1/2 c Sugar
1 c Dark brown sugar packed
1/2 ts Baking soda
1/4 ts Salt
1 c Salted butter soft
2 lg Eggs
2 ts Pure vanilla extract
1 tb Ground cinnamon
3 tb Sugar

Steps:

  • Preheat oven to 300~F. In a small bowl combine sugar and cinnamon for topping. Set aside. In a medium bowl combine flour, soda and salt. Mix well with a wire whisk and set aside In a large bowl blend sugars with an electric mixer set at medium speed. Add the butter and mix to form a grainy paste. Scrape sides of bowl, then add eggs and vanilla extract. Mix at medium speed until light annd fluffy. Add the flour mixture and blend at low speed just until combined. DO NOT OVERMIX. Shape dough into 1-inch balls and roll each ball in cinnamon-sugar topping. Place on ungreased cookie sheets, 2 inches apart. Bake for 18-20 minutes. 2 1/2 c Flour
1/2 ts Baking soda

Given to me my a friend, who knows a friend, etc........way back in 1987. The grinding of the oatmeal is critical. Bake these cookies on the second level from the bottom of the oven.

1 cup butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 tablespoon vanilla extract
2 ½ cups rolled oats
2 cups all-purpose flour
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
12 ounces semisweet chocolate chips
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (180 degrees C). Grease cookie sheets or line with parchment paper.
  • Cream butter, sugars, eggs and vanilla until very smooth and fluffy.
  • In a separate bowl, mix together flour, salt, baking powder, and baking soda. In a food processor, blend oatmeal until fine. Add to flour mixture.
  • Stir butter mixture into flour/oatmeal mixture. Blend well.
  • Add chocolate chips and walnuts. Stir until blended. Roll into golf balls size and bake for 8-10 minutes. You do not want to over bake these.

2 cups all-purpose flour
¼ teaspoon salt
¾ cup white sugar
1 egg
1 teaspoon vanilla extract
¼ cup colored sugar for decoration
¾ cup butter

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a medium bowl combine the flour and salt with a wire whisk. In a large mixing bowl cream the butter and sugar with an electric mixer on medium speed. Add the egg and vanilla, and beat until well blended. Scrape down sides of bowl, then add the flour mixture. Blend on low speed just until combined. Do not overmix.
  • Gather dough into a ball. Flatten the ball into a disk and wrap tightly in plastic wrap or a plastic bag. Refrigerate one hour until firm.
  • On a floured surface, roll out dough to a 1/4 inch thickness. With cookie cutters, cut dough into desired shapes and place on ungreased cookie sheets. Decorate with colored sugars or sprinkles. Bake for 13-15 minutes, being careful not to brown. Immediately transfer cookies with a spatula to a cool, flat surface.

2 cups butter
2 cups sugar
2 cups packed brown sugar
4 large eggs
2 tablespoons vanilla
4 cups flour
5 cups oatmeal (put in blender and make into flour)
1 teaspoon salt
4 teaspoons baking powder
4 teaspoons baking soda
2 (12 ounce) bags chocolate chips
8 ounces Hershey Bars, grated
3 cups nuts, any kind of nuts (optional)

Steps:

  • Cream together butter, sugar and brown sugar.
  • Add eggs and vanilla and mix well.
  • Mix together flour, oat flour, salt, baking powder and baking soda.
  • Stir in chocolate chips, grated Hershey bar and nuts (if using).
  • Drop by 1 1/2" balls onto ungreased cookie sheet.
  • Bake at 375° for 6-10 minutes.
  • NOTE: If you want your cookies to spread out a bit more, flatten them a bit before baking.
  • Cookies will be soft but will firm up a bit after cooling.
