MY MOM'S HAMBURGER AND POTATO SOUP
This potato soup with hamburger is a comforting, warm soup that is great for a chilly winter day, or anytime you want a yummy, easy soup! Serve with crusty bread.

Steps:
- Combine potatoes, carrots, onion, celery, garlic, parsley, basil, bouillon, salt, and pepper in a large soup pot. Fill pot with enough water to cover ingredients. Cover and boil until all ingredients begin to soften, 15 to 20 minutes. Remove from heat so you do not burn your hands.
- Crumble in uncooked ground beef, a little at a time, stirring to mix a few times. Return to heat and bring back to a boil. Simmer on low to medium heat until all vegetables are cooked through and meat is no longer pink, 15 to 20 minutes.

- In a medium skillet, brown hamburger over medium heat. Drain off fat.
- Combine beef, carrots, celery, onions, bouillon, water, tomato sauce, chopped tomatoes, salt, corn, basil, and ketchup in a large stock pot. Bring to a boil. Reduce heat, and simmer for at least 1 1/2 hours.

MOM'S HAMBURGER SOUP
I made a pot of Mom's Hamburger Soup this afternoon which is really smelling and tasting good. And I just emailed my daughter and asked her to bring home some crusty rolls from Panera's to have with it. This is a thick and hearty soup -- perfect for dunking the bread. It's cold outside, so this will be great for supper tonight. Since it's one of those recipes that isn't written down, I decided to post it while everything is fresh on my mind. Mom always used spaghetti, but I think it gets too mushy when the soup is warmed up for the 2nd or 3rd time. And she didn't use the steak seasoning, but to me it seems to lift the taste of the meat and tomatoes.

Steps:
- Use 8 quart stock pot.
- Combine first 4 ingredients and cook together until hamburger is loose and no longer pink. Do not overcook. Drain off grease and return meat mixture to the stock pot.
- Add the diced tomatoes, tomato juice and steak seasoning to the meat mixture; simmer on low heat for 30 minutes. Stir after 15 minutes.
- Add the frozen mixed vegetables; simmer on low heat for 60 minutes, stirring every 15 minutes.
- Add the rice and 2 C water; continue to simmer for about 60 minutes stirring frequently. Add additional water if soup is too thick.

This is a recipe I always want whenever I am sick or have a cold. It always reminds me of my childhood. Don't be put off by the long list of ingredients. It is very easy to make, and so yummy!

- In a large pot (Dutch oven), place diced onions, garlic and hamburger. Stir and cook until done. Drain off the majority of the fat from the pot.
- Add canned tomatoes, tomato soup, chick peas, kidney beans, lentils, barley, vegetables and seasoning. Add approx 2 cups of water, to thin out soup a little.
- Bring to a boil, and then simmer for approx 1 hour, or until barley and lentils have softened.
- Dish soup into bowls and top with small amount of grated cheese.

- Combine the beef, carrots, and Italian herb seasoning in a 12-inch nonstick skillet over medium-high heat. Cook, stirring to break up the beef, until is is just cooked through, about 6 minutes.
- Put the cooked beef mixture in a 3-quart or larger slow cooker. Stir in the water, bouillon mixture, vegetable juice, onions bay leaves, sugar, 1/4 teaspoon garlic salt, pepper, and pasta. Stir in the frozen vegetable medley and green beans. (The liquid may not cover all the vegetables at this point.).
- Cover the cooker, and turn on the high setting for at least 30 and preferably 45 minutes. Turn to the low setting and cook for at least 5 hours and up to 10 hours. Thin the soup with a little hot water before serving, if desired. Taste and add more garlic salt, if desired.
- Discard the bay leaves as the soup is served.

- Mom also likes to throw in her favorite seasonings too, if desired, to the hamburger mixture as it browns. Brown hamburger with the onion.
- In a casserole dish, combine hamburger/onion mixture, tomato soup and green beans.
- Mix together .
- Top the whole dish with prepared mashed potatoes.
- Bake uncovered for 30 minutes at 350 degrees Fahrenheit.
- (Note: Mom actually never used instant potatoes. She made extra real mashed potatoes for dinner a day ahead and used those planned-ahead mashed potatoes).

- Brown hamburger with onions in a large soup pot. Add rest of ingredients, bring to a boil. Simmer until potatoes are cooked.
- May add other ingredients to taste (cabbage, elbow macaroni, barley, etc). If adding macaroni or barley, add water 1 cup at a time until desired consistency. Serve with crackers or corn bread.
