LINDA'S SEAFOOD PASTA SALAD

Linda's Seafood Pasta Salad image

I love the flavors in this pasta salad with the addition of the lemon, shrimp and Old Bay Seasoning! I often substitute whole wheat pasta in this dish... I also double the mayonnaise, Old Bay seasoning and lemon, adding half when I initially make it, then just before serving I add some more, so it isn't dry after sitting in the fridge for flavors to meld... Sometimes I just double up on the shrimp or the crabmeat instead of using both together... Either way, this recipe is a KEEPER for sure!

OLD BAY® SHRIMP AND PASTA ALFREDO

Old Bay® Shrimp and Pasta Alfredo image

This recipe came from my Italian family. It is not only delicious but so quick and easy. Measurements really aren't necessary--make it your own. You can't go wrong with too much seasoning or too little. Go easy on the lemon is my only recommendation. Unless you love lemon! Adding Parmesan cheese is really delish and the Alfredo sauce gives it a nice hot and creamy texture.

Categories     World Cuisine Recipes     European     Italian

Time 30m

Yield 8

Number Of Ingredients 8

½ cup olive oil
4 cloves garlic, chopped, or to taste
1 pound jumbo shrimp, peeled and deveined
3 tablespoons seafood seasoning (such as Old Bay®)
1 tablespoon crushed red pepper flakes, or to taste
1 (16 ounce) package angel hair pasta
½ cup Alfredo sauce, or as needed
1 tablespoon freshly squeezed lemon juice

Steps:

  • Heat oil in a large skillet over low heat. Add garlic and cook until fragrant, about 1 minute. Add shrimp and sprinkle with seafood seasoning; toss until completely coated. Stir in red pepper flakes and cook until shrimp are bright pink on the outside and the meat is opaque, 10 to 15 minutes.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes. Drain pasta.
  • Add pasta to the skillet and toss with shrimp and olive oil to combine. Stir in Alfredo sauce and drizzle with lemon juice.

OLD BAY SHRIMP SALAD

Old Bay Shrimp Salad image

Old Bay kicks up the flavor of this classic shrimp salad. Pile it onto a croissant, scoop it over lettuce, or serve it with crackers.

Provided by Jennifer Segal

Categories     Salads

Time 15m

Yield 6

Number Of Ingredients 7

2 pounds large raw shrimp (31-35 per pound), shell-on and deveined (see note), thawed if frozen
½ cup mayonnaise, best quality such as Hellman's or Duke's
1½ teaspoons Old Bay seasoning
2 teaspoons white wine vinegar
¼ teaspoon Worcestershire sauce
½ cup finely diced celery
¼ cup finely sliced scallions, light and dark green parts separated

Steps:

  • Fill a large bowl with ice and cold water and set next to the sink.
  • Bring a large pot of water to a boil over high heat. Add the shrimp and cook, stirring occasionally, until bright pink and cooked through, about 1½ minutes (the water needn't return to a boil).
  • Drain the shrimp in a colander and then immediately plunge them into the ice water to shock them and stop the cooking process. Let sit until chilled, about 15 minutes. Peel the shrimp and set aside.
  • In a medium bowl, whisk together the mayonnaise, Old Bay, wine vinegar and Worcestershire sauce. Stir in the shrimp, celery, and light green scallions. Taste and adjust seasoning if necessary. Chill in the refrigerator until ready to serve. Before serving, transfer the salad to a serving bowl and sprinkle with the dark green scallions and a dash of Old Bay. The salad will keep for 2 days, covered, in the refrigerator.

SHRIMP PASTA SALAD

Shrimp Pasta Salad image

This quick and easy pasta salad recipe is sure to be a hit at your next party. Steaming the shrimp in beer makes them pretty tasty. The Old Bay adds tons of flavor too. The celery and onions add a bit of crunch to the salad. Very tasty!

Provided by Michelle Flory

Categories     Salads

Number Of Ingredients 9

1 lb shrimp, raw shrimp
1 can(s) fake beer or real beer, any kind for steaming shrimp.
1/2 c Old Bay seasoning
FOR THE SALAD
1 pkg elbow macaroni, cooked according to package.
2 stick stalks of celery, chopped
1/2 small onion, cut and diced
3 to 4 Tbsp Old Bay, again more or less according to taste
1 to 1 1/2 c mayonnaise, more or less depending on how creamy you want it

Steps:

  • 1. Steam Shrimp. If you have a rice steamer, great. If you have an insert for a pan, that will work. Put the beer in a pot in place of water. Add the steamer basket and fill with shrimp.
  • 2. Pour in 1/2 cup of Old Bay seasoning. Cut up some onions and add. Cover with a lid. Place pot on stove top. Cook shrimp until pink (should be about 8 to 10 minutes on medium). When done, peel shrimp cut into two's.
  • 3. Now for the salad. Add shrimp to cooled cooked pasta and remaining ingredients. Cool in the fridge.

Categories     Cheese

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 8

16 ounces pasta (I used bow ties)
1/2 cup frozen peas
2 tablespoons butter
1 lb shrimp, peeled and deveined
1 1/2 tablespoons Old Bay Seasoning, divided (low sodium kind if you can find it)
2 cups half-and-half
1/3 cup parmesan cheese, grated
2 green onions, sliced thinly

Steps:

  • Cook pasta according to directions on package. During the last minute of cooking add the peas. Drain and reserve 1/4 cup of the cooking liquid.
  • In a large skillet over medium heat, melt the butter. Add the shrimp and sprinkle with 1/2 tablespoon of Old Bay. Cook for 3 minutes or until they start to turn pink. Reduce heat to medium-low.
  • Stir in the half-and-half, reserved cooking liquid, Parmesan cheese and the rest of the Old Bay. Simmer for 5 minutes or until the sauce begins to thicken. Remove from heat and add the pasta, peas and green onion. Let stand for 5 minutes before serving (this gives the sauce a few more minutes to thicken).
  • Serve with extra grated Parmesan cheese.

  • Boil a salted pot of water for the pasta. Cook it al dente according to package directions, then once it's done, drain it and rinse with cool water. Let it drain thoroughly before adding it to a large salad bowl.
  • Meanwhile, prep the shrimp (run under cool water to thaw if they're frozen, peel them, remove the tails, and devein if needed). Boil a pot of water to cook them, and fill a medium-sized bowl with cold water and ice cubes. Once the water is boiling, add the shrimp and cook for 2-3 minutes. Drain the shrimp and add them to the ice bath to stop them from cooking further. Let them cool in there for a few minutes prior to draining them and patting them dry with paper towel. If desired, cut them into smaller pieces before adding them to the salad bowl.
