Oh So Good Keto Tiramisu in a Jar (try this recipe!) image

Number Of Ingredients 13

½ cup almond flour
3 tbsp coconut flour
3 tbsp granulated Stevia or other low carb granulated sweetener
¼ tsp baking powder
1 egg
2 tbsp butter, softened
2 espresso shots or 1/3 cup freshly brewed coffee
1 tbsp granulated Stevia or other low carb granulated sweetener
1 tsp rum extract
1 cup mascarpone cheese
¾ cup heavy cream
3 tbsp granulated Stevia or other low carb granulated sweetener
½ tsp cacao powder

Steps:

  • Preheat oven to 350ºF.
  • Line a baking sheet with parchment paper.
  • To make the lady fingers, in a bowl combine the almond flour, coconut flour and baking powder.
  • In another bowl cream the butter with sweetener.
  • Add the egg and beat well.
  • Add the almond flour mixture and beat to combine.
  • Transfer the mixture to a pastry bag and pipe out onto prepared baking sheet.
  • Bake in preheated oven for 8-12 minutes or until golden.
  • Remove from the oven and allow to cool completely.
  • To make the mascarpone cream, beat the heavy cream with mascarpone cheese and sweetener in a bowl until firm.
  • In a shallow bowl combine the coffee, sweetener and rum extract.
  • In a jars, layer the soaked ladyfingers and mascarpone cream.
  • Dust the top with cacao.
  • Refrigerate until ready to serve.
