3 avocados - peeled, pitted, and mashed
1 lime, juiced
1 teaspoon salt
½ cup diced onion
3 tablespoons chopped fresh cilantro
2 roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch ground cayenne pepper

Steps:

  • In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.

  • Mash avocados in a bowl until creamy.

1/2 avocado, very ripe
1/4 cup white mushroom, diced
1 cup cilantro, diced
2 teaspoons vinaigrette
1 teaspoon lime juice

Steps:

  • Dice mushrooms & place in bowl. Mix with vinaigrette. Let sit 5 minutes to marinate a bit.
  • While mushrooms are marinating, prepare avocado & cilantro.
  • Add remaining ingredients to bowl & mash avocado as you are mixing together.

2 avocados
1 lime
1 chili
1 garlic clove
1 tablespoon oil
1 onion
2 bell peppers
600 g mushrooms
1 tablespoon tomato puree
35 g Mexican seasoning
1 dash chili sauce
4 tortillas
4 tablespoons sour cream
100 g coriander

Steps:

  • To make the guacamole, mash the avocados and stir together with the lime juice, chilli and garlic. Season to taste and set aside.
  • Heat the oil in a large, lidded pan over a high heat and cook the onion and peppers, uncovered, for 5 minutes. Add the mushrooms, stir together well, turn the heat down a little, put the lid on and cook for 5 minutes. Remove the lid, turn the heat back up and cook, stirring, for 5-6 more minutes, to evaporate some of the liquid. Stir in the tomato puree, Mexican seasoning and Tabasco. Stir well and cook for a minute more to create a sauce.
  • Divide the mushrooms and a little sauce between each of the tortillas, top with some sour cream, guacamole, and a handful of coriander. Roll up and serve.
