AWARD WINNING CHILI
This delicious chili took 2nd place at our local chili cook-off! Bet you can't eat just one bowl. If it is too thick, add water 1/4 cup at a time until you reach desired consistency. Even better tasting the second day!

Steps:
- In a large pot over medium-low heat, combine tomatoes, tomato paste, carrot, onion, celery, wine, pepper flakes, bell peppers and steak sauce.
- While tomato mixture is simmering, in a large skillet over medium heat, cook bacon until crisp. Remove to paper towels. Cook beef in bacon drippings until brown; drain. Stir chili seasoning into ground beef.
- Stir seasoned beef, cumin and bacon into tomato mixture. Continue to simmer until vegetables are tender and flavors are well blended.
- Stir in beans, cilantro and parsley. Heat through and serve.

MELANIE'S CHILI
This chili is so easy to make and is so good! Trust me. To make a double batch, double everything except the meat and onion. Use 1 can each of pinto and kidney beans, that is how I normally make it.

Steps:
- In a large saucepan over medium-high heat, cook beef and onion until meat is no longer pink. Stir in tomatoes, tomato sauce, beans, chili powder, cumin, cayenne and garlic. Cover, reduce heat and simmer 20 minutes.

Steps:
- lb. ground beef (I know it's a lot, but you can add/take away as much as you want- it freezes well when fully cooked.).
- 1/3 diced white onion (or a sprinkling of dried diced onions- again, your own desired amount.).
- Salt and pepper as needed.
- - cook your meat thoroughly- no pink- and onions should be translucent.
- 1 can kidney beans - drained and rinsed.
- 1 can black beans - drained and rinsed.
- 1 can garbanzo beans - drained and rinsed.
- 2-3 cans of Diced/Stewed tomatoes - Your choice.
- - simmer until tomatoes breakdown, sauce builds up (you can add a cup of water if you want it jucier).
- Add dashes of Chili powder until desired spiciness.
- Add splashes of Lea & Perrins Worchester Sauce until desired umph!
- 1 sliced celery stalk.
- Simmer unil hot and serve with your cornbread!
- I have prepared my cornbread while I brown the meat for the chili and then while the cornbread is baking, it allows enough time for the tomatoes to simmer down. Usually the Chili is done by the time the cornbread is done. Easy, huh? No one should EVER ask me to write a cookbook!
