OLD-FASHIONED APPLE DUMPLINGS
These are the ones my grandmother used to make: warm, flaky, apple-y sweet and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
- On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
- With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
- In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
- Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

NO-KNEAD APPLE DUMPLINGS
A co-worker brought this pastry recipe to work one morning during the holidays. It just melts in your mouth and the flavors are so wonderful. If she hadn't given me a copy of the recipe, I never would have guessed you use Mountain Dew. This will quickly become one of your favorites! February 2004, I just wanted to update this recipe. I've been using Splenda and Diet Sierra Mist in place of sugar and Mountain Dew. It still tastes the same.

Steps:
- Peel and slice apples into 16 slices.
- Roll 1 apple slice into each crescent roll and place into 13x9-inch baking dish.
- Melt butter, sugar and vanilla in a sauce pan (do not caramelize)!
- Just enough heat to melt the sugar.
- Pour over rolls, sprinkle with cinnamon; then pour Mountain Dew over the top of rolls.
- Bake for 30 minutes at 350°F.
- Then cover with foil and bake another 10 minutes.
- Serve warm and enjoy!

EASY APPLE DUMPLINGS
What happens when you combine sliced apples, crescent roll dough, and ginger beer? One of the easiest and best fall desserts! These Easy Apple Dumplings are quick to make and are always a crowd favorite.

- Preheat oven to 350°F. Grease a 13x9-inch baking dish.
- Unroll the crescent roll dough and separate the triangles. Wrap each apple slice in one of the dough triangles and set in the greased baking dish.
- Whisk together the melted butter, ½ cup sugar and vanilla. Mixture will be grainy. Pour the butter mixture evenly over the top of the dough-wrapped apples.
- Pour the ginger beer or ginger ale around the edges of the pan.
- Whisk together the 1 ½ tablespoons of sugar and apple pie spice. Sprinkle evenly over the top of the dumplings.
- Bake for 40-45 minutes or until the tops of the dumplings are golden and the syrup is bubbly. Let cool for a few minutes before serving warm.
- Store any leftovers covered in the fridge for up to 3 days.

AMISH BOILED APPLE DUMPLINGS

- In a medium bowl, combine the flour, 1/2 cup apple juice and cinnamon, stirring until smooth.
- Stir in diced apples.
- Pour all the apple juice into a 4-quart pot with a tight fitting lid.
- Bring to a boil over medium heat.
- Drop diced apple mixture by soup-spoonsful into the boiling juice.
- Cover and let boil 20 minutes.
- Do not remove lid during cooking.
- After 20 minutes, remove the dumplings from the pan; set aside.
- Stir the cornstarch into the remaining apple juice in the pot and cook until thickened.
- Serve the sauce over the dumplings.

- Preheat oven to 375°. For syrup, place 1 cup sugar, water, 3 tablespoons butter and ¼ teaspoon cinnamon in a saucepan; bring to a boil. - Combine all sauce ingredients in a medium saucepan. Bring to a full rolling boil, stirring occasionally. Set aside. , For dumplings, combine flour, baking powder and salt in a large bowl. Using a fork or pastry blender, cut in shortening until mixture resembles coarse crumbs. Sprinkle in milk, mixing lightly with a fork until a soft dough forms. I received this recipe from my MIL. I love it because it is very quick and easy to make and when it is just the 2 of us, I can cut the recipe in half and use the other 4 crescent rolls for our rolls for the meal.

- Make the pate brisee: Pulse flour, salt, and sugar in a food processor until combined. Add butter and pulse until mixture resembles coarse crumbs with some pea-size pieces remaining. Drizzle with ice water and pulse until mixture holds together when pinched. If dough is too crumbly, add more ice water, 1 tablespoon at a time; do not over-process.
- Divide dough into thirds. Transfer to 3 pieces of plastic wrap; knead once or twice. Form into squares and wrap in plastic. Refrigerate at least 1 hour and up to overnight, or freeze up to 3 months; thaw overnight in refrigerator before using.
- On a lightly floured surface, roll each square of dough into an 8-by-14-inch rectangle. Then cut each square into two 9-inch triangles and some leaves. Use the back of a knife to make the vein markings on the leaves. Keep the pastry chilled and covered with plastic wrap, on parchment-lined baking sheets, until ready to use.
- For the apples: Preheat oven to 350 degrees. Peel apples without removing stems. Working from bottom of each apple, use an apple corer to remove core to within about 3/4 inch from the top. To remove any remaining seeds, use a 1/4 teaspoon. Mix together sugar and cinnamon. Add butter, raisins, zest; stir until thoroughly incorporated. Divide mixture evenly between the cavities of apples. Place in a 13-by-9-inch baking dish along with 3 tablespoons water and bake, basting occasionally with pan juices, until just fork-tender, about 1 hour. Transfer baking dish to wire rack and let cool completely.
- Place an apple onto the center of each pastry triangle. Whisk together egg yolk and cream. Brush edges of pastry with egg wash. Bring edges of pastry together and pinch or press to seal, leaving stems exposed. Garnish dumplings, as desired, with leaves moistened with egg wash to adhere. Return dumplings to parchment-lined baking sheet. Mix together egg yolk and cream. Lightly brush dumplings with egg wash and chill until firm, reserving egg wash.
- Preheat oven to 400 degrees. Brush dumplings again with egg wash, and bake until nicely browned, 25 to 35 minutes. Let cool slightly before serving.
APPLE DUMPLINGS RECIPE BY TASTY

- Preheat oven to 375ºF.
- In a medium pan, melt the butter. Add the brown sugar, cinnamon, ginger, and salt, and stir until the sugar has melted completely and formed a sauce. Add the apples and toss until the apples are fully coated in the sauce. Remove pan from heat.

APPLE CIDER-CARAMEL DUMPLINGS
This may not be the dish you think of when you see the words "apple dumplings," but this delicious dessert couldn't be simpler to make, or more comforting to eat. It starts with a basic dumpling batter. Just stir together the ingredients, then cook them in liquid on the stovetop until they become fluffy all the way through. Poaching the dumplings in a combination of apple cider, brown sugar and cinnamon means they take on a jammy exterior and absorb some of sweetness in the process. As the dumplings cook, they release some starch into the liquid, which thickens the poaching liquid into a sauce. It's topped with a lightly whipped vanilla cream, which has a consistency similar to melted ice cream and coats each and every bite.

- Make the apple cider-caramel sauce: In a medium pot, heat the cream and butter over medium until the butter is melted. Add the brown sugar and bring to a simmer over medium-low. Once simmering, cook, stirring constantly for 2 minutes. Add the apple cider and stir well to combine. (The sugar will seize, but just keep stirring and it will dissolve back into the liquid.) Add the cinnamon sticks and salt, and bring to a simmer over medium-low heat.
- While the mixture comes to a simmer, make the dumplings: In a medium bowl, whisk together the flour, brown sugar, baking powder, salt and nutmeg. Make a well in the center and add the milk, melted butter, egg and vanilla. Whisk to combine, then switch to a spatula or wooden spoon as the mixture comes together.
- Reduce the heat to a low simmer. Add a single layer of tablespoon-size scoops of batter to the pot (about 5 to 6 dumplings), cover the pot and set a timer for 8 minutes. (If desired, you can test one dumpling by cutting it in half to make sure it's cooked through.)
- After each batch, use a slotted spoon to drain and transfer to a medium bowl. Cover the bowl with plastic wrap or foil to help keep the dumplings warm. Repeat with the remaining batter, poaching the dumplings in batches until all of the batter is used. (The poaching liquid will thicken slightly and decrease as you cook the dumplings, even with the pot covered.)
- Once all the dumplings are fully cooked and removed from the pot, add the apples to the pot and simmer on low heat, uncovered, for 20 to 30 minutes, depending on how toothsome or soft you like your apples.
- While the apples cook, make the whipped cream: In a medium bowl, whisk the cream, confectioners' sugar and vanilla until it thickens enough to coat a spoon, but is still fluid. Chill the whipped cream until ready to use.
- Divide the warm dumplings among serving dishes. Spoon the sauce, apples and cream sauce over each portion and serve immediately.
