ROASTED MINI SWEET PEPPERS
Mini sweet peppers are tossed with olive oil, garlic, and Parmesan, then roasted until tender.

- Preheat your oven to 400 degrees F. Line a large rimmed baking sheet with foil.
- Cut the mini peppers in half lengthwise. I usually leave the stem as I think it's pretty - but you can cut it off if you wish. The larger mini peppers might have some seeds and membranes - remove those with your fingers or with a paring knife.
- Place the peppers in a large bowl. Toss them with the olive oil, salt, pepper, garlic powder, oregano, and Parmesan.
- Arrange the seasoned mini peppers in a single layer on the prepared baking sheet.
- Bake them until tender, about 20 minutes. Serve immediately.

MOZZARELLA STUFFED SWEET MINI PEPPERS

- Stuff mini peppers with smoked mozzarella and basil: Working one pepper at a time, place flat side down in a way that is most stable for the pepper. With a small sharp knife, cut a 2 1/2 inch slit down the middle on the top of the pepper. If there is a seed pod, scoop it out with a spoon. Stuff the pepper with a basil leaf wrapped mozzarella stick. When you have stuffed all the peppers, brush them on all sides with olive oil. Drizzle balsamic vinegar in the cut openings.
- Cook on grill, in oven, or under broiler: Preheat grill, oven, or broiler for high direct heat (if oven, set to 400°F). If grilling, grill covered, cut side up on high direct heat until you have grill marks, then lower the heat to medium until the cheese is melted and the peppers have begun to soften, about 5 to 10 minutes. If broiling or baking, place on a roasting pan and cook until the cheese is melted and peppers have browned and softened, about 5 to 10 minutes. Sprinkle with salt to taste. Let rest for a few minutes before serving.

I came up with this recipe after finding a BIG bag of the mini sweet peppers on sale. I needed to find ways to use them up, and decided a mini stuffed pepper might be cute! Well, they ARE cute, and tasty too! These make a colorful side dish, or a great little party appetizer.

- Cut off stem ends of peppers, cut in half length-wise and de-seed.
- Mix together cheeses, spinach and salt/pepper.
- Spoon the cheese mixture evenly into the pepper halves. Bake in 375 oven for about 20 min. until bubbly.
