OLD FASHIONED OATMEAL PIE
Sweet, soft and gooey in all the right ways, this Old Fashioned Oatmeal Pie is a simple dessert recipe that can be prepared and in your oven in just minutes! A rich, brown sugar flavor with wholesome oats, it's best served warm with some vanilla ice cream!

Steps:
- Preheat oven to 325 and line a 9" baking pan with a pie crust. Crimp the edges and set aside.
- Add oatmeal, corn syrup, brown sugar and eggs to a bowl and mix well.
- Stir in butter and salt and mix well until no longer clumpy.
- Pour into prepared crust.
- Bake for 45 minutes. Crust should be browned and center will be jiggly but will firm up when it cools. Let stand to cool completely or just until warm.

- In a bowl, beat eggs. Add honey, oats, coconut, brown sugar, butter, currants and walnuts; mix well. Pour into pie shell. , Bake at 350° until browned and a knife inserted in the center comes out clean, 40-45 minutes. Cool. Garnish with whipped cream if desired.

OLD-FASHION OATMEAL PIE
This great pie recipe goes back over 100 years. The recipe came from my grandmother's grandmother who was living in Charleston, South Carolina during the 1860's. Family history has it, that during the Civil War, since pecans were in short supply in the South, oatmeal was substituted for the traditional pecan pie and the results were astonishing. Now served at every family gathering since that time.

OATMEAL PIE CRUST
This recipe is what I use to make my Old Fashioned Apple Pie recipe #238257. It should make two crusts.

Steps:
- Mix together all dry ingredients.
- Blend in shortening with pastry cutter of two forks until mixture resembles coarse meal; shortening should be coated with the flour mixture.
- Make a well in the middle of this mixture; add water until moistened.
- Mix with a fork.
- Dough will not be completely moist; some dry spots will be evident.
- Pull mixture together with your hands until it holds shape.
- Cover and chill 1 hour or overnight.
- Roll out as you would any pie crust.
- Cook according to your pie recipe.
- This makes a super crust for my Old Fashioned Apple Pie, and is the crust I specify in that recipe.
- Makes 1- 9 or 10 inch double pie crusts.

- Preheat the oven to 350ºF (180ºC).
- In a large bowl, mix the butter and brown sugar until well combined.
- Add the molasses, vanilla, and eggs, and whisk thoroughly.
- Sift in the flour, baking soda, salt, and cinnamon. Mix until just combined.
- Add the oats and mix until incorporated. Be careful not to overmix the batter or it might result in tougher cookies.
- Using an ice cream scoop (or about 2 tablespoons), scoop out cookies onto a baking sheet lined with parchment paper, leaving about 3 inches (8 cm) between each one.
- Bake for 7-9 minutes. The cookies will still be very soft, so be sure to let them cool thoroughly.
- While cooling, make the filling by beating the butter, powdered sugar, cream, vanilla, and marshmallow fluff until well combined.
- Once the cookies are cooled, put a spoonful of the filling on one cookie and sandwich with another. Repeat until all the sandwiches are made.
