NO BAKE GLUTEN FREE VEGAN PROTEIN BARS
I share my favourite Gluten Free Vegan Protein Bars done 3 delicious ways, the best easy no bake post-workout snacks without the strange additives of so many options on the shelves!

Steps:
- To a food processor, combine the nut butter, maple, protein powder, oat flour, flax seed and dates. Puree until smooth.
- Fold in the "add ins" of your choice.
- Line a 6" square pan with parchment paper with "wings" coming out of both sides. Press the ingredients firmly into the pan. Top with your favourite add-ins and freeze for 10 minutes. Cut into bars. They will thaw pretty quickly so I recommend enjoying them out of the freezer.

- Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides like handles.
- To the bowl of a food processor fitted with a steel blade, add the peanut butter, dates, and rolled oats. Pulse several times, until the mixture breaks down and the ingredients begin to incorporate with one another. Scrape down the bowl then add the chia seeds, protein powder, and 2 tablespoons milk. Pulse until all ingredients are well combined. Depending upon your food processor, this may take a few minutes.
- Check the consistency of your dough. When you pick up a small handful of it and squeeze, it should hold together and resemble cookie dough. If it is too dry, continue pulsing in milk, 1 tablespoon at a time, until you reach the right consistency. Transfer the mixture to a mixing bowl. Add the chocolate chips and with a spatula (or your fingers), stir to combine the chips and moisten any bits of dough that the food processor didn't incorporate evenly.
- Transfer mixture into the prepared pan and press it into an even, flat layer. Transfer the pan to the freezer for 15 minutes or the refrigerator for 1 hour, until the bars firm up.

- Combine ingredients for crust in the food processor until a crumbly, thick dough forms. Dump into a bowl and set aside for later.
- Combine flax and water in a small bowl, stir, and set aside for a few minutes until it starts to gel.
- Add agave or honey, peanut butter, coconut milk, and flax egg to the dry ingredients. Mix roughly using the fork, then add mixture to the food processor.

- Line an 8x8-inch baking pan with parchment paper (or plastic wrap) and set aside (adjust number/size of pan if altering batch size).
- Pop* your amaranth by heating a large pot over medium-high heat. You'll know it's ready to start adding amaranth when a drop of water disperses quickly and balls up.
- Add about 2-3 Tbsp amaranth at a time and immediately cover. Shake the pot back and forth over the heat (wearing oven mitts is helpful) to move the grain around. It should start popping within 1-3 seconds, and be done popping at the 10-second mark. Be sure to pull them off at around 10 seconds or they'll start to burn.
- Not every single grain will pop (that's OK!). Very quickly empty into a mixing bowl. This may take a couple tries to dial in your heat and not burn them - it took me 4 tries! But then you'll hit your stride.
