Steps:
- To make the cake-----------.
- Grease and line two 8-inch cake pans, and preheat the oven to 350F degrees.
- Cream butter and sugar together.
- Gradually beat in the eggs.
- Sift the flour, baking powder and baking soda into a separate bowl.
- Stir Guinness into cocoa.
- Carefully fold in alternate quantities of flour and cocoa to butter/sugar mixture.
- Spread mixture into pans and bake for 30-35 minutes.
- Leave to cool in pans for 5 minutes before turning out.
- To make the icing---------.
- Melt chocolate with Guinness, and then beat in butter and leave to cool a little before beating in icing sugar.
- Remove ¼ of icing and stir in chopped walnuts.
- When icing has cooled to a spreadable consistency, sandwich cake with walnut icing and use rest for top and sides.
- Decorate with walnut halves and grated chocolate.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- Mix graham cracker crumbs and melted butter in a bowl; press into an 8-inch springform pan.
- Combine cream cheese, brown sugar, eggs, vanilla extract, and cinnamon in a bowl until smooth; stir beer into cream cheese mixture until batter is thin and smooth. Pour batter over graham cracker crust.
- Bake in the preheated oven until cheesecake is puffed and set in the middle, 40 to 60 minutes. Cool completely.
- Melt chocolate chips and cream in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Pour over cooled cheesecake. Cover with plastic wrap and refrigerate 4 hours to overnight.

- Preheat oven to 275 degrees F (135 degrees C). Lightly grease a 9x9 inch baking pan.
- Sift cornmeal and flour together and spread thinly on a baking sheet. Bake in preheated oven until lightly brown, about 10 minutes. Let cool. Raise oven temperature to 400 degrees F (200 degrees C).
- In a large bowl, combine cornmeal mixture, salt, sugar and baking powder. Pour in shortening and milk; stir to blend.
- In a separate large bowl, beat egg white until stiff. In a third bowl, beat egg yolk then fold into egg white. Gently stir flour mixture into beaten egg. Pour into prepared baking pan.
- Bake in preheated oven for 45 to 50 minutes, until golden brown.

GUINNESS CHOCOLATE CAKE

Steps:
- Preheat the oven to 350°F and grease a 9-inch cake apn with a removable base. Line with a disc of parchment paper.
- Melt the butter in a saucepan, Whisk in the cocoa powder and Guinness. Add the vanilla extract and honey and whisk again. Remove from the heat and set aside.
- Sift the cake flour, baking soda, baking powder and pinch of salt into a large bowl. Add the sugars and mix to combine.
- Add the eggs and sour cream to the butter mixture when cooled. Whisk to combine.
- Make a well with the back of a spoon in the flour mixture and pour in the wet ingredients. Mix to combine. Do not overbeat.
- Pour the batter into the prepared cake pan. Bake in the pre-heated oven for 1 hour or until a skewer inserted comes out completely clean. Remove from the oven and allow to cool.

Steps:
- Preheat oven to 325 degrees. Cream butter and sugar in the mixing bowl until light and fluffy.
- Beat in eggs. Sift flour and baking powder and gradually fold with allspice into the butter-sugar mixture. Add salt, raisins, peel and walnuts. Mix thoroughly.
- Grease an eight-inch round cake tin and bake for one hour at 325 degrees. Turn down heat to 300 and bake another hour.
- Test cake with skewer. It should come out slightly sticky but almost clean. Remove cake from oven and let it cool. Remove from cake pan and turn upside down. Using skewer, insert holes around bottom of the cake and pour in remaining cup of Guinness.

- Preheat oven to 350 degrees F (175 degrees C). Line a 9-inch cake pan with parchment paper; grease parchment paper.
- Combine stout beer and butter in a large saucepan over medium-low heat; heat until butter melts and beer looks glossy, 3 to 5 minutes.

- Move oven rack to middle position and preheat oven to 350 degrees F. Lightly brush 6 cup Bundt pan or 8"x3" ovenproof ring mold with half the melted butter and chill 2 minutes. Butter again with remaining melted butter then chill until pan is needed.
- Bring stout to a boil in a small saucepan and add prunes. Remove from heat and let stand until most of the liquid is absorbed.
- Meanwhile, sift together flour, baking soda and salt into a bowl. Set aside. Melt the chocolate and 1/2 cup unsalted butter together in a small heavy saucepan over low heat, stirring constantly. Remove from heat and set aside.
- Beat together eggs, brown sugar and vanilla in a large bowl with an electric mixer at high speed until thick, about 2 minutes. Add chocolate mixture and beat until just combined.
- Reduce speed to low and add flour mixture, mixing until just combined. Stir in prune mixture until combined well. Spoon batter into pan and bake until a wooden toothpick inserted into middle of cake comes out clean, about 40-45 minutes.
- Cool cake in mold on a rack 10 minutes, then invert onto rack to cool completely, at least 30 minutes.
