NAKED BEANS WITH OLIVE OIL
This is a very basic way of cooking virtually any bean, but it's especially good for all varieties of white beans and chickpeas. The aromatics gently infuse the beans and their broth with their flavors, yet leave them open to further embellishments. Here, they are simply dressed with good extra-virgin olive oil, salt, and fresh-ground pepper.

- Soak the beans: Place dried beans in a medium bowl. Pour boiling water over beans; let soak for 1 hour. Drain beans and place in a medium saucepan with 6 cups of water. Bring to a boil and cook for 10 minutes. Add garlic, bay leaves, kombu, parsley, onion, thyme and salt. Reduce heat to a simmer, cover, and cook 1½ hours.
- Beans will be done when they're tender, not mushy. Pour through a strainer, then place beans in a serving bowl. Drizzle with olive oil, and season with salt and pepper to taste.

The canned beans make this an especially easy last-minute side dish. I also like it as a light lunch (with a salad and crusty bread).

- Gently heat until bubbling.
- Season to taste with salt and freshly ground black pepper.
- Stir in the parsley.

Steps:
- Place beans in large saucepan. Add enough cold water to cover by 3 inches and let soak overnight.
- Drain beans and return to pan. Add 6 cups cold water, 1/4 cup oil, chopped sage and garlic. Bring to boil. Reduce heat to medium-low. Cover partially; simmer until beans are just tender, stirring occasionally, about 45 minutes. Season with salt and pepper. (Can be made 1 day ahead. Cool. Cover and keep chilled. Rewarm before continuing.)
- Using slotted spoon, transfer beans to bowl. Top with more oil.

- Place the beans in a large bowl. In a small bowl, whisk together the oil, vinegar, lemon juice, herbs, honey, garlic, oregano salt, pepper and red pepper flakes. Pour over the beans. Stir in the feta cheese, red peppers and tomatoes. Cover the bowl in plastic wrap and stick it in the fridge for at least 30 minutes. It will have the most flavor that way – but you can obviously eat it right away!
- To make the olive oil toasts, drizzle your favorite bread with olive oil – liberally! Heat a skillet over medium heat and add the bread to the skillet once hot. Toast until each side is golden brown and crunchy. Serve the beans on top of the toasts!
