OVEN ROASTED GRAPE TOMATOES
This is a wonderful, healthy side dish for summertime. Only make when the grape tomatoes are in season, their flavor is key! Great in the oven or on the grill.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place tomatoes onto a large square of aluminum foil. Drizzle olive oil over tomatoes and top with garlic, basil, thyme, and salt. Wrap the foil around tomato mixture sealing tightly to keep juices inside.
- Bake in the preheated oven until tomatoes are tender, about 30 minutes. Cool slightly.

ROASTED GRAPE TOMATOES
Steps:
- Preheat oven to 400 degrees F. In a medium bowl add the grape tomatoes and 3 garlic cloves. Drizzle with 3 tablespoons of olive oil and sprinkle with salt, pepper.
- In a 9 by 13-inch glass baking dish, place the tomatoes and garlic cloves, ensuring they are in just 1 layer. Roast for 20 minutes, and then stir. Add 2 to 3 tablespoons of hot water, if too dry in appearance. Return to the oven and cook for 20 to 30 more minutes.
- When ready, the tomatoes will have begun to shrivel and the liquid in the dish should have thickened. Serve hot from oven.
ROASTED GRAPE TOMATOES
Roasting tomatoes is beyond easy and it gives the tomatoes an elevated flavor.

- Preheat the oven to 450°F. Place the tomatoes on a rimmed baking sheet and drizzle 2 T olive oil overtop. Add the salt, pepper, and garlic and toss to coat. Spread the tomatoes in an even, single layer along the baking sheet.
- Roast in the oven for 10-15 minutes or until shriveled and cooked to desired doneness. Roast time will vary depending on the size of tomatoes used.
- Remove from oven and enjoy warm with crumbled feat or goat cheese and a sprinkle of fresh herbs. Or use this recipe as the base to make my penne pomodoro recipe!

SNAPPER WITH ROASTED GRAPE TOMATOES, GARLIC, AND BASIL

- Position a rack in the middle of the oven and preheat to 350 degrees F.
- Toss the tomatoes with 1 tablespoon of the olive oil, garlic, vinegar, pepper flakes, and salt, to taste. Spread out on a baking sheet and roast until the tomatoes get juicy, about 15 minutes. Transfer tomatoes to a bowl and toss with the basil.
- Dry the fish very well all over. To keep the fish from curling in the pan, lightly slash a cross-hatch pattern into the skin of the fish with a sharp knife. Brush the rounded flesh side of the fish with the remaining olive oil. Season with salt and pepper, to taste. Heat a large non-stick skillet over medium-high heat. Place the fish, seasoned side down, in the oil, and cook undisturbed over high heat, until the fish turns both opaque along the edges and golden on the bottom, about 3 minutes. Lightly salt the skin side of the fish. Flip the snapper and turn off the heat and let the fish cook in the residual heat of the pan until the fillets are firm but still juicy, about 1 minute more.
- Divide the fish among 4 plates. Top with the tomatoes and serve.

ROASTED GRAPE TOMATOES WITH TANGLED NOODLES

- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- Drizzle the olive oil over the grape tomatoes, season with salt and pepper and toss to coat. Place the tomatoes on the baking sheet and cook until skins turn a rich golden brown, about 10 minutes.
- Meanwhile, heat the chicken stock over low heat. Add the noodles to a large skillet over medium heat, and pour in 1 ladleful of hot stock. Stir to prevent the noodles from sticking together as the stock cooks off. Once the noodles have absorbed all of the stock, add another 1 cup stock. Continue to stir and add the remaining stock 1 cup at a time, waiting until each addition is absorbed before adding more. Once all the stock has been absorbed, stir in the cheese and toss with the roasted tomatoes and their pan drippings. Serve hot.
ROASTED CHERRY OR GRAPE TOMATOES
