Vegetarian No-Chicken and Dumplings image

This vegetarian version of chicken and dumplings tastes a lot like a comforting pot pie filling with dumplings in it. And although this soup is low in calories and fat, it's surprisingly hearty.

1 tablespoon baking powder
2 cups (about 8 1/2 oz.) plus 2 Tbsp. unbleached all-purpose flour, divided
1 cup whole milk
2 tablespoons unsalted butter
2 cups thinly sliced sweet onion
4 cups unsalted vegetable stock, divided
8 cups chopped yellow squash (2 lb.)
2 teaspoons kosher salt
1 cup finely chopped carrots
1 cup frozen peas, thawed
1 cup fresh corn kernels
1 tablespoon chopped thyme
1 tablespoon thinly sliced chives
1 teaspoon black pepper

Steps:

  • Combine baking powder and 2 cups of the flour in a bowl. Gradually stir in milk with a fork. Chill dough 20 minutes.
  • Heat butter in a large Dutch oven over medium. Add onion; cover and cook, stirring occasionally, until very soft, 15 to 20 minutes. Add 3 3/4 cups of the stock to Dutch oven, increase heat to high, cover and bring to a boil; let simmer 4 to 5 minutes. Whisk together remaining 1/4 cup stock and 2 tablespoons flour; stir into Dutch oven. Add squash and salt; cover. Simmer, stirring occasionally, until squash is very tender, 5 to 6 minutes.
  • Add squash mixture to a blender in batches. Remove center piece of blender lid (to allow steam to escape); secure lid on blender, and place a clean towel over opening in lid. Process each batch until very smooth. Return puree mixture to Dutch oven over medium-high. Add carrots, peas, corn, and thyme; cook, stirring occasionally, until boiling, 3 to 4 minutes.
  • Meanwhile, roll dough out onto a heavily floured surface to 1/8-inch thickness. Using a pizza cutter or a knife, cut into 1-inch squares. Add dumplings to simmering squash mixture, and cook, gently stirring occasionally, until slightly puffed, 3 to 4 minutes. Remove from heat. Stir in chives and pepper.

2 (7 1/2 ounce) cans pillsbury biscuits (the kind in the 4 packs, not the large biscuits)
1/4 cup butter (melted)
2 teaspoons garlic salt
1 teaspoon pepper
1 teaspoon poultry seasoning (like Rotisserie Chicken Seasoning)
1 pinch crushed red pepper flakes (optional)

Steps:

  • In a large pot combine water, vegetable broth, onion, celery, peas, corn, and carrots. Cook until boiling.
  • Add biscuits by pinching off small pieces and dropping them into the boiling water; about 4 pieces per biscuit. Try to drop each new piece into an open spot in your water. Stir occasionally during this process and at the end to separate biscuit pieces.
  • Let boil for a few minutes then add soup, butter, and seasonings. Stir until soup is dissolved.
  • Bring back to a boil and turn down heat. Let simmer for 25-30 minutes until dumplings are at their desired texture.

1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1 broiler/fryer chicken (about 3 pounds), cut up
2 tablespoons canola oil
1 large onion, chopped
2 medium carrots, chopped
2 celery ribs, chopped
3 garlic cloves, minced
6 cups chicken stock
1/2 cup white wine or apple cider
2 teaspoons sugar
2 bay leaves
5 whole peppercorns
DUMPLINGS:
1-1/3 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
2/3 cup 2% milk
1 tablespoon butter, melted
SOUP:
1/2 cup heavy whipping cream
2 teaspoons minced fresh parsley
2 teaspoons minced fresh thyme
Additional salt and pepper to taste

Steps:

  • In a shallow bowl, mix 1/2 cup flour, salt and pepper. Add chicken, 1 piece at a time, and toss to coat; shake off excess. In a 6-qt. stockpot, heat oil over medium-high heat. Brown chicken in batches on all sides; remove from pan., Add onion, carrots and celery to same pan; cook and stir 6-8 minutes or until onion is tender. Add garlic; cook and stir 1 minute longer. 2 teaspoons olive oil
1 Tablespoon butter
1 small onion (diced)
1 cup celery (diced, (2 stalks))
1 cup carrots (diced, (about 2 or 3 carrots))
1 large russet potato (chopped)
3 large cloves of garlic (pressed or minced (about 1 Tbsp))
1½ pounds chicken breasts (cut in slightly larger than bite sized pieces)
4 cups chicken broth (divided)
1 teaspoon salt ((more or less to taste))
½ teaspoon ground black pepper
½ teaspoon poultry seasoning
½ teaspoon dried sage
½ teaspoon dried thyme
1 cup frozen peas ((or mixed vegetables))
½ cup heavy cream
6 jumbo canned buttermilk refrigerator biscuits ((a 16 ounce package contains 8, but you will only need 6 of them))

Steps:

  • Press the SAUTE button on the Instant Pot.
  • When the pot is hot, add the olive oil and the butter.
  • Add the onion and celery to the pot and saute for a few minutes. Add in the carrots and potatoes, stir.
  • Add in the garlic. Cook for 1 minute, scraping the bottom of the pot to get up any brown bits (deglaze).
  • Add chicken and 2 cups of chicken broth and continue to scrape the bottom of the pot again (to deglaze it to keep it from burning).
  • Season with salt, pepper, poultry seasoning, sage, and thyme. Cook for a few seconds to let the spices become fragrant.
  • Place the Instant Pot lid on top, move the valve to SEALING, press the PRESSURE COOK or MANUAL button and set timer for 15 minutes.
  • While food is cooking, prepare your biscuits. Roll each canned biscuit flat and cut into 6 equal pieces. Do this to all 6 biscuits and set aside (you can also just cut them and not roll them flat).
  • When cooking time is done, do a QUICK RELEASE of the pressure and remove the lid.
  • Dump in the remaining 2 cups of chicken broth and then add the sliced biscuits into the pot.
  • Carefully place the cut biscuits on top of the liquid in the pot, spreading them out as best as you can. Once all your biscuits are in the pot, DO NOT mix it all together - leave the biscuits sitting on top of the liquid.
  • Press the CANCEL button.
  • Place the lid on the pot and lock in place. Turn the valve to SEALING. Press the PRESSURE COOK or MANUAL button and set the timer for 10 minutes.
  • When the cooking cycle has finished, do a QUICK RELEASE.
  • Open the lid and carefully stir in the frozen peas and heavy cream. Let it sit for a minute or two so that it thickens up and then taste and add salt and pepper if needed.

2 lb boneless, skinless chicken breast, cubed
1 cup diced yellow onion
1 cup sliced carrot

6 cups chicken broth
½ cup heavy cream
½ teaspoon dried thyme
2 bay leaves

Steps:

Chicken and dumplings are a family favorite! I remember when my mom used to make this dish using store-bought biscuits and a whole chicken. This is my version--made with boneless, skinless chicken thighs and homemade chive dumplings with dough that won't make you miss the pre-made kind!

6 tablespoons unsalted butter
6 boneless, skinless chicken thighs
Kosher salt and freshly ground black pepper
1 medium yellow onion, diced
4 celery stalks, sliced 1/2 inch thick
4 medium carrots, peeled, sliced 1/2 inch thick
2 tablespoons all-purpose flour
2 cloves garlic, chopped
6 cups chicken stock
1 bay leaf
1/2 bunch fresh parsley leaves, for serving
1 cup all-purpose flour

2 tablespoons vegetable shortening
2/3 cup buttermilk

Steps:

  • For the chicken: Heat a large braiser or Dutch oven over medium-high heat and add 4 tablespoons butter. Sprinkle the chicken thighs with salt and pepper and add to the pan. Cook until golden, turning once, about 3 minutes per side. Remove to a plate.
  • Add the remaining 2 tablespoons butter, the onion, celery and carrots and season with salt and pepper. Cook, stirring frequently and scraping up the brown bits that cling to the bottom of the pan with a wooden spoon, until the vegetables are coated in fat and slightly golden, about 3 minutes.   • Use 2 forks to shred the chicken. When the chicken is ready, use 2 spoons sprayed with cooking spray if desired to add scoops of dumpling dough over the top of the stew, about 1 tablespoon each. Cover and simmer until the dumplings double in size, about 15 minutes. Remove from the heat, discard the bay leaf and garnish with parsley.
