MACARONI AND CHEESE PEA SALAD
Made from boxed macaroni&cheese dinner. The cheese/macaroni mixture gives this a unique twist to typical macaroni salad. I've never made it from homemade cheese & macaroni, but I imagine it would work fine. Sometimes I use leftover macaroni & cheese dinner and adjust the rest of the ingredients accordingly. This is one of our quick and easy family favorites. Enjoy!!

Steps:
- Cook macaroni & cheese dinner per box directions; cool. (If you're using leftover macaroni, adjust the remaining ingredients accordingly).
- Add chopped eggs, celery, onion, green onion to cooled macaroni & cheese.
- Stir in mayonnaise and seasonings.
- Gently stir in thawed peas and season to taste.
- As with all salads, season to taste.
MY MAMA'S MACARONI SALAD WITH CHEESE AND PEAS
Steps:
- Begin by boiling a giant pot of salted water. Add elbow macaroni and cook until al dente.
- Meanwhile, dice up onion, celery and cheddar cheese and set aside.
- Make the dressing. Mix together mayonnaise, italian dressing (garlic expressions), sweet pickle relish, hot sauce, mustard and celery salt.
- Once the macaroni is cooked, strain it and rinse it with cold water. Immediately mix the warm pasta with the frozen peas. Doing so will help the pasta cool down while the peas thaw out.
- Next, add the chopped vegetables and cheese to the pasta and pea mixture. Then add the sauce and stir everything together. Season with salt and pepper then cover with plastic wrap.
- Refrigerate for at least 30 minutes before eating.
CHEDDAR AND MACARONI SALAD
This is a good make-ahead side dish for a summer dinner.

- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain, rinse, and transfer to a bowl.
- Combine mayonnaise, sour cream, vinegar, sugar, dry mustard, salt, and pepper for dressing in a small bowl; mix well. Pour over pasta.

- Cook the pasta per package directions , making sure not to overcook. Place the peas in the colander and drain the pasta right over the top of the peas, this will cook the peas to a crisp tender doneness. Cool and lightly stir in the rest of the ingredients.
- Chill at least two hours or overnight and serve. You may need to add more salad dressing or mayo as the pasta tends to absorb it the longer you store it.

MAMA'S MACARONI SALAD
Easy and yummy cold pasta salad with a sweet dressing that reminds me of a poppy seed dressing. This has been handed down in my family for generations. Best made the day before to allow the pasta to absorb the dressing and the flavors blend. Hope you like it! PS This is also a great dressin for a sweet mayo slaw dressing.

- Cook macaroni according to package directions using salted water.
- Drain and rinse with cold water to remove the starchy water and cool the pasta quickly.
- Shake the strained to remove as much water as possible from the pasta. You want it as dry as possible but not sticking together.
- Place in large bowl and add the veggies. (This really is best and prettiest when the veggies are diced small.).
- Mix all the dressing ingredients together- I usually put it in an empty jar with a tight fitting lid- like an old mayo jar- and shake-the kids like to do this part! (The dressing can be made ahead of time and stored in refrigerator).
- Pour dressing over pasta and veggies and stir to thoroughly combine.
- Refrigerate.
- NOTE: Holidays: The red and green veggies look great at Christmastime!
- BBQ's/Picnics: Place the bowl on top of a bowl filled with ice to keep it really cold.
- You can use other veggies too- Great way to use up the garden goodies!

- 1. In large bowl , add drained macaroni, eggs, onion, celery, pimentos, cheese pieces and drained peas In seperate small bowl mix well salad dressing, sour cream and milk ..including salt and pepper.
- 2. Pour dressing mixture over macaroni and other ingredients and mix well. Cover bowl and Refrigerate for 4-6 hours .. stir before garnish and serving garnish: egg slices and celery or parsley leaves and few dashes of paprika. Suggestion: for plain macaroni salad leave out peas and cheese ( cook a 1/2 cup of extra shells to make up the difference)
- 3. NOTE: This salad can be made with mayonnaise instead of salad dressing .. adding 1/2 teaspoon of yellow mustard to 1 cup Mayo along with sour cream and milk.
MAMA'S PEA SALAD
Mama made this salad a family tradition during the holidays, and we just loved its fresh taste. Now I have the responsibility to make it and I haven't changed a thing. It just reminds me of home. Now my grown children expect it at our holidays together and it reminds them of their Gran. Enjoy!
