This is a simple homemade tomato sauce and there is usually enough left for seconds. Just pop the leftover in the freezer. This sauce is also great for lasagna or terrific over your favorite pasta.

1 pound lean ground beef
1 onion, chopped
4 tablespoons chopped fresh parsley
7 tablespoons olive oil
1 (46 fluid ounce) can tomato juice
1 ½ (15 ounce) cans tomato sauce
2 teaspoons Worcestershire sauce
2 teaspoons salt
1 pinch ground black pepper
¼ teaspoon garlic salt

Steps:

  • In a large skillet cook ground beef with the chopped onions, parsley, and olive oil. Cook until onions are soft and ground beef is cooked through.
  • In a large saucepan, combine tomato juice, tomato sauce, Worcestershire sauce, salt, ground black pepper, and garlic. Add ground beef mixture and simmer for 1 hour.

1 pound Italian sausage
2 large onions, chopped
4 cloves garlic, pressed
5 large cans tomato paste
10 tomato paste cans water
4 tablespoons Parmesan
1 1/2 tablespoons salt
6 leaves fresh basil or 1 tablespoon dried basil
1 tablespoon dried oregano
1 teaspoon freshly ground black pepper
1/2 teaspoon Italian seasoning

Steps:

  • In a large saucepan over medium heat, saute the ground beef, pork and sausage until it is brown. Drain off excess fat. Add the remaining ingredients and stir until smooth. Cook for 3 to 4 hours on medium heat, stirring often to prevent scorching.

Nonna Consuelo (Kelly Ripa's Mother-In-Law) made an appearance on "Mom's Week" on LIVE with Kelly & Michael to show her authentic Italian Bolognese Sauce. I have made this many times, and I can't go back to any other recipe. This sauce freezes well; feel free to double or triple the recipe to make a big batch.

3 lbs ground beef
3 (28 ounce) cans crushed tomatoes with puree
1 large sweet onion
5 celery ribs
1 lb carrot
5 big garlic cloves
2/3 cup virgin olive oil
2 beef bouillon cubes
1/4 teaspoon ground black pepper
1 cup fresh basil or 3 tablespoons dried basil
1 tablespoon dried oregano
5 teaspoons sugar (or as needed depending on the acidity of the tomatoes)
1 (6 ounce) can tomato paste (optional)

Steps:

  • Brown, crumble and drain the meat. Set it aside.
  • Peel onion, carrots and celery. Cut them in small pieces and finely chop them in food processor to a puree consistency.
  • In a 10 quart non-stick pot pour the olive oil and cook the pureed vegetables for 10 minutes, stirring frequently, at medium heat.
  • Add the meat, the tomatoes, the bouillon cubes, the garlic, the pepper and the sugar to the cooked vegetables.
  • Cook at low heat for 10 minutes, stirring frequently.
  • Finely chop the basil and crush the oregano. Add them to the cooking sauce.
  • Cook the sauce for an additional 1½ hours. Add the can of tomato paste to thicken sauce, if needed.
  • Remove the garlic, put it on a small dish and crush it into a puree consistency using a fork. Put it back in the sauce, stirring thoroughly.
  • Cook sauce for 5 more minutes.
  • **Note: Generally, the sauce is done when the garlic is soft.

2 (28 ounce) cans plum tomato puree
½ pound hot Italian sausage, sliced into bite-sized pieces
½ pound mild Italian sausage, sliced into bite-sized pieces
2 pounds ground chuck
salt to taste

1 large onion, diced
3 cloves garlic, diced
1 ½ cups water
1 (12 ounce) can tomato paste
¼ cup grated Parmesan cheese
1 tablespoon dried basil, or to taste
1 tablespoon dried oregano, or to taste

Steps:

  • Heat tomato puree in a large pot over medium-low heat; simmer while prepared the remaining ingredients.
  • Heat a skillet over medium heat; cook and stir hot Italian sausage, mild Italian sausage, and ground chuck until browned and cooked through, 10 to 15 minutes. Season with salt and pepper. Remove cooked sausage and chuck with a slotted spoon and transfer to the simmering tomato puree.
  • Cook and stir onion and garlic in the same skillet used for browning meat until onions are lightly browned, 5 to 8 minutes. Transfer onion mixture to meat mixture.
  • Stir water and tomato paste in the same skillet used for onion mixture over low heat until slightly thickened, about 15 minutes; add to the sauce in the pot. Sprinkle Parmesan cheese, basil, oregano, and parsley over the sauce; stir to combine. Simmer over low heat, stirring occasionally, for 3 hours.

1 medium onion, chopped
1 medium green pepper, chopped
8 to 10 fresh mushrooms, sliced
3 celery ribs, chopped

2 cans (14-1/2 ounces each) Italian stewed tomatoes
1 jar (26 ounces) spaghetti sauce
1/2 cup ketchup
2 teaspoons brown sugar
1 teaspoon sugar

1 teaspoon dried oregano
1 teaspoon chili powder
1 teaspoon prepared mustard
Hot cooked spaghetti

Steps:

  • In a large skillet, cook the beef, onion, green pepper, mushrooms and celery over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. , In a 3-qt. slow cooker, combine the tomatoes, spaghetti sauce, ketchup, sugars, salt, oregano, chili powder and mustard. Stir in the beef mixture. 4 cups milk
½ teaspoon minced garlic
½ teaspoon minced onion
1 tablespoon cornstarch
1 tablespoon cold water

Steps:

  • In a medium saucepan, bring butter, milk, minced garlic, and minced onion to a low boil, stirring frequently. Dissolve cornstarch in 1 tablespoon water and whisk into milk mixture. Continue stirring vigorously until desired thickness.
  • When milk mixture is thick enough, tear cheese slices into pieces and slowly stir them into the sauce, melting gradually, until desired cheesiness. Serve over your favorite pasta, vegetable, or side dish.

My Mother In-law's Recipe three generations old. Serve with pasta, over stuffed peppers, over backed ziti or manicotti uses are limitless. I like to freeze mine in three cup plastic containers for use whenever I want it. One serving is 1/2 a cup of sauce you may use more or less as you desire. This is a low fat low calorie option depending on what you have going with it.

1/2 large onion
2 garlic cloves
3 (28 ounce) cans whole tomatoes
1 (6 ounce) can tomato paste
1 tablespoon dried parsley
1/2 tablespoon dried oregano
1/2 tablespoon dried basil
1/2 teaspoon sugar
1/2 teaspoon seasoning salt
black pepper
2 tablespoons olive oil
1/2 cup white wine
3 lbs mild Italian sausage (optional) or 3 lbs sweet Italian sausage links (optional)
2 lbs ground turkey (optional)

Steps:

  • Use one big pot-- I did not add the meatballs or sausage so that the calories etc. would not be counted.
  • However, If you want to add Italian sausage and meatballs, then go to the bottom first.
  • If you did the meatballs etc, then add the onions after you are done, if not add a little olive oil to the pan and add the onions.
  • Cook on med-high till soft, add the garlic chopped up and cook for one minute, add the white wine to deglaze the pan and scrape any brown bits off the bottom of the pot.
  • Add the tomatoes crushing them up slightly with your hand to help break them up.
  • Add the tomato paste.
  • Take a boat motor blender and puree for about one minute till almost smooth.
  • Add all the spices and bring to boil.
  • Add one tomato can's worth of water and add back in the sausage and meatballs if you are doing them.
  • Cook for two to three hours on low with the top of the pot partially on to let the sauce cook down (get rid of the water you added essentially).
  • Serve with pasta, over stuffed peppers, over backed ziti or manicotti uses are limitless.
  • I like to freeze mine in three cup plastic containers for use whenever I want it.
  • One serving is half a cup of sauce you may use more or less as you desire.
  • Meatballs and Sausage here goes:.
  • Take Italian sausage and divide into one pound and two pounds.
  • Take the casing off all of it, and shape the two pounds into one x two inch rolls.
  • Take the one pound of Italian sausage and two pounds of ground turkey and add two eggs, 2 tbsp of milk, 1/2 cup bread crumbs, 1/2 cup grated Parmesan or Romano cheese and mix well.
  • Shape into Meatballs.
  • Brown the sausage in a little olive oil, and then the meatballs.
  • Do not cook all the way through!
  • Set aside.
