2 large onions, chopped
2 tablespoons olive oil
2 garlic cloves, chopped
250 g chestnut mushrooms, sliced
225 g ground cashews
225 g ground almonds
225 g whole wheat breadcrumbs
2 tablespoons soy sauce
2 tablespoons lemon juice
2 teaspoons dried tarragon
1 teaspoon yeast extract, e.g. vegemite
500 g puff pastry
1 beaten egg

Steps:

  • Heat oven to 200C/400°F.
  • in a large saucepan heat the oil and fry the onions for 7 minutes. add garlic and mushrooms and cook for a further 5 minutes. Tip everything into a blender and puree.
  • Place in a bowl the cashews, almonds, breadcrumbs, mushroom puree, soy, lemon juice, taragon and yeast extract. Mix very well.
  • Roll out the pastry to make a 15 inch/38cm square. Transfer to a baking sheet and place the pate in the middle.
  • Fold the remaining pastry around the outside and trim the ends.
  • You can use scraps of pastry to make decorations or put slits in the unwrapped pastry to create a "plait" effect.
  • Brush the whole parcel with the egg and bake for 40 minutes.

8 slices white bread, crusts removed
2 3/4 ounces melted butter
1 tablespoon olive oil
1 garlic clove, crushed
1/2 small onion, chopped fine
12 ounces button mushrooms, sliced fine
salt and pepper
1 tablespoon dry sherry
1/3 cup sour cream
2 teaspoons cornflour
1 tablespoon finely chopped fresh parsley
1 teaspoon finely chopped fresh thyme
1 ounce grated parmesan cheese

Steps:

  • Preheat oven to 350°F (180°C).
  • Brush both sides of the bread with the melted butter.
  • Cut each slice in half vertically, then each half into 3 horizontally.
  • Bake on a baking sheet for 5-10 minutes, till golden and crisp.
  • Heat the oil in a large frying pan, add the garlic and onion and cook, stirring, over low heat until the onion is soft.
  • Add the mushrooms and cook over medium heat for 5 minutes.
  • Season with salt and pepper.
  • Pour sherry into pan.
  • Blend the sour cream and cornflour together and add to the mushrooms, stir until mixture boils and thickens.
  • Remove from heat and stir in the herbs.
  • Allow to cool.
  • Spread the mushroom mixture onto each croute (bread) and sprinkle with the parmesan.
  • Place on a baking tray and bake for 5 minutes, or until heated through.
  • Serve sprinkled with fresh herbs if desired.

1 cup walnuts
6 tablespoons unsalted butter
2 1/2 pounds assorted mushrooms, such as cremini, shiitake, portobello, and white button, cleaned and chopped into medium pieces, plus 14 to 16 small button mushrooms, halved, for garnish
6 scallions, white and pale-green parts, cut across in 1/4-inch piece or 3 medium shallots, finely chopped
1 1/2 tablespoon fresh thyme leaves, plus more for garnish
1 1/2 teaspoons coarse salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
1/3 cup dry sherry, or Madeira
1 cup finely chopped flat-leaf parsley
Juice of 1 lemon
Dash Tabasco sauce
1 (8 ounce) package cream cheese, room temperature

Steps:

  • Heat oven to 350 degrees. Spread walnuts on a baking pan. Bake until fragrant, about 7 minutes. Transfer walnuts to a bowl; set aside to cool. Finely chop, and reserve.
  • In a large heavy skillet over medium heat, melt 4 tablespoons butter. Add mushrooms, scallions, and thyme, and cook, stirring occasionally, until liquid has been released and skillet becomes almost dry, 5 to 8 minutes. Stir in salt, pepper, and sherry. Cook until skillet is almost dry, about 10 minutes more. Remove from heat, and let cool.
  • In a large bowl, combine mushroom mixture with reserved walnuts, parsley, lemon juice, Tabasco, and cream cheese. Season with salt and pepper to taste.
  • Line a 3-cup mold with plastic wrap, allowing for a 4-inch overhang on all sides. Spoon the mushroom mixture into the pan. Cover with overhanging plastic, and firmly press down all over terrine with hands; spread mixture as evenly as possible. Refrigerate for at least 8 hours, or overnight.
  • Just before serving, melt remaining 2 tablespoons butter in a medium skillet, and cook halved mushrooms just until tender, about 5 minutes. Season with salt and pepper. Unwrap chilled terrine, and invert it onto a small serving platter. Surround with cooked mushroom halves, and thyme leaves. Serve with toast points, water biscuits, or any plain cracker.

An easy, do-ahead, spectacular, and delicious way to serve filet. Easily expanded to serve however many you need. A nice twist on the standard - without the traditional pate de foie gras. This is a big hit with both my family and my guests. Choose flavorful mushrooms like criminis, portobellos or even porcinis or morels. For the wine, choose something rich you would actually drink - a good Shiraz or Pinotage. Perfect served with asparagus.

1 teaspoon olive oil
2 (6 ounce) beef tenderloin filets
1 tablespoon butter
8 ounces fresh white mushrooms, minced
⅓ cup minced shallot
2 cloves garlic, minced
2 tablespoons red wine
4 6-inch squares of frozen puff pastry, thawed but still cold
1 ½ cups red wine
salt and pepper to taste
1 egg
2 tablespoons milk

Steps:

  • Heat the olive oil in a heavy skillet over high heat until very hot. Sear the filets until well-browned on both sides, 1 to 2 minutes per side. Remove the filets from the skillet, and chill in refrigerator for at least 1 hour. Filets must be cold.
  • In the same skillet over medium heat, melt the butter, and cook and stir the mushrooms, shallot, and garlic until the shallots are tender and translucent and the mushrooms have given off their juice, 6 to 8 minutes. Stir in 2 tablespoons of red wine, scraping and dissolving any browned flavor bits from the pan. Transfer the mushroom mix into a bowl, and chill in refrigerator for about 45 minutes.
  • Place 2 pieces of puff pastry on a work surface, and top each with a chilled filet. Spread half the mushroom mixture in a neat layer on top of of each filet, and top each with a piece of puff pastry. Fold and pinch the edges of the pastry together, sealing in the contents, and trim to make a tidy package. Cut a small slit into the top of each package.
  • Pour 1 1/2 cups of red wine into a saucepan over medium heat, and simmer until the wine is reduce by half, about 15 minutes. Season wine sauce to taste with salt and pepper. Meanwhile, whisk egg into milk in a bowl, and brush the pasty packages with the egg mixture for a browner crust, if desired. Return the bundles to the refrigerator to keep cold.
  • Preheat an oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper.
  • Place the puff pastry bundles onto the prepared baking sheet, and bake in the preheated oven until the pastry is golden brown and crisp and the filets are the desired degree of doneness (for medium-rare, about 15 minutes; an instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C)). Serve each filet in the pastry shell with spoonfuls of wine sauce on top.

1 1/4 pounds fresh shiitake mushrooms, stemmed, or crimini mushrooms, very coarsely chopped
1/2 cup chopped shallots (about 2 large)
2 garlic cloves, chopped
1 3/4 teaspoons curry powder
1/2 teaspoon ground cumin
1 cup roasted salted cashews
2 tablespoons olive oil
2 tablespoons finely chopped mixed fresh herbs (such as parsley, chives, and basil)
Fresh parsley or basil sprigs (optional)
1 French-bread baguette, cut into 1/2-inch-thick slices, toasted

Steps:

  • Melt butter in heavy large skillet over medium-high heat. Add mushrooms, shallots, garlic, curry, and cumin and cook until mixture begins to brown and all liquid evaporates, stirring frequently, about 12 minutes. Cool.
  • Using on/off turns, finely chop cashews in processor. Add oil and blend to coarse paste. Add mushroom mixture and chopped herbs; blend in using on/off turns until mushrooms are coarsely chopped. Season with salt and pepper.
  • Spoon mushroom pâté into bowl. Cover and chill 4 hours. (Can be made 3 days ahead; keep chilled.)
  • Garnish pâté with herb sprigs, if desired. Serve with toasts.
