SAUTEED GREENS WITH VINEGAR



Sauteed Greens with Vinegar image

4 quarts mixed greens, thick stems removed (such as broccoli rabe, mustard greens, and spinach)
1/4 cup extra-virgin olive oil
1 1/2 tablespoons minced garlic
Sea salt, preferably gray salt, and freshly ground black pepper
Red wine vinegar, for seasoning

Steps:

  • Shake the rinsed greens in a colander to remove the excess liquid, but the leaves don't have to be thoroughly dry.
  • Heat a large pot over high heat until very hot. Add the olive oil. When the oil is almost smoking, add the garlic and cook for a few seconds until it is light brown. Add a couple of handfuls of greens and toss with tongs, incorporating the garlic so it doesn't burn on the bottom of the pan.
  • Add the remaining greens all at once, or in batches if your pot isn't large enough to hold it all at once. Toss constantly so the greens wilt evenly. When wilted, season with salt and pepper. Continue cooking over high heat, tossing often, until the excess liquid evaporates.
  • Turn greens out into a bowl and let it cool to room temperature, then season with vinegar. Serve at room temperature, or refrigerate for up to 2 days and eat cold.
  • Michael's Notes: The wine vinegar will cause the greens to lose their beautiful green color. You can omit it, but I think it improves their taste.

4 slices bacon, chopped
3 bunches mustard greens, trimmed and chopped
2 tablespoons white vinegar
2 teaspoons sugar
Coarse salt
2 cups chicken broth

Steps:

  • In a large skillet over medium high heat brown bacon and render its fat. Add chopped greens to the pan in batches and turn until they wilt, then add more greens. When all of the greens are in the pan, add vinegar and cook a minute. Season greens with sugar and salt. Add chicken broth to the pan and cover. Reduce heat to medium low and simmer greens 15 to 20 minutes then serve.

½ Vidalia or other sweet onion, sliced
1 ½ pounds collard greens - rinsed, trimmed and chopped
½ cup water
3 tablespoons balsamic vinegar
2 tablespoons honey
1 teaspoon grated fresh ginger root
5 tablespoons melted butter
salt and freshly ground black pepper to taste

Steps:

  • Heat oil in large skillet over medium heat. Add onion and cook, stirring, until softened, about 5 minutes. Stir in collard greens, in batches if necessary, until they wilt slightly and all fit in the skillet. Pour in water and cook, stirring occasionally, until bright green and tender, 5 to 7 minutes, regulating heat to prevent burning. Drain.
  • Meanwhile, whisk vinegar, honey, ginger and butter together in a serving bowl for dressing. Add greens to bowl and toss with dressing. Season to taste with salt and pepper; serve warm.

  • In a very large pot, heat the oil over medium-high heat. Add the garlic and cook, stirring, for 1 minute. Add the mustard greens, stirring and working them down into the pot until they all fit. This simple but delicious side dish can be made with almost any kind of green but my personal favourite is red-veined Swiss chard as the green and red make such a pretty presentation. From Williams-Sonoma Italian Favourites.

10 cups swiss chard (or use your own personal favourite)
3 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
2 garlic cloves, minced
1 pinch red pepper flakes
salt
black pepper

Steps:

  • Cut the greens into strips 1 inch wide.
  • In a large saute pan over medium-high heat, warm the olive oil.
  • Add the greens and using tongs, toss them until they are wilted but still retain their bright colour, about 3-4 minutes.
  • Add the vinegar, garlic, red pepper flakes, salt and black pepper to taste and toss well.
  • Transfer to a warmed serving bowl and serve immediately.

WILTED MUSTARD-GREEN PASTA

For variety, try adding black olives or roasted red peppers to this dish.

Yield Serves 4 as a main course or 6 as a first course

1/2 pound short pasta such as gemelli
1 to 2 bunches mustard greens (about 1 pound)
3 garlic cloves
2 lemons
2 tablespoons olive oil

Steps:

  • Bring a 6-quart kettle three fourths full with salted water to a boil for pasta.
  • Remove and discard ribs from greens. Coarsely chop greens and finely chop garlic. Finely grate zest from lemons.
  • Cook pasta in boiling water until al dente. While pasta is cooking, in a 12-inch nonstick skillet cook zest and garlic in oil over moderate heat, stirring, until garlic is golden and remove skillet from heat. Add greens to garlic mixture with salt and pepper to taste, tossing with tongs until greens are wilted. Reserve 1/2 cup pasta cooking water and drain pasta in a colander. Add hot pasta and 1/4 cup reserved pasta cooking water to greens and cook over moderately low heat, tossing until combined well. If mixture is too dry, stir in more pasta cooking water.

A dark, sweet and mellow mustard which may be used in vinagrettes or savoury meat dishes. This mustard is easy to make and keeps for months in the refrigerator. Please see note at bottom regarding pantry storage.

1/2 cup mustard seeds (light or dark)
2 tablespoons mustard powder
1/2 cup water
1/3 cup balsamic vinegar
3 -4 tablespoons white wine vinegar (or rice vinegar)
2 tablespoons sugar
2 teaspoons salt
1 large garlic clove, sliced

Steps:

  • Grind mustard seeds in a spice grinder, mortar and pestle, or mini food processor, until a fine meal texture. (Add the mustard powder if the seeds aren't grinding up.).
  • Place in a bowl and stir in the water.
  • Let stand, uncovered and unrefrigerated, for 1 - 4 hours, stirring occasionally.
  • Scrape into food processor, add remaining ingredients, and process until quite smooth.
  • Taste and add balsamic vinegar, sugar, salt or garlic to taste, keeping in mind that the flavours will mellow over time.
  • Place mustard into a clean, dry jar and cover tightly.
  • Note: The original recipe states that the mustard will keep indefinitely on the shelf or refrigerated. I have not tried keeping it unrefrigerated so please do so at your own discretion.
