Oatmeal, peanut butter, and chocolate no bake cookies.

Ingredients

3 tablespoons unsweetened cocoa powder
2 cups white sugar
½ cup milk
½ cup butter
3 cups quick cooking oats
½ cup crunchy peanut butter
1 tablespoon vanilla extract

Steps:

Heat cocoa, sugar, milk and butter over medium heat. Boil these verrrrry slowly (they will turn out better) when they reach the boiling point boil them for no longer than 90-120 seconds.
Stir together oats, peanut butter and vanilla with a big wooden spoon or Kitchen Aid. Pour the hot mix over the oatmeal mix and drop on wax paper.

These are really yummy...especially when eaten still warm. A friend gave me this recipe but I am not sure of original source.

Ingredients

2 3/4 cups sugar
1/2 cup butter
1/2 cup milk
1 teaspoon vanilla extract
4 tablespoons cocoa
3 cups rolled oats
1/2 cup peanut butter
salt (just a pinch)

Steps:

Mix sugar, butter, milk, salt, and cocoa in saucepan.
Bring to a full boil for 1 minute.
Remove from heat and add peanut butter. Blend until melted.
Add vanilla. Blend well.
Add oats. Blend well.
Drop by spoonfuls onto waxed paper and cool about 20 minutes.
Transfer to seal tight container for best freshness.

Matzo Toffee Make Butter Pecan Toffee (No. 2) using 3 matzo sheets instead of the biscuits. Top with flaky sea salt instead of nuts.
Sticky Toffee Chews Pulse 1 cup each pitted dates and broken shortbread cookies, 3/4 cup walnuts and 2 tablespoons each brown sugar and honey in a food processor until smooth.
Toffee Marshmallows Melt 8 ounces chopped milk chocolate; dip jumbo marshmallows (one 10-ounce bag) partway in the chocolate, then sprinkle with toffee bits and chopped peanuts.
S’mores Squares Melt 4 ounces chopped semisweet chocolate; spread on 12 graham cracker squares. Top with mini marshmallows. Chill until firm; break apart.
Hazelnut Brownies Crush 26 vanilla wafers and 1 sleeve chocolate graham crackers in a food processor. Add 3/4 cup jarred dulce de leche, 8 ounces melted bittersweet chocolate and 1/4 cup chopped toasted hazelnuts; pulse until smooth.
Pecan-Praline Brownies Make Hazelnut Brownies (No. 8), replacing the dulce de leche with butterscotch sauce and the hazelnuts with pecans. Press 1/2 cup toffee bits into the top along with the nuts.
