No-Bake Pecan Coconut Cluster Keto Cookies image

Flavorful no-bake keto cookies made with shredded coconut, pecans, and ChocZero chocolate chips for extra sweetness.

Yield 24 cookies

Number Of Ingredients 9

3/4 cup butter
5 tablespoons brown Swerve Sweetener
5 tablespoons Lakanto Golden Sweetener
2 teaspoons vanilla extract
2/3 cup heavy cream
3 cups pecan halves
1 1/2 cup unsweetened coconut flakes
1/4 cup ChocZero dark chocolate chips
1/4 cup ChocZero white chocolate chips

Steps:

  • Melt butter in a saucepan over medium heat.
  • Once the butter has completely melted, add in brown Swerve Sweetener and Lakanto Golden Sweetener. Stir until dissolved. Add in heavy cream, vanilla, and stir occasionally until the mixture has thickened. This will take about 7 minutes.
  • Remove saucepan from heat and add in pecans and coconut flakes. Let the mixture sit for about 10-15 minutes to cool.
  • Scoop out a large tablespoon and place it on a baking sheet lined with parchment paper. Keep doing this until all tablespoon-sized clusters are on the parchment paper. Sprinkle clusters with ChocZero white chocolate and dark chocolate chips, pushing them in a bit so that they stick to the clusters. Place baking sheet in the refrigerator to allow pecan clusters to harden. And don't worry, they may appear like they won't hold together, but after refrigerating and firming up, they'll be easy to pick up and hold!
  • Store in an air tight container. Enjoy!

1 cup sweetened flaked coconut
2 cups white sugar
½ cup unsweetened cocoa powder
½ cup milk
½ cup margarine

Steps:

  • Line a baking sheet with waxed paper.
  • Mix oats and coconut in a large bowl until thoroughly combined.
  • Stir sugar, cocoa powder, milk, and margarine together in a saucepan over medium heat until the mixture is smooth. Bring to a boil and cook for 2 minutes, stirring constantly. Pour over the oats and coconut and quickly mix to coat. Drop by tablespoon onto prepared baking sheet; let cookies cool and harden. Store in an airtight container.

1 1/2 cups pecans
1 cup sliced almonds
1 cup unsweetened coconut flakes
3/4 cup pumpkin seeds (pepitas)
1/2 cup old-fashioned oats
1/2 teaspoon kosher salt
3 tablespoons virgin coconut or extra-virgin olive oil, melted
2 large egg whites
2/3 cup sugar

Steps:

  • Preheat oven to 325°F. Toss pecans, almonds, coconut, pumpkin seeds, oats, salt, and oil on a rimmed baking sheet and bake, tossing once, until coconut is golden and mixture is fragrant, 10-12 minutes. Let cool.
  • Whisk egg whites in a large bowl until foamy. Gradually add sugar, whisking until mixture is thick and opaque. Add nut mixture and fold to coat evenly.
  • Drop 1/4-cupfuls of mixture onto a parchment-lined baking sheet, spacing evenly (if your baking sheets are small, you might have to use 2). Bake cookies, rotating baking sheet halfway through, until edges are golden, 15-20 minutes. Transfer to a wire rack and let cool.

  • Cookies can be baked 1 day ahead. Store airtight at room temperature.

Steps:

These little cookies are a bunch of good things all at once: crunchy and chewy, sweet and salty, craggy and never neat, or ever the same, which is just as they should be. The must-have ingredients are melted chocolate, either dark or white (or both), and cornflakes. The coconut is optional, and the cranberries are up for grabs - you can swap them for raisins or small bits of other dried fruit. Since these require nothing but melting and stirring, and because the ingredients are so basic, these can be a spur-of-the-moment cookie, a boon when there's often not enough time.

6 or 8 tablespoons/85 or 113 grams unsalted butter, cut into chunks
12 ounces/340 grams white chocolate bars, chopped, or semisweet chocolate chips
4 cups/113 grams cornflakes
1 cup/120 grams moist, plump dried cranberries (see Tip)
1/3 cup/25 grams unsweetened shredded coconut (optional)
Fleur de sel or fine sea salt, for finishing
Sprinkles, for finishing (optional)

Steps:

  • Line a baking sheet with parchment paper or a baking mat or with 40 mini-muffin liners.
  • If you're using white chocolate, use 6 tablespoons/85 grams butter. For semisweet chocolate, use 8 tablespoons/113 grams butter. Put the butter in a small saucepan, top with the chocolate and cook over very low heat, stirring almost constantly, until smooth. (Alternatively, you can stir in a heatproof bowl set over simmering water or in a microwave-safe bowl in a microwave, stirring in 20-second increments.)
  • Meanwhile, toss the cornflakes, cranberries and coconut, if using, in a large bowl. Pour over the melted chocolate and gently stir in with a flexible spatula. Some of the cereal will break - it's inevitable - but keep working until you've coated all of the flakes.
  • Use a medium cookie scoop or two spoons to shape sweets either on the lined baking sheet or in the paper liners. Gently press the mixture into the scoop or a spoon, binding the elements, before releasing the scoop or scraping the mixture off the spoon with another spoon onto the sheet or into the liners. Finish with salt and sprinkles, if using.
  • Refrigerate or freeze (my preference) for about 30 minutes, or until set, before serving. To keep, cover and refrigerate for up to a week or freeze for up to a month. These are good straight from the fridge or just a few minutes out of the freezer.
