MOTHER'S ROLLS

- In a large bowl, dissolve yeast in warm water. Add the milk, sugar, shortening, egg, salt and 3 cups flour. Beat on medium speed until mixture has a spongy texture. Let stand for 10 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide into 3 portions. Let rest for 5 minutes. Divide each portion into 36 pieces. Shape each piece into a ball; place 3 balls in each greased muffin cup., Cover and let rise until almost doubled, about 30 minutes. Bake at 375° until golden brown, 12-15 minutes. Remove from pans to wire racks. Serve warm.

MOM'S SAUSAGE ROLL
Mom's Sausage Roll is a great appetizer during the holidays or anytime. You may slice it and eat it right out of the oven, or you may serve it cooled. Give it away as gifts during the holidays by packaging the rolls in colored aluminum foil.

- Thaw the frozen bread dough.
- Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
- In a large skillet over medium heat, rapidly cook and stir the eggs until solid. Remove from heat and set aside.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
- One loaf at a time on a lightly floured surface, roll the bread dough into a sheet approximately 1/4 inch or less thick. Spread 1/3 of the sausage, 1/3 of the eggs, 1/3 of the pepperoni and 1/3 of the Provolone cheese evenly over each dough sheet. Roll into a loaf.
- One at a time, place rolled loaves into the prepared baking dish, brush with 1/3 of the beaten egg mixture and bake in the preheated oven 30 to 45 minutes, until golden brown. If desired, form loaves into a U shape before baking.

MOTHER'S FAMOUS CHINESE EGG ROLLS RECIPE RECIPE - (4.7/5)

- To make the filling, combine the ingredients for the ground pork together. Marinate at least 10 minutes. In the meantime, shred the cabbage and the carrots using your food processor or by hand. Slice the mushrooms into very thin strips (or you could use your food processer and pulse a few times to get a fine dice. Heat a wok or large saute pan over high heat. Add the cooking oil and swirl to coat. Add the pork and stir-fry until no longer pink, about 2-3 minutes. Drain the fat and turn heat to medium-low, push the meat to one side of the pan. Add the garlic, cabbage, carrots, ginger and the mushrooms and stir-fry for 1 minute, until the vegetables are softened. Add the rice wine, soy sauce, sugar, sesame oil and black pepper. Continue to stir-fry for another minute. Scoop out the filling to a baking sheet and spread out to cool. Prop up one end of the baking sheet so that it tilts and will allow all the moisture to drain to one end. Let cool for 15 minutes. Discard all of the accumulated juices. Use paper towels to blot the filling to rid of extra oil or juice. Now, you're ready to wrap (see photos for instructions on how to wrap). IMPORTANT: Only use 1 heaping tablespoon of filling for each egg roll. These are slender egg rolls, the width of the egg roll should only be 1.25" diameter. Keep the rolled egg rolls in neat, single layer and covered with plastic wrap to prevent drying. If you want to stack the egg rolls, make sure you have layer of parchment paper in between the layers to prevent sticking. Keep wrappers also covered with plastic wrap to prevent drying. Refrigerate up to 4 hours until ready to fry or freeze. To fry the egg rolls, fill a wok or pot with 2 inches of high-heat cooking oil. Heat the oil to 350°F (175°C) or until a cube of bread will fry to golden brown within 10 seconds. Gently slide in or lower the egg rolls, frying 4 to 6 at a time, turning occasionally until golden brown about 1½ minutes. Place on wire rack to drain and cool. NOTE: To fry frozen egg rolls, do not defrost the egg rolls - just add them to the oil frozen, frying 4 to 6 at a time. Add an additional 1½ minutes to the frying time since they are frozen.
HAM AND CHEESE ROLLS

- Slice top half off rolls while rolls are still attached to each other.
- Set aside top half.
- Layer bottom half with ham, then with cheese, covering to edges.
- Replace top half and place on cutting board.
- Using sharp knife, slice down through individual rolls.
- Place in glass baking just large enough to hold both packages without crowding together.
- Melt the stick of margarine in saucepan; add poppy seed, Worcestershire sauce, prepared mustard, and onion flakes.
- Stir and pour over top of rolls.
- Bake at 350 degrees for 20 minutes.

HAM BUNS
Jennifer Owens doesn't know where her mother, Frances, first found the recipe for these ham buns, but they have been a part of her life since childhood in Easley, S.C. It may have come from relatives in Tennessee, as a similar recipe appears as "Hallelujah Ham Loaves" in "Dinner on the Diner," a 1983 cookbook from the Junior League of Chattanooga. The warm appetizer has won fans wherever Ms. Owens goes. Her mother's original formula called for raw onions, but Ms. Owens now sautés them. Use good smoked ham, either holiday leftovers or from the deli counter. As the buns bake, the butter pools at the bottom, toasting up the base of these irresistible bite-size sandwiches.

- Position racks in top and bottom thirds of the oven and heat oven to 400 degrees.
- Melt 1 tablespoon butter in a large skillet over medium heat and cook onion, stirring occasionally, until translucent, 8 to 10 minutes.
- As the onion cooks, split each flat of rolls in half, running a bread knife parallel to the counter as you slice the still-connected rolls. Once the onion has finished cooking, remove from heat and set aside. Place two sheet pans in the oven, one on each rack, to heat while assembling the rolls.
- In a large mixing bowl, combine mustard, poppy seeds and Worcestershire sauce. Add the remaining cup of butter and warm onion. Stir in cheese and ham until evenly combined.
- On a sheet of aluminum foil large enough to completely encase a flat of rolls, place one flat, and open like a book. Spread about a quarter of the ham mixture in an even layer over the bottom half of the rolls to the edges. Close the book, so to speak, laying the still-connected roll top over the ham-covered base. Wrap the rolls tightly with the foil, crimping the edges of the foil to enclose them. Repeat with the three other flats of party rolls.
- Divide the four packets between the two heated sheet pans. Bake until the cheese melts and rolls get toasty, 10 to 12 minutes. Unwrap and serve the flats on platters, encouraging diners to pull a bun from its brethren.
SAVORY HAM AND CHEESE BREAKFAST ROLLS RECIPE BY TASTY
Not sure what to do with all that leftover Easter ham? Make savory breakfast rolls-think cinnamon rolls, full of meat and melty cheese instead of the sweet filling-for the next morning! We use fresh pizza dough to keep this recipe super simple and easy, but canned crescent roll dough works great too.

- Preheat the oven to 400°F (200°C). Grease an 8-inch round baking dish with nonstick spray.
- On a lightly floured surface, roll out the pizza dough to a rough 8 x 12-inch rectangle.
- Spread the mustard over the dough in an even layer, then sprinkle with 1 tablespoon of everything bagel seasoning. Top with the cheddar and Swiss cheeses and ham.
- Starting from a long edge, tightly roll the dough into a log. Cut the log crosswise into 8 even pieces. Transfer the rolls to the prepared baking dish.
- Bake for 25 to 30 minutes, until golden brown.
- In a small bowl, whisk together the melted butter, honey, and remaining 1 teaspoon everything but the bagel seasoning.
- Remove the rolls from the oven and brush the butter mixture over the tops. Garnish with the chives, if using. Let cool for 5-10 minutes before serving.

I found a delightful little box in my bottom turnaround, it was labeled recipes. I sifted through and separated all the hand written ones. This one is for ham rolls--looks easy enough to make. I'll report back when I've made it.
