This is a recipe from Brother Boniface, a 95 year old Trappist Monk at Mepkin Abbey in Moncks Corner, SC. He is German Born, and attributes this recipe to his "Mutter", who made it for each of her children on their "Name Day".

1 lb butter
2 cups sugar
8 eggs
8 cups all-purpose flour
2 tablespoons baking powder
1 large lemon, zest of
butter, to prepare pan
flour, to prepare pan
strawberry, for topping (optional)
cream, for topping (optional)

Steps:

  • Preheat oven to 350.
  • With an electric mixer, cream eggs, butter and sugar until fluffy and light.
  • Add flour, baking powder and lemon rind.
  • Beat or whip it until the dough falls heavily from a spoon.
  • Bake in a 13X9 glass baking pan or fluted cake pan at 350 for 50 to 60 minutes.
  • Top with strawberries and cream for an extra delight.

6 large eggs, separated
1 cup sugar
1 cup unsalted butter, melted and cooled
1/4 cup ground almonds
1/2 teaspoon almond extract
2 1/2 cups sifted all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
Grated rind of 1 lemon
Confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees. Grease and lightly flour a tube pan.
  • Beat the yolks well. Add the sugar, beating well again. Add the cooled butter, almonds and almond extract, and mix well.
  • Fold in the flour, baking powder, salt, lemon rind and milk.
  • Beat the egg whites until stiff but not dry, and fold in.
  • Pour into the greased pan, and bake for 45 minutes or until a toothpick inserted into the middle of the cake comes out clean. Cool in the pan for 10 minutes, then turn out and cool completely. Sprinkle the top with confectioners' sugar.

1 1/8 teaspoons active dry yeast
1/2 cup warm water (110° to 115°)
1/2 cup warm milk (110° to 115°)
1/2 cup sugar
1/2 teaspoon salt
1/2 cup canola oil
1 large egg, room temperature, lightly beaten
3-1/2 cups all-purpose flour, divided
CUSTARD:
4 large eggs, lightly beaten
2 cups heavy whipping cream
1-1/2 cups sugar
8 to 10 cups sliced peeled tart apples or canned sliced peaches, drained, or combination of fruits
TOPPING:
1/2 cup sugar
1/2 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 cup cold butter

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the milk, sugar, salt, oil, egg and 2-1/2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. Place in a greased bowl, turning once to grease top. Do not knead. Cover and refrigerate overnight., The next day, for custard, whisk the eggs, cream and sugar in a large bowl until combined; set aside. Divide dough into 4 portions. , On a lightly floured surface, roll each portion into a 10-in. circle. Press each circle onto the bottom and up the sides of an ungreased 9-in. pie plate. Arrange 2 to 2-1/2 cups of fruit in each crust. Pour 1 cup custard over fruit., For topping, combine the sugar, flour and cinnamon in a small bowl. Cut in butter until mixture resembles coarse crumbs. Sprinkle 1/3 cup over each coffee cake. Cover edges of dough with foil. Bake at 350° for 35-40 minutes or until golden brown and custard reaches 160°.

3 tablespoons butter, softened

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease an 8-inch square cake pan.
  • Stir sugar, milk, vegetable oil, and egg together until well blended. Add flour, baking powder, and salt; stir until incorporated. Pour into the prepared cake pan and sprinkle chopped cranberries over the top.
  • Combine flour, sugar, and butter for the topping in a bowl and mix until crumbly. Sprinkle over cranberries in the cake pan.
