NUTTY BANANA BREAD
This is just a really good and hearty banana bread. If you're not a nut person just omit them, you can also add a few raisins if you'd like. I like it right after its made, drenched in whipped butter. It's so yummy.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease three 8x4 inch loaf pans.
- In a large bowl, stir together flour, baking soda and salt. In a separate bowl, beat together bananas, butter, brown sugar and eggs. Stir banana mixture into flour mixture, just until combined. Fold in nuts. Pour batter into prepared pans.
- Bake in preheated oven for 30 to 45 minutes, until a toothpick inserted into the center of the loaf comes out clean. Let bread rest in pans for 10 minutes, ten remove loaves from pans and allow to cool on a wire rack.

- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; add to creamed mixture just until combined. Fold in banana and pecans., Pour into a greased 8-in. square baking dish. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., In a small bowl, cream butter until light and fluffy. Beat in the milk, vanilla, salt and enough confectioners' sugar to achieve spreading consistency. Stir in toasted pecans. Frost cake. Garnish with additional pecans if desired.

NUTTY SPICED BANANAS
Steps:
- Preheat the oven to 375 degrees.
- Slice the bananas and place them in a greased, ovenproof, 9 by 9 inch dish.
- In a small bowl, mix the cashew nuts, peanuts, coconut, sugar, cinnamon, and nutmeg.
- Pour the orange juice and rum over the bananas, then sprinkle them with the nut and sugar mixture. Dot the top with butter. Bake in the oven for 20 to 25 minutes, until the bananas are golden and the sauce is bubbling.
- Serve warm with vanilla ice cream.
