MOM'S NOVA SCOTIA SEAFOOD CHOWDER

Mom's Nova Scotia Seafood Chowder image

Being from the Easy Coast, I've tried a lot of different chowders; however, my Mom's takes the cake. She makes a huge pot of this chowder every Christmas Eve and all of it is gone by Christmas night. Although it is not very healthy, it is an awesome treat once in awhile for any of us that love seafood! I normally throw in a dash of garlic and onion powder. Enjoy!

SEAFOOD AU GRATIN

Seafood Au Gratin image

A seafood casserole is a 'must' for a bountiful buffet. My father was a fisherman, so we ate fish almost every day. Over the years, I've tasted many seafood dishes, but none better than this one. -Hazel McMullin, Amherst, Nova Scotia

MARITIME (CANADA) SEAFOOD CASSEROLE

Maritime (Canada) Seafood Casserole image

This is a seafood casserole recipe that we often make at Christmas or New Year's. We live in on the east coast of Canada so we have good access to seafood. You can change the quantities or types of seafood used. I usually don't use the crab meat, but increase the amount of lobster and shrimp I use. You can use haddock or salmon in it also. I usually use whatever I have on hand. The important thing is to use approximately the same volume of fish as stated in the recipe. I usually serve it over the flaky pastry shells, but you can also serve it in crepes or just by itself on the plate.

Time 1h10m

Yield 1 casserole, 8 serving(s)

Number Of Ingredients 16

1 cup chopped celery
3/4 cup finely chopped onion
1/2 lb shrimp
1/2 lb scallops
1 1/2 cups cooked lobster meat
1 1/2 cups cooked crabmeat
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup light cream
1 1/2 cups shredded cheddar cheese
1/4 teaspoon salt
1/4 teaspoon ground black pepper

  • Make topping by melting 2 tablespoons butter and stirring in the 1cup shredded cheddar cheese and 1/2 cups of bread crumbs. Keep in mind this topping is for original recipe.
  • Spread topping over casserole.

NOVA SCOTIA SEAFOOD RECIPE

Nova Scotia Seafood Recipe image

This is a recipe for seafood chowder that was served at the Masstown Market. I couldn't visit there without enjoying a little of this amazing chowder. NOTE: Haddock can be substituted with any other firm white fish. Recipe originally printed in the Canadian Living magazine.

Categories     Lunch/Snacks

Time 1h

Yield 12 serving(s)

Number Of Ingredients 17

2 lbs mussels
2/3 cup dry white wine
3 tablespoons butter
3 celery ribs, thinly sliced
2 onions, chopped
1/2 teaspoon salt
1/2 teaspoon sweet paprika
1/4 teaspoon cayenne pepper
3 tablespoons all-purpose flour
1 1/2 cups water
1 (240 ml) bottle clam juice
2 yellow-fleshed potatoes, peeled and cubed
12 ounces haddock fillets, cut in 2-inch chunks (5 cm)
12 ounces sea scallops, halved horizontally
11 ounces frozen lobster meat, thawed and drained (canned)
1/4 cup chopped fresh parsley
3 cups cream

Steps:

  • Scrub mussels; remove any beards. Discard any mussels that do not close when tapped.
  • In saucepan, bring mussels and wine to boil over high heat. Reduce heat and simmer, covered, until mussels open, about 5 minutes. Strain, reserving broth; discard any mussels that do not open. Let cool enough to handle. Remove and discard shells; set mussels aside.
  • In Dutch oven, melt butter over medium heat; fry celery, onions, salt, paprika and cayenne pepper, stirring occasionally, until softened, about 6 minutes. Stir in flour; cook, stirring constantly, for 1 minute.
  • Stir in reserved broth, water and clam juice, scraping up any brown bits on bottom of pan. Add potatoes; bring to boil. Reduce heat and simmer, covered and stirring occasionally, until potatoes are tender, about 15 minutes.
  • Stir in haddock, scallops and lobster; bring to boil. Reduce heat and simmer for 5 minutes. Stir in cream, mussels and parsley. Stir until heated through, about 2 minutes. (Make-ahead: Let cool. Refrigerate in airtight containers for up to 2 days.).
