MRS. B'S TRADITIONAL HOMEMADE POTATO SALAD
Summertime came with Mrs. B's potato salad in tow and it brings back warm, fuzzy memories of younger days and good times. Hope this recipe will recreate the same for you!

Steps:
- Boil potatoes, drain and slice or quarter to liking.
- In a large mixing bowl, place potatoes and add grated onion.
- Add mayo, oil, milk, vinegar and toss over potatoes coating well.
- Salt and pepper to taste and refrigerate overnight.
- Arrange lettuce on serving platter and mound on the salad and serve!

PERFECT POTATO SALAD

Steps:
- Cut the potatoes in halves or thirds, then boil until fork tender. Drain. Mash the potatoes or run them through a ricer or food mill to make them extra fluffy.
- Fold the potatoes together with the mayonnaise, mustard, green onions, dill, salt, pepper, paprika and other seasonings you like. Fold in the pickles, pickle juice and eggs, and taste for seasoning. Add more salt, mustard or mayo as needed.
MRS. ROCKEY'S SECRET POTATO SALAD
The late, great culinary genius James Beard once labeled this particular recipe as his favorite potato salad. It was a "secret" family recipe of a lady whom he had encountered along his endless gastronomical sojourns -- and, after much prodding by Beard, one of the family members finally elected to let the rest of the world enjoy it too. This potato salad falls into an old fashioned (but good!) category by utilizing a type of "boiled dressing". Often, such dishes were served hot (like German potato salad) but I like this one because it is served cold, which is my personal preference. I decided to save the recipe here so that I wouldn't lose it.

- Boil the potatoes unpeeled. When they are just fork tender (not too soft!), peel and slice them (or, leave them unpeeled if you wish) while they are still fairly hot. Place them in a large mixing bowl and set aside, covered (so they'll stay warm while you make the dressing, etc.).
- In a small pan, bring the vinegar to the boiling point.
- In a mixing bowl, SLOWLY whisk the vinegar into the beaten eggs. Don't pour the hot vinegar in too fast or the eggs will scramble a bit.
- In a double boiler, over medium heat, pour in the egg-vinegar mix and whisk until the blend thickens some, then whisk in the butter and allow to cook for one minute.
- Next, stir in the cream (pre-warmed to about 100 degrees F.), TWO tablespoons of the parsley, the onion, and the seasonings.
- When the mix is well-blended, pour it over the sliced potatoes and carefully mix the dressing with the potatoes -- I use a big spatula for this.
- Allow to cool a bit and sprinkle remaining parsley over the top. Refrigerate and serve cold.

MAMABEAR'S POTATO SALAD
This potato salad is served at every BBQ, it's a family favorite passed down from my mother. It is time-consuming but worth it...make it a day ahead for best flavor.

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and let potatoes cool.
- Place eggs in a saucepan and cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 15 minutes. Remove eggs from hot water, cool under cold running water, and peel. Dice the eggs when cool.
- Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. When cooled, crumble and set aside.
- Dice potatoes into a large salad bowl and mix with crumbled bacon, diced eggs, and salad dressing. Sprinkle top of salad with shredded Cheddar cheese, and mix the salad thoroughly. Season with black pepper. For best flavor, chill salad overnight.

BEST CLASSIC POTATO SALAD
Creamy, tangy, and crunchy, with a hint of spice and sweetness from pickles, this reminds me of my grandmother's potato salad served every Easter or any time we had barbecue. She always dotted it with olives for a finishing touch and a perfect briny addition. This is the best classic version of good old-fashioned, Southern-style potato salad. Not too mayonaissey with just the right amount of tang! Serve with grilled or smoked meats as the perfect side dish.

- Cut potatoes into 1 1/2-inch pieces. Place in a large pot and add water to cover by 2 inches. Add 3 teaspoons salt and eggs; bring to a boil over medium-high heat.
- Reduce heat and simmer 9 minutes. Remove eggs to an ice bath. Drain potatoes when fork-tender; they may need another minute or so.
- Peel and chop eggs and set aside.
- Combine mayonnaise, sour cream, mustard, onions, celery, dill, pickles, juice and pepper in a large bowl; stir to combine. Stir in potatoes and eggs until well blended, mashing potatoes very slightly. Check for seasoning and add up to 1 teaspoon salt if desired.
- Transfer to a serving bowl, sprinkle with paprika, and garnish with olives. Cover and refrigerate at least 2 hours or overnight.
