SLOW-SIMMERING PASTA SAUCE
Spaghetti with sauce is my kids' favorite dinner, so through trial and error, I came up with my own recipe. This is the winning result. I love that it's made in a slow cooker.-Samantha Vicars, Kenosha, Wisconsin

Steps:
- In a large skillet, cook sausage and onion over medium heat for 7-8 minutes or until sausage is no longer pink and onion is tender. Add garlic; cook 1 minute longer. Drain. Transfer to a 3-qt. slow cooker., Stir in the tomatoes, tomato sauce, tomato paste, brown sugar, bay leaves, oregano, dried basil, salt and thyme. Cover and cook on low for 6-8 hours., Discard bay leaves; stir in half of the fresh basil. Serve with pasta. Top with remaining basil.

Easier than lasagna, because it's not, this pasta, meat sauce and ricotta toss-up is just as hearty and comforting as the layered Italian fave, but it's ready in a fraction of the time and with much less effort.

- Heat a large pot of water to boil for pasta. Salt water and cook pasta to al dente. Heads up: you will need a ladle of the starchy cooking water to help form sauce before draining.
- Heat a deep nonstick skillet over medium-high heat. Add extra-virgin olive oil, 2 turns of the pan. Add the meat and break it up into small bits as it caramelizes. Once meat has good color to it, 4 to 5 minutes, add garlic, onions and red pepper flakes and season with salt, pepper, allspice and Worcestershire sauce. Cook another 5 minutes, deglaze the meat and onions with red wine, cook off a minute, then combine about 1/2 cup of stock into the meat. Stir in the tomatoes and bring to a bubble. Reduce heat to medium low and simmer 5 minutes.
- Place ricotta cheese in the bottom of a shallow bowl. Add a ladleful of boiling, starchy pasta water to the ricotta and stir to combine. Add a couple of handfuls of grated Parmesan to the ricotta and mix it in.
- Drain pasta. Toss hot pasta with cheeses. Add half the thick meat sauce to the pasta bowl and combine. Tear or shred the basil and add to the meat and pasta, toss again. Taste to adjust salt and pepper. Serve bowlfuls of Not-sagna with extra sauce on top and more grated Parmesan to pass at the table.
PASTA SHELLS WITH NO-COOK TOMATO SAUCE
Tossing the tomatoes and peppers with vinegar and salt helps release their juices and infuses them with lots of bright flavor.

FIVE INGREDIENT PASTA TOSS
Pasta is tossed with white beans, roasted tomatoes, fresh basil, and a garlic infused olive oil. Serve with crusty bread to soak up the sauce and any leftover garlic olive oil. This isn't a hot pasta dish so it's perfect for summer.

- Combine the olive oil and garlic in a small bowl. Set aside.
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the bow tie pasta and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.

SUMMER PASTA TOSS II
This recipe is easy and fast, with ingredients that we almost always have on hand. Canned tomatoes can be substituted for the fresh tomatoes. We serve this with warm bread and salad. It tastes great!

NO SAUCE SIMMERING PASTA TOSS
I was at the market the other day and noticed that spring veggis are now here! When I see asparagus at the store, I know it is spring time. More time outside, and less by the stove cooking! This really can't be called a recipe, more of a framework. Use whatever vegetables you can get fresh. I like it with the flavors associated with spring: asparagus, artichokes and herbs. I think roasted red pepers and sun dried tommatoes would also be fantastic. To cook the asparagus, I think it is easiest to add them to the pasta about 3 minutes before it is finished. Drain it all together. Make sure the water is salted well to keep the bright green color. Also, if your artichokes are packed in oil, use that in place of the olive oil.
