CINNAMON COFFEE CAKE
Cinnamon Coffee Cake is moist, tender and buttery, topped with a sweet cinnamon streusel. Served alongside a piping hot cup of coffee or tea, this cake makes a delicious breakfast treat or afternoon snack!

- Preheat oven to 350 degrees F. Grease a 9x13-inch pan and set aside.
- Prepare the Batter - In a large bowl whisk together the flour, baking powder and salt. Set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl with an electric mixer, beat the butter and sugars on medium speed until light and fluffy; about 5 minutes.
- Add in eggs one at a time, scraping down the bowl as necessary. The batter will appear to be a bit curdled, but it will come together once fully mixed.
- Add in the sour cream and vanilla extract and mix until evenly incorporated.
- Gradually add in the flour mixture and mix on low speed until combined; scraping down the sides of the bowl as needed.
- Prepare the filling and topping - In a medium mixing bowl, use a fork to combine the flour, brown sugar, cinnamon and melted butter. You'll want this to be slightly clumpy for those yummy pieces of crumbs. Set aside.
- Evenly spread half the batter into the prepared pan. Sprinkle half of the filling/topping mixture over the batter. Top with remaining batter and spread evenly. Finish with the remaining filling/topping mixture.
- Bake in preheated oven for 45-50 minutes. Allow coffee cake to cool completely before drizzling on the glaze.
- Prepare the Glaze - In a small bowl, whisk together the powdered sugar, melted butter, vanilla and 1 tablespoon milk. You want the glaze to be thin enough to drizzle over the cooled cake, but not watery. If the glaze is too thick after adding in the first tablespoon of milk, gradually add in a little more milk, ½ teaspoon at a time until you reach the desired consistency. Drizzle topping over cooled cake.

- In a large bowl, cream butter and 2 cups sugar until light fluffy. Add 1 egg at a time, beating well after each addition. Beat in vanilla. Combine flour, baking soda and salt; add alternately with sour cream, beating just enough after each addition to keep batter smooth. , Spoon a third of batter into a greased 10-in. tube pan. Combine cinnamon, nuts and remaining sugar; sprinkle a third over batter in pan. Repeat layers 2 more times. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 15 minutes before removing from pan to a wire rack to cool completely.

NANNA'S OLD WORLD CINNAMON CRUMB COFFEE CAKE
This recipe is from the Penrose Victorian Inn (bed and breakfast) in Haydenville, Massachussettes and is a heritage recipe. It is the best coffee cake I have ever tasted and ever made! I make it for our church breakfasts from time to time and everyone scarfs it right up! Just as fast as the Caramel Rolls! Now that is a feat here in North Dakota! - Batter: Sift 1 1/2 cups flour, baking powder, and salt together and set aside. In a separate bowl, beat egg until frothy. Beat in sugar and butter until combined. Add milk, sour cream, and vanilla. Add to flour mixture a little at a time and mix on low until combined. Do not over mix. If the batter is too stiff add a little more milk.
- Streusel topping: Combine last 4 ingredients (make sure your butter for the streusel is chilled) in a small bowl and mix together, then set aside.
- Put 1/2 the batter in a 8x8 - inch greased pan and spread evenly. Sprinkle 1/2 streusel over batter. Repeat. Bake at 350 degrees in a preheated oven for 25 to 30 minutes. Topping with chopped nuts is also an option if you like nuts!

- In a small bowl, dissolve yeast in warm water. In a large bowl, combine milk, 1/2 cup butter, eggs, sugar, salt and 2 cups of flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl; turn once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down; let rest for 10 minutes. Divide in half. On a floured surface, roll each portion into a 15x10-in. rectangle. Brush with butter. Combine remaining filling ingredients; sprinkle over each rectangle to within 1/2 in. of edges. , Roll up jelly-roll style, starting with a long side; pinch seams to seal. Place, seam side up, on 2 greased baking sheets. Fold each roll in half lengthwise with seams together, creating a stacked loaf., Starting from the folded end, with scissors, make a lengthwise cut down the middle to within 1 in. of open ends. Open and lay flat arranging into a heart shape. Pinch ends at tip of heart to seal. Cover and let rise until doubled, about 30 minutes. , Bake at 350° until golden brown, 15-20 minutes. - Turn on the oven to 375°.
- Choose a mixing bowl that can subsequently contain all the ingredients. Put in the eggs and sugar and beat them until they are foamy and form yellow ribbons.
- Add the salt, olive oil, and grated orange peel - making sure you haven't grated any of the bitter white pith beneath the orange skin - and mix thoroughly.
- Peel all the fruit. Core the pear and apple and cut them into thin 1/2-inch pieces. Slice the banana very thin. Put the fruit into a separate bowl and toss with the lemon juice.
- Combine the flour and baking powder and mix them into the beaten eggs, incorporating them thoroughly.
- Add the fruit to the bowl with the eggs and flour, mixing well to distribute it evenly.
- Smear the bottom and sides of the springform pan with butter, then pour into it the fruit batter. Level off by shaking the pan from side to side; do not press down on the batter.
- Bake on the middle level of the preheated oven for 50 to 55 minutes, until the top of the cake becomes colored a light gold.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan. Sift together the flour, baking powder, baking soda and salt. Set aside.
- In a large bowl, cream together the shortening and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the sour cream and vanilla. Beat in the flour mixture, just until incorporated. Pour half of batter into prepared pan. In a small bowl, combine brown sugar and cinnamon. Sprinkle half of mixture over batter. - Prepare cake batter according to pakage directions, adding pudding mix along with water, oil, and eggs.
- Grease and flour 13x9" pan.
