at 375F for 30 minutes, then using spatula, turn potatoes so that the other side can cook, and bake 15 minutes more or until potatoes are tender and deep golden.
  • Squeeze lemon over potatoes before serving.
  • Serve at once.

6 tablespoons vegetable oil
2 teaspoons whole cumin seeds
2 teaspoons black mustard seeds
2 tablespoons sesame seeds

1/8 to 1/4 teaspoon cayenne pepper
1 tablespoon fresh lemon juice

Steps:

  • Place potatoes in a large pot; cover with water by 2 inches and bring to a boil. Reduce toa low boil and cook until just tender when pierced with a knife, 15 to 20 minutes. Drain and let cool completely, 2 to 4 hours. Peel and cut into 3/4-inch cubes.
  • Heat oil in a large, heavy skillet (preferably cast iron or nonstick) over medium until shimmering. Add cumin, mustard, and sesame seeds; as soon as they begin to pop -- a matter of seconds -- add potatoes. Cook, stirring occasionally, 5 minutes.
  • Add 2 teaspoons salt, cayenne, and lemon juice. Cook, stirring occasionally, until potatoes are golden brown in spots and heated through, 20 to 30 minutes more. Serve warm, or store in an airtight container in refrigerator up to 2 days.
