NANA'S PEACH PARFAIT PIE

This peach parfait pie has always been a family favorite and is great on a warm summer day!

1 cup rolled oats
½ cup slivered almonds
½ cup brown sugar
⅓ cup melted unsalted butter
1 (.25 ounce) package unflavored gelatin (such as Knox®)
¾ cup orange juice
2 tablespoons orange juice
1 pint vanilla ice cream
2 cups diced fresh peaches
¼ teaspoon almond extract

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Spread oats on a cookie sheet.
  • Toast in the preheated oven for 5 minutes. Add almonds to the oats and continue to toast for 5 minutes more. Remove from the oven and transfer to a bowl.
  • Stir brown sugar and melted butter into the oat mixture. Press mixture onto the bottom and sides of a 9-inch pie pan. Chill while preparing filling.
  • Bring orange juice to a boil in a saucepan. Remove from heat. Sprinkle in gelatin slowly while stirring with a whisk until fully dissolved. Add ice cream and stir until melted and mixture is smooth. Fold in peaches and add almond extract. Pour into the chilled crust. Chill for at least 3 hours before serving.

This recipe comes from my Nana growing up. She gave me the recipe and my husband says it's the best he's ever eaten. And for me that's a HUGE compliment because he's got some great cooks in his family. I use this recipe for pot pies as well as dessert pies.

Number Of Ingredients 5

2 cups flour (and some extra for rolling out)
1 teaspoon salt
1 tablespoon sugar
3/4 cup Crisco
1 cup water

Steps:

  • In medium mixing bowl combine flour, salt and sugar.
  • Cut in crisco. This means to use a fork and mash the crisco in until it look like tiny balls in with the flour.
  • Add water.
  • On floured surface put half the dough. Flour the outside of your dough thoroughly and your rolling pin.
  • Roll out dough to fit your pan. Remember to flour dough regularly throughout rolling.
  • To move dough into pan, double over and gently move. If dough breaks you can roll out again, but remember the more you roll your dough the "tougher" it gets.
  • Brush top crust with milk for a beautiful golden brown.

Sounds strange, but tastes great! This is my mother-in-laws recipe and my husband insisted I share it with you! Make sure you serve it with whipped cream on top!

Number Of Ingredients 7

21 Ritz crackers, finely crushed
1/2 cup walnuts, finely chopped
1 teaspoon baking powder
3 egg whites
1 cup sugar
1 teaspoon vanilla
1 (8 ounce) container whipped topping (like Cool Whip)

Steps:

  • Preheat oven to 325 degrees.
  • Prepare an 8" pie pan with cooking spray (Pam).
  • In a gallon size ziplock bag, crush the 21 Ritz Crackers until almost powder-like.
  • Add the finely chopped walnuts and 1 teaspoon baking powder.
  • Toss with a fork and set aside.
  • In a stand mixer or medium bowl using a hand mixer, beat the 3 egg whites until fluffy.
  • Slowly add 1 cup of sugar and 1 teaspoon vanilla. Beat until stiff and glossy in appearance.
  • Fold the crackers/nuts into the egg whites and pour into the pie pan.
  • Bake for 30 minutes.
  • Allow to cool completely in refridgerator and top with whipped topping before serving. (Optional- add chocolate shavings on top). Enjoy!

Seems like all my fav's come from Nana, probably why I practically lived with her my whole life lol. Here is her blueberry pie. I use store bought crust here and add nanas "secret to making it tasty all the way to the ends" You can use your favorite pie crust recipe instead. I do have nana's but rarely have time now a days to actually make it : (

Number Of Ingredients 8

- 6 cups fresh blueberries, washed and stemmed (for frozen defrost and drain well)
- 1/2 t lemon zest and 1 t lemon juice
- 1/2 c sugar
- 1/4 c flour
- 2 t butter cut in slices
- 1/4 t cinnamon
- melted butter and cinnamon and sugar mix for crust
- favorite pie crust for a top and bottom crust

Steps:

  • mix the blueberries, sugar, flour, cinnamon, lemon zest, and lemon juice in a large bowl. Careful not to bruise or squish berries.
  • Pour into bottom pie crust. Dot with butter.
  • Top with second pie crust and fold it over the edges of bottom crust and pinch to secure.
  • Refrigerate at least 30 minutes to firm up the dough.
  • Remove from frig and poke holes in top of pie with fork to allow steam out while baking.
  • Place pie on baking sheet in order to catch juices that may spill over and Bake in preheated 425 degree oven for about 20 minutes.
  • Reduce temperature to 350 and bake for 20 minutes more.
  • Remove pie and brush with melted butter. Sprinkle with cinnamon and sugar mix all over entire pie, making sure to get right to the edges (no one has ever left a crust on the plate from my pie since it tastes so delish)
  • return pie to oven and bake for additional ten minutes or until juices are thick and bubbling.
  • Remove pie and cool completely so it doesnt run when cut. (I do not like hot blueberries so I refrigerate mine after cooling and dont serve until its cold) Add a bit of cool whip or whip creme or ice cream and enjoy
