1/4 cup chopped fresh cilantro leaves
1 serrano chile, seeded, deveined and finely chopped
1 lime, juiced
1/2 white onion, chopped
Kosher salt
Tortilla chips or fresh veggies, for serving

Steps:

  • In a medium mixing bowl, add the diced avocados and mash with a fork until smooth but still chunky. Add the cilantro, chile, lime juice and onion and mix to combine. Season with salt. Serve with tortilla chips or fresh veggies, etc.

Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.

We think we've cracked the code to Chipotle's famous guacamole. The secret--using equal parts fresh lemon and lime juice - adds just enough brightness and tang. If you're feeling fancy, go all out and add a couple tablespoons of diced tomatoes.

3 ripe avocados
2 teaspoons fresh lemon juice
2 teaspoons fresh lime juice
Kosher salt
2 tablespoons chopped fresh cilantro
2 tablespoons finely chopped red onion
1 to 2 teaspoons finely chopped seeded jalapeno (see Cook's Note)

Steps:

  • Mash together the avocado, lemon juice, lime juice and 1 1/2 teaspoons salt in a mixing bowl until creamy. Fold in the cilantro, red onion and jalapeno with a spoon or spatula. Adjust the salt if needed.
  • The guacamole can be made up to 2 hours in advance. Store in an airtight container and smooth a sheet of plastic wrap on the surface without any air pockets. Refrigerate until ready to serve.

1 whole head garlic
Olive oil
1 medium red onion, diced
A few pinches kosher salt
1/4 teaspoon finely minced habanero or Scotch bonnet pepper (see Cook's Note)
2 large tomatoes, quartered, pulp and seeds removed, rolled up in double layer of paper towels, gently squeezed, paper removed, and coarsely diced
1 teaspoon ground cumin
2 moderately ripe Hass avocados
2 fresh limes, juiced
1/2 cup coarsely chopped cilantro leaves
Salsa and chips, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Wrap the garlic head in aluminum foil, and put it in the oven until soft, about 30 minutes. Let garlic cool to the touch then snip off the tip of bulb or pierce cloves with knife, and squeeze the pulp into a large bowl (like frosting through a pastry bag, peel away any loose papery husk so as not to get it into the flesh).
  • In the meantime, heat 1/2 teaspoon olive oil in a saute pan over medium-high heat. Add the red onion and a little salt and cook until just softened and the sharp flavor is gone, about 3 to 5 minutes. Add the cooked onion to the bowl with the garlic and add the minced hot pepper, pinch of salt, diced tomatoes, and cumin; gently toss. Halve and pit the avocados with a knife. Then score the flesh in 1/4-inch cross sections. Try not to puncture the avocado skin and cut yourself. Scoop out the flesh and add it to the bowl and immediately add 1/2 of the lime juice along with chopped cilantro; gently stir and taste. If not acidic enough add more lime juice, follow suit with additional salt, cumin or hot pepper. Serve with salsa and chips; it's also great with roasted chicken and steak.
  • Cook's Note: I prefer to mince the hot peppers with the seeds. Clearly this makes for a lot more heat. It's best to add it to the guacamole a little bit at a time to get to desired heat, which is important. You can always add more heat but you can't take it away.

3 medium avocados - peeled, pitted, and mashed (one pit reserved)
2 tablespoons finely chopped onion
¼ cup chopped roma tomatoes
1 (14.5 ounce) can whole peeled tomatoes
1 ½ cups chopped fresh cilantro
2 pinches garlic powder, or to taste
salt to taste
1 lime, juiced

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Arrange chile peppers on a baking sheet.
  • Toast chile peppers in the preheated until browned, about 7 minutes. Remove stems.
  • Mix avocados, onion, and roma tomatoes together in a bowl.
  • Blend canned tomatoes, cilantro, toasted chile peppers, garlic powder, and salt in a blender until smooth. Pour about half the blended tomato mixture into avocado mixture. Reserve remaining tomato mixture for another use or for dipping.
  • Squeeze lime juice into avocado mixture and gently stir until evenly combined. Transfer guacamole to a smaller serving bowl; place reserved avocado pit in the middle to prevent browning.

2 tablespoons lime juice
1/2 teaspoon salt
1 medium red tomato, peeled, seeded and chopped

Steps:

  • Roast the poblano chilies under a broiler, turning as they get charred. Place them in a closed plastic bag to steam for five minutes. Peel off their skins under cold running water.
  • Split the chilies lengthwise and remove stems and seeds. Place them in a blender or food processor along with the avocados, lime juice and salt and pulse until smooth. Pour into a bowl and stir in the salt and tomatoes. Adjust seasoning. Serve immediately.

Guacamole should be made by hand, preferably in a molcajete, a mortar made from volcanic rock. A food processor or blender won't give you the proper chunky texture.

1 clove garlic
2 serrano chilies, stemmed
1 small tomato, chopped
2 large ripe avocados, preferably Hass
2 tablespoons coarsely chopped cilantro
Salt

Steps:

  • If using a molcajete, grind garlic and chiles to a paste. Grind part of tomato to a paste, or reserve all of it to fold in at the end. If you don't have a molcajete, chop garlic and chiles finely, then proceed using a bowl and fork.
  • Cut avocados in half and peel. Remove pit by inserting the blade of a knife into pit and twisting. Mash avocados into chile mixture, leaving some texture. Add salt to taste. Stir in cilantro and tomato, reserving a little of each for garnish. Serve immediately.
