Steps:
- Cut the feta into 24 cubes that are a little smaller than the melon cubes.
- To assemble the bites, set 1 piece of feta on top of each piece of honeydew, cantaloupe and watermelon and secure it with a toothpick. Place them on a serving plate and drizzle the balsamic glaze over the top. Garnish with the basil.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Combine olive oil, balsamic vinegar, lemon juice, Greek seasoning, salt, pepper, garlic powder, oregano, and thyme in a large plastic bag or bowl. Add potatoes and shake until potatoes are coated.
- Place into a baking dish that's large enough to accommodate potatoes in a single, snug layer.
- Bake in the preheated oven for 40 minutes, stirring every 10 minutes. Top with feta cheese. Return to the oven and bake for another 5 minutes. Serve.

- Cut a thin slice off the top of each tomato. Scoop out and discard pulp. Invert tomatoes onto paper towels to drain., In a small mixing bowl, beat the cream cheese, feta cheese, sour cream, onion, lemon juice and oregano until blended. Place mixture in a heavy-duty resealable plastic bag; cut a small hole in a corner of bag. Pipe mixture into tomatoes. If desired, sprinkle with black pepper. Chill until serving.

- Preheat the oven to 425 degrees F. Place a baking sheet in the oven to preheat while you prepare the potatoes.
- Toss the potatoes with the oil and thyme on a baking sheet and season liberally with salt and pepper. - Preheat broiler.
- Crumble enough feta to measure 1 cup and spread evenly in a shallow 2-cup flameproof baking dish (roughly 9- by 6- by 1-inch) or a small deep flameproof platter. Thinly slice tomatoes crosswise and arrange, overlapping if necessary, on feta. Drizzle oil over tomatoes and sprinkle with oregano and pepper. Broil mixture 2 to 3 inches from heat until cheese is bubbling, 5 to 8 minutes.

- Cut four large tomatoes in half.
- Scoop out pulp from each tomato half, leaving shells intact; discard seeds, and then coarsely chop pulp.
- In medium bowl, stir together tomato pulp, 4 ounces crumbled feta cheese, 1/4 cup fine, dry breadcrumbs; 2 tablespoons chopped green onions; 2 tablespoons chopped fresh parsley; and 2 tablespoons olive oil.
- Spoon mixture evenly into tomato shells, and place in a 13x9-inch baking dish.
- Bake at 350 degrees for 15 minutes.
- Garnish with Italian parsley sprigs.
FETA-FILLED TOMATO BITES
i'm always looking for a quick and easy recipe for low-key, bring-a-dish-to-share-if-you-feel-like-it type parties. this one definitely works. all of the seasonings are to taste and can easily be swapped out for other things. a few notes: if you can't find strawberry tomatoes, any other bite-sized type will work just fine. add the garlic one clove at a time and taste after each addition. you can always add more if you like. if you can't find lemon olive oil, normal olive oil and lemon juice work nicely. lastly, if you can't get fresh herbs, try looking for flavored feta. failing that, i'm sure dried would be ok too.

- slice off tops of tomatoes and set aside. you'll want them later.
- remove the seedy, liquidy stuff from the tomatoes and discard.
- place hollowed out tomatoes upside down on paper towels to drain a bit.
- put feta, garlic and herbs in food processor and, um, process.
- slowly drizzle in oil until mixture is creamy and resembles frosting.
- turn off food processor and scoop cheese mixture into a pastry bag (or a plastic baggie, snip off a corner after it's filled).
- squeeze cheese mixture into a tomato (fill it with as much as will fit) and replace the top.
- repeat until either all of the tomatoes are filled or you are out of cheese. refrigerate until ready to serve.
