DRUNKEN MUSSELS
This seriously delicious drunken mussels recipe is one of the quickest shellfish preparations known to man. Bring a flavorful, wine-based broth to a boil, add mussels and cover; cook until they open, and eat. That's it!

Steps:
- Melt butter in a large stock pot over medium heat. Add garlic and let sizzle for about 30 seconds. Season with red pepper flakes and lemon zest, stirring for about 45 seconds.
- Quickly pour in wine into the pan and season with black pepper. Bring sauce to a boil, stir in mussels, and cover immediately. Shake pot and let boil for 1 minute.
- Stir mussels, replace cover, and let boil for 2 more minutes. The shells will begin to open. Stir in parsley, cover pot, and cook until all shells are open, 1 to 3 minutes.
- Serve with grilled bread and lemon wedge.

- Clean mussels by rinsing under cold water and brushing them with a stiff kitchen brush. Pull out the beard by giving the fuzzy hairs sticking out of the sides of the mussel a yank. Remove any mussels that have cracked or opened shells.
- Heat olive oil in a large pot over med-high heat. Add garlic, onion, and basil. Cook for 1 minute. mix in tomatoes, wine, black pepper, then heat for another 2 minutes. Add mussels, bring to a boil, and cover. Cook for about 4 minutes or until mussels open. Serve immediately in bowls.
- Tip: Serve mussels with pasta or rice, or make garlic bread!

Steps:
- Preheat oven to 450 degrees.
- Combine seasonings, broth, grated cheese, olive oil, garlic & butter in a saucepan and gently heat until butter is melted.
- Place the mussels in a large casserole dish, and pour the butter mixture over them. Cover with foil and bake for 15 minutes.
- Discard any mussels that do not open.
- Serve in soup bowls and pour garlic/butter sauce over each serving.

- Heat the olive oil in a large soup pot over medium heat. Add the chopped onion and sauté until soft and translucent. Add the garlic and continue cooking until fragrant. Stir in the crushed red pepper, the wine and the diced tomatoes. Turn up the heat and bring the liquid to a quick boil. Add the mussels, all at once and cover immediately. Cook for about 3 minutes, shaking the pan every 30 seconds or so to redistribute the mussels. Uncover and check to see if the majority of the mussels have opened. If not, cover again and continue to steam for another minute or so.
- Once the mussels have opened, quickly transfer them to a serving bowl. Stir the breadcrumbs into the still simmering pan juices to thicken them slightly, add the parsley and pour the mixture over the mussels.
