- In a small bowl, combine flour and salt. Whisk in eggs and milk until smooth. , Fill a large stockpot three-fourths full with water; bring to a boil. With a rubber spatula, press dough through a colander into boiling water. Cook and stir gently for 4-5 minutes or until spaetzle float and are tender. , Combine bread crumbs and butter. With a slotted spoon, transfer spaetzle to a large bowl; add crumb mixture and toss to coat.

BRIDLED NOODLES ( PENNSYLVANIA DUTCH )
This was a recipe my Gram would make for thanksgiving. Served it with or without gravy. My kids just love it...can't get any simpler than this!... Enjoy! My photos

Steps:
- 1. Boil your noodles as directed on package. Drain do not rinse.
- 2. While hot add 3/4 stick butter. Carefully stirring butter in until melted. ( trying not to break up noodles )
- 3. Melt the stick of butter, add this to the garlic powder and bread crumbs. Blend till crumbs are coated.
- 4. Preheat oven to 350 degree F. Spray a 3 quart casserole dish with non stick cooking spray.
- 5. Place 1/3 of the noodles in the casserole dish. Now sprinkle 1/3 of the bread crumbs.
- 6. Continue layering until you have 3 layers, ending with crumbs.
- 7. Bake covered, for about 35-45 minutes or until heated through. The last 3 - 4 minutes I stick them under the broiler.
- 8. Serve with a ladle of gravy or two. I usually ladle the gravy over all before serving. You can do it individually if prefer, as some may not like gravy. Savory and delicious!!! Enjoy!
MICKEY'S BUTTERED EGG NOODLES WITH BROWNED CRACKER CRUMBS
My mother made this wonderful dish usually with a pork roast and apple sauce on the side. I'm sure it came from her mother and before that my great-grandmother.

Steps:
- Melt 4 ounces of butter in a frying pan over medium heat.
- Add the crumbled cracker crumbs and mix well.
- Cook until the crumbs are well browned, stirring often. Set aside.
- Meanwhile bring a large pot of salted water to a boil and cook noodles according to package directions. Reserve 1/3 cup of the water and then drain the noodles and pour into a large bowl, add the water and mix well.
- While noodles are cooking melt the remaining 4 ounces of butter in a Pyrex measuring cup in the microwave. Pour over cooked noodles and stir.
- Finally add the browned cracker crumbs and mix well.

- Cook noodles in salted water to desired doneness; drain and add 1 T butter, salt and pepper; toss.
- Bring remaining 3 T butter to a sizzle in a skillet; add egg and bread crumbs; cook, shaking the skillet and stirring, over high heat about 30 seconds; add the parsley; toss and pour the mixture over the noodles; toss and serve.

This is a wonderful side dish generally made for Jewish holidays. Your guests cannot guess the ingredient used for the topping. Very rich!

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch glass baking dish.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and stir in 6 tablespoons sliced butter.
- In a medium bowl beat egg yolks with sugar and cream cheese; stir into noodles and add sour cream, cottage cheese and salt. Beat egg whites until stiff and fold into mixture. Transfer mixture to prepared dish.
- In a small bowl combine melted butter, 1/4 cup sugar, and graham cracker crumbs. Sprinkle over noodle mixture.
- Bake in preheated oven for 1 hour.

NOODLE PUDDING
This noodle pudding is a family favorite. The recipe has been passed to many friends. It can also be frozen and it travels well. Can be baked for 30 minutes, allowed to cool and then be frozen. Cut into serving size pieces before freezing. Defrost after freezing and then bake at 350 degrees for 30 minutes or until hot.

- Preheat oven to 350 degrees F (175 degrees C). Grease a large casserole dish.
- Bring a large pot of lightly salted water to a boil. Add egg noodles and cook for 8 to 10 minutes or until al dente; drain.
- Blend together cottage cheese and cream cheese until smooth. Mix in sour cream, vanilla, sugar and eggs. When noodles are done stir together 1/2 cup butter and noodles in a large bowl. Combine cheese mixture and noodles; Blend well. Place all in one large casserole dish.
- To make the topping: Mix together graham cracker crumbs, butter and sugar until it looks like large crumbs. Sprinkle evenly over top of noodle mixture.
- Bake at 350 degrees for 15 minutes. Lower oven to 325 degrees and continue baking for 45 minutes more. Allow to cool before cutting and serve warm.
