ORANGE LEMON GRAPEFRUIT MARMALADE



Orange Lemon Grapefruit Marmalade image

Trial and error using our neighbours fruit trees for free organic fruit and also can use oranges only as pilfered around the world

Number Of Ingredients 5

3 oranges
1 lemons or 1 lime
3 grapefruits (total fruit weight 1 . 5kg)
1 1/2 liters water (equal to whole fruit)
1 1/2 kg sugar (equal to cooked fruit)

Steps:

  • Squeeze juice from fruit and keep.
  • Slice fruit thinly.
  • Quickly wash sliced peel in cold water and rinse.
  • Add water and juice.
  • Keep for 3 hours in a cool place.
  • Cook in a heavy saucepan for 30 minutes medium heat.
  • Add sugar and cook and stir another 20-30 minutes on high heat.
  • Pour into sterilised jars.

Napa Goat Ranch Whole Fruit Lemon & Orange Marmalade image

This recipe has evolved from a similar recipe that my mom cut out of the newspaper years ago. Everyone who eats it (Usually on my whole barley bread) claims that they are instantly addicted!

3 lbs meyer lemons
2 lbs oranges (get the sweetest ones you can)
3 1/2 cups sugar
1/2 cup fresh orange juice
1/4 teaspoon salt
1 1/2 cups sugar (add to taste at the end)

Steps:

  • Have on hand 9 half-pint jars and sealing lids- sterilized according to the manufacturers instructions.
  • Cut the fruits in half and squeeze the juice out of them (save the orange and the lemon juices separately).
  • Chop the remaining citrus sections (yes- peel and all) in a food processor in small batches as you want the pieces to be fairly small (ideally about 1/4 inch but the sizes will vary, that is great).
  • Place the chopped citrus into a large pot and cover with cold water. Bring to a boil and cook, stirring occasionally, until the citrus mix is tender to the bite, about 10 minutes. Drain and rinse the fruit, clean out the pot as well.
  • Put the citrus mixture back into the pot with 1 1/2 cups water and bring to the mix to a boil.
  • Stir in the 3 1/2 cups sugar. Adjust the heat to maintain a slow simmer. Cook, stirring occasionally, until mixture is thick and creamy and the fruit is tender to the bite. This will take about 1 hour.
  • Taste and add up to 1 1/2 cups additional sugar to taste, add the 1/2 cup of orange juice and stir until well mixed.
  • Pack into the jars and process according to the jar manufacturers instructions- mine takes about 10 minutes once the water bath has returned to a boil.

3 medium meyer lemons, ends trimmed
1 medium blood orange, ends trimmed
3/4-1 1/4 cup granulated sugar
3/4-1 1/4 cup demerara sugar (raw)

Steps:

  • Place several small plates or saucers in the freezer.
  • Wash the citrus well under warm running water. Cut the lemons and orange in half lengthwise. Cut each half into 1/8-inch segments, lengthwise. Pluck out any exposed membrane and remove the seeds.
  • Measure the cut citrus. You should have 2 1/2 cups, but if you have less, use the same volume of water and sugar as you have citrus. (If there are only 2 cups, for example, use 2 cups water and 2 cups sugar.) Place the citrus and the same volume of water into a large, heavy-bottomed pot. Bring to a boil over medium-high heat. Cook until the peels are very soft and fully cooked, about 20 to 30 minutes.
  • Add the sugar to the pot, stir to combine. Turn the heat up to high and bring back to a boil. Lower the heat to medium and let the marmalade simmer until set. It should take about 20 to 30 minutes, but start checking after 15 minutes to see if it is set by spooning a little onto a chilled plate from the freezer. If it looks like jam and not runny syrup, it's ready. (If you want to use a candy thermometer, you are looking for 222 degrees.).
  • Allow marmalade to cool to room temperature before serving. Store leftovers in the refrigerator and use within a month.

2 tablespoons lemon juice

  • Mix ingredients and bring to a boil.
  • Boil rapidly stirring for 20 minutes.
  • Add 1/2 bottle certo and boil again for 1 minute.
  • Skim if necessary and pour into jars.

1/2 grapefruit, with peel, cut up
1 orange, with peel, quartered
1 lemon, with peel, halved
water, 3 times amount of fruit
granulated sugar, 1 1/2 times quantity of pulp

Steps:

  • Remove seeds from fruits. Put through food grinder. Measure and put into large saucepan.
  • For each 1 cup pulp, add 3 cups water. Bring to a boil, stirring occasionally.
  • Simmer for 20 minutes. Boil rapidly, stirring 2 or 3 times, for 20 minutes. Measure quantity.
  • To each 1 cup pulp, add 1 1/2 cups sugar. Return to a boil, stirring.
  • Boil rapidly until thickened and a small amount cooled on a chilled saucer jells. This will take about 20 minutes.
  • Pour into hot sterilized half pint jars to within 1/4 inch of the top. Place sterilized metal lids on jars and screw metal bands on securely. For added assurance against spoilage, you may choose to process in boiling water bath for 5 minutes.

2 quarts peeled chopped peaches
3/4 cup thinly sliced orange rind
1 1/2 cups chopped orange sections
2 tablespoons lemon juice
5 cups sugar

Steps:

  • Add all ingredients to a large pot; slowly bring to a boil; stir frequently until the sugar dissolves.
  • Boil for approximately 40 minutes or until thickened, stirring frequently to keep from sticking.
  • Take pot off of stove; skim off foam with a metal spoon.
  • Quickly pour marmalade into hot sterized jars, leave 1/4 inch headspace.
  • Cover immediately with metal lids and screw on bands tight.
  • Process in boiling water bath for 15 minutes.

In February the bitter Seville Oranges appear in the stores. They are not good to eat, they are used only for marmalade. This is my Grandmother's way of making marmalade. It is imperative to use the bitter, Seville oranges.Using sweet oranges does not make true marmalade but orange jam! I prefer it chunky but many people prefer the fruit cut in fine shreds.

3 lbs seville oranges
3 lemons
6 lbs granulated white sugar
15 cups water
Scotch whisky (preferably a strong single malt such as Laphroaig)

Steps:

  • Wash the fruit and place in a large pan.
  • Add water and cover.
  • Bring to a boil, reduce heat and simmer until fruit is soft.
  • Let stand until fruit is cool enough to handle.
  • Remove fruit from cooking water and cut each orange and lemon in half.
  • With a spoon remove pips and pith and return them to the juice.
  • Simmer for 25 minutes, then strain and discard pips.
  • Meanwhile, cut skins and pulp into small pieces or shreds, whichever you prefer.
  • Put fruit, juice and sugar into a large preserving pan and boil rapidly until setting point is reached.
  • To determine setting point, use jelly thermometer or stir until 2 drops hang side by side on a wooden spoon when removed from hot liquid Remove from heat, skim and cool slightly.
  • Pour into sterilized jars and add 1 Tablespoon whisky to each jar.
  • Seal with parrafin and cover.
